weekend fun {+ trying to stay cool!}

Happy Sunday, friends! Hope you are having a joyful, relaxing, rejuvenating day!

It has been H-O-T here in Southern California, and especially in my little beach community where few of us have air conditioning, this weekend has been all about trying to keep cool! I have been downing Gatorade, homemade iced tea, and smoothies.

As I mentioned the other day, I have been all about the smoothies lately! I am a little late to the smoothie party, and I don’t know why it took me so long. I think I was intimidated by the blender {and blender clean-up} but it really takes me all of five minutes to assemble my smoothie, blend it, and wash the blender. A smoothie has become my go-to breakfast! I normally blend some fresh or frozen fruit, a couple spoonfuls of greek yogurt, 1/2 cup of coconut water, a handful of baby spinach, and ice. Here are a few of my favorite fruit combos:

– strawberries, banana, pineapple
– peach, strawberries, blueberries
– mango, peach, blueberries
– raspberries, strawberries, banana, blueberries

Also, if anyone is like me and feels a little wary about adding spinach, trust me: you really can’t taste it! It’s a great way to get a little more green into your diet.

On a more decadent note, I also made these chocolate butter cups which are currently chilling in the freezer … I will let you know how they turn out!

Yesterday I spent the afternoon at the beach with my dear friend Patty and her family, who were sweet enough to invite me out to their beach house. It was a beautiful day at the beach and the nice ocean breeze cooled things off a little!

Then, last night my mom and I kept cool in the air conditioning: we went to a local restaurant and saw my amazing friend Lauren Sexton in concert! She is such a talented songwriter, singer and guitar player. She just released an album and the concert was a celebration. You can check out her music on her Facebook page — two of my favorites are her songs “In the Morning” and “The Highway.” Her music is beautiful and I was so proud to be there last night! Congrats, Lauren!

This morning began with a smoothie, the Sunday comics, a slobbery doggy kiss from Murray, and a beautiful sermon at church. Today’s sermon was about delighting in the abundance and joy of the summer and taking time to relax and recharge your batteries. After I got home, I’ve spent the rest of the afternoon sprawled out on the couch reading a great book — Abide With Me by Elizabeth Strout. {I love her! Her novel Olive Kitteridge is another great read!}

As I’ve written about before, sometimes I feel this pressure to be go-go-go all the time, like constant busyness makes my days more worthwhile, but I’ve found it’s really quite the opposite. On those rushed, forced go-go-go days I typically climb into bed feeling depleted and frazzled, like my gas tank is on empty. Not a good feeling. I’m learning to give myself permission, especially on Sundays, to just relax and savor this amazing life I’ve been blessed with. There was nothing I felt more like doing today and curling up with a book, and it has been a delightful Sunday.

Hi everyone! Hope your week is off to a great start! And welcome to our new subscribers — so happy to have you joining us! Thank you to everyone for letting my blog be part of your day. It really means a lot to me!

My weekend was filled with wedding craziness — I was a bridesmaid in my dear cousin Amanda’s wedding! Full wedding recap coming tomorrow; for now, here’s a sneak peak picture of me and the beautiful bride just a few minutes before she walked down the aisle:

Now, on to the kindness! Last week’s Kindness Challenge was do something kind for a senior citizen. This could mean calling or writing a note to a grandparent, offering to carry an elderly person’s groceries to their car, bringing in the mail for an elderly neighbor, visiting people at a nursing home … or whatever inspires you!

I recently connected with a new friend, Jeri, through a local volunteer organization called Caregivers that serves senior citizens. {Longtime blog readers might remember my friend Jewell, who I met in high school while volunteering through Caregivers and whose memory inspired me to bring Christmas cards and cookies to her former nursing home this past holiday season.} Jeri is a friendly, sweet elderly woman who can no longer drive due to health issues and failing eyesight. This past week, I drove her across town to her church, where she taught an hour-long line-dancing class to half a dozen other elderly women, and then I drove her home. I enjoyed visiting with her and listening to her many interesting life stories — she used to own a Dude Ranch! — and it was so inspiring and fun to watch the ladies line dance! They had SO much more rhythm than I do!

The Week 25 Kindness Challenge comes from my lovely blogger friend Ashley at A Happy Lass {if you haven’t checked out her blog, I would highly recommend popping on over! It’s wonderful!} and it is to do something kind for people riding public transportation. Ashley says, “I ride a bus and a train to work and was thinking I could do something for the people there. Maybe I’ll pay the bus fare for the person behind me on my way into work and back home. I’ve done this before and, usually, their faces light up, it seems to brighten their commute.”

gluten-free pumpkin oatmeal chocolate-chip cookies

Happy Friday, everyone! I can’t remember if I mentioned it on the blog yet, but my brother has recently started eliminating gluten from his diet, so I’ve been experimenting in the kitchen to see if I can come up with some yummy gluten-free treats! Here is a recipe that went over well in my household. Hope you enjoy!

gluten-free pumpkin oatmeal chocolate-chip cookies

– 2 cups gluten-free oats
– 1 egg
– 1/4 cup maple syrup or agave
– 1 (15 ounce) can pumpkin puree (not pumpkin pie)
– 1 ripe banana, mashed
– 1/2 cup peanut butter or almond butter
– 1/2 cup ground flaxseed
– 2/3 cup dried cranberries
– 1/2 cup chopped walnuts
– 1 tbsp cinnamon
– 1 tsp pumpkin pie spice
– 1 tsp vanilla
– 1 tsp baking soda
– 1/4 tsp salt
– 1 cup chocolate chips

1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.

2. Beat the egg. Stir in maple syrup, mashed banana, peanut butter, pumpkin puree, and vanilla. Mix well.

3. In a separate bowl, mix together the dry ingredients: oats, ground flaxseed, cinnamon, pumpkin pie spice, baking soda, and salt.

4. Slowly, add dry ingredients to wet ingredients, and stir until combined.

5. Add chocolate chips, dried cranberries, and walnuts, and mix well.

6. Drop batter by rounded tablespoons onto baking sheet. Bake for 10-12 minutes, until cookies are set in the middle and browned at the edges.

Hi, friends! I’m feeling under the weather, but fortunately my family is taking such good care of me. I’m a lucky girl. My brother spent the whole afternoon on the couch with me, watching a marathon of “How I Met Your Mother” and refilling my glass of Gatorade. He’s such a sweetheart!

Last week’s kindness challenge came from my wonderful blogger friend Lindsay at The Lean Green Bean, and it was to call at least 3 friends and/or family members that you miss on the phone, let them know, and actually talk to them…instead of just texting or emailing!

I had a wonderful long chat with my friend Holly and an in-person coffee date with my friend Erica. I also left messages for two other close friends … hopefully we’ll get a chance to talk sometime in the next few days.

father’s day recap

Hi friends! How was your weekend? Mine was wonderful + busy — so busy that I didn’t have time to post about Father’s Day until now! Thanks for your patience with me.

I had a busy weekend, but it was busy with good things: delicious homemade food; gluten-free baked goods {new recipe coming soon!}; lunch out with the fam on a beautiful sunny day; shopping with my mom for a dress for her to wear to my cousin Amanda’s wedding {she found the perfect one that looks gorgeous on her!}; after-dinner fro-yo with plenty of toppings; cheering at the TV with my fam as we watch the NBA Finals; curling up with a heartwarming book, Emily Giffin’s Where We Belong; a long, laugh-filled, soul-soothing phone date with my bff Holly; snippets of peaceful yoga time on my new yoga mat {birthday present from my parents, thanks guys!}; a powerfully moving sermon at church about helping others; and my Gramps came over for Father’s Day dinner!

And here’s a picture I took a couple weeks ago of my dad, brother, and Gramps on the couch before dinner. I love this photo: three generations all together!

At my church, the congregation always sings a song as the children leave the chapel and head off to Sunday school. This week, the words struck me as particularly meaningful:

“How could anyone ever tell you/You were anything less than beautiful? How could anyone ever tell you/You were less than whole? How could anyone fail to notice/That your loving is a miracle? How deeply you’re connected to my soul.”

The lyrics made me think of my dad, who has always made me feel beautiful, whole, loved and connected. {My mom makes me feel this way, too, but my dad was especially on my mind because of Father’s Day!} I count my blessings every day that I have been so lucky to grow up in the warmth of my parents’ unconditional love. For as long as I can remember, my dad has always done little things like opening my car door for me and laughing at my jokes, and not-so-little things like genuinely listening to my thoughts and opinions and telling me that I can accomplish anything I put my mind to. He also always, always tells me he loves me and is proud of me. Throughout my life, my dad has been a shining example of how I deserve to be treated — and not just in the way he treats me, but also in the kind and respectful way he treats my mom. I love you so much, Daddy!

What did you do to celebrate Father’s Day?

I am SO excited to share this recipe with you today! A few months ago, I had a delicious butternut squash risotto at a local Italian restaurant, and when I went to the grocery store last weekend the butternut squashes were calling to me. So I thought I would do a little experimenting in the kitchen and see if I could come up with a healthy, dairy-free, quinoa-based “risotto” … and I was super pleased with the results!

{My family was pleased, too … this dish makes great leftovers, which did not last very long in our house!}

– 1 cup uncooked quinoa, rinsed
– 2 cups low-sodium chicken broth
– 1 bay leaf
– 2 cups roasted butternut squash, mashed
– 1/2 cup water
– 1 cup baby spinach
– 1 cup arugula
– 2 tsp minced garlic

Optional toppings:
–  slivered almonds
–  dried cranberries
– feta cheese
– salt & pepper to taste

1. Cook the quinoa in the low-sodium chicken broth with the bay leaf for seasoning.

2. While quinoa is cooking, warm the garlic in a bit of olive oil in a frying pan. Add the mashed butternut squash and cook on medium-low.

3. After about 3 minutes, pour in the water and stir. The consistency of the squash will becoming more like a thick sauce.

4. Add the spinach and arugula and continue cooking on medium-low until the greens are fully cooked, stirring frequently.

5. Once the quinoa is fully cooked, remove the bay leaf. Pour the butternut squash mixture over the quinoa and mix well to form a “risotto.”

6. Top with slivered almonds, dried cranberries, and feta cheese if desired. {To make this recipe dairy-free, simply skip the feta cheese.}

There you have it! An easy, healthy, filling and nutritious meal! This has been my go-to lunch of the week.

Hi, everyone! How is your week shaping up?

I had a really nice weekend with lots of friend & family time! Girls night out, a backyard pizza-making party, baking, eating, reading, wine, a long-awaited phone date with a wonderful friend, a new buddy at church, running errands with my mama … and on Sunday night my family all went out to a local winery for a concert featuring the very talented daughter of my mom’s coworker. SO much fun! Cassi Vaniotis, you were terrific!!

I also tried out a few new recipes I’m looking forward to sharing with you guys soon! Stay tuned!

So, last week’s kindness challenge was to do an act of patience. I think the best thing about this challenge was that it changed my mindset. I tried to approach these acts of patience with an open heart and thoughts of kindness, and what once seemed like a chore — waiting in the office for my eye doctor appointment, sitting in traffic, running errands — didn’t seem so bad. I let someone go in front of me in line at the store. I waved cars ahead of me when merging on the freeway. When I was put on hold on the phone, I sat and daydreamed rather than absently surfing the Internet while I waited.

I’m someone whose natural inclination is to jam-pack every minute of my day with “productive” activity. I like to feel go-go-go, crossing off tasks on my to-do list. But I realized that I was tying my self-worth to this sense of “busyness” … and that isn’t a good thing. I was often feeling like I didn’t “accomplish enough” in a day, no matter how much multitasking I did. And I wasn’t fully savoring the rich details and spontaneous joyful moments of life!

So I’ve been on a mission to slow down, breathe, and focus on one thing at a time. Embrace whatever life is presenting to me in that moment. The funny thing is, now that I’m approaching my day with a more patient, slowed-down mindset, I feel like I have more time than ever!

I came across a quote this week about patience and kindness that struck me, and I wanted to share it with you: “Patience is something you admire in the driver behind you, but not in the one ahead.” -Bill McGlashen, poet & author

The Sunny Side Up! is a real gem. Not only will you have fun reading this book, you will learn a lot, too. How can you squeeze the most happiness out of your daily life? What are important components that will bring you lasting fulfillment and joy? What about when life throws challenges your way—how can you find happiness even in the hard times? Lauren Cook, a.k.a. The Sunny Girl, covers all of these topics and more in this engaging, thought-provoking, fun and inspiring book! {You might remember Lauren from this beautiful and inspiring guest post she wrote for us last year about finding happiness in a sense of daily accomplishment.}

Lauren interviewed hundreds of young people and incorporates their views throughout the book on everything from friends to dating, family to volunteering, stress levels to definitions of success. I was fascinated reading all of their thoughts and opinions, and it made me realize that I am not alone in my quest for greater happiness and fulfillment. Indeed, Lauren makes us feel like we are all on the same team, cheering each other on and helping one another gain more joy from life.

One of my favorite things about the book is the interactive quality — Lauren frequently poses questions to the reader, with room for you to write down your own answers. In this way, The Sunny Side Up! is not only a book — it is also a lively, dynamic workbook that will take you through tangible strategies and ideas for pumping up the happiness in your life! The Sunny Side Up! is a joyful manifesto you will find yourself returning to again and again.
