Have you noticed? It’s Girl Scout Cookie Season!

Every time I run errands, or simply drive around town, I see them: tables set up with glittery posters and a rainbow of colorful cookie boxes, and girls in green uniforms, cheerfully and patiently selling their wares. Girls in pony-tails and braids. Girls with braces and girls with gap-toothed smiles. Girls who remind me of Céline, who fill my heart and break it at the same time.

Céline was an extremely proud Girl Scout and, apparently, a cookie-selling legend. Every year in college, we would order cookies from her to support her old troop. She kept boxes of Thin Mints in the freezer. I’ve always been partial to the Shortbread and Samoas {…or, should I say, Caramel deLites?}

These days, in many ways, my eating habits are a lot healthier than they were back in college. I eat fewer processed foods and zero frozen dinners. I cook meals from scratch frequently. Instead of fat-free rice cakes and cheap booze, I fill my grocery-store cart with fresh produce and healthy fats. And I’ve cut back drastically on sugar.

Maybe you’re like me. You want to support the Girl Scouts, but you simply don’t need a bunch of cookies in your pantry.

Or maybe you DO love buying, and eating, Girl Scout cookies, which is also great. As Robyn, one of my favorite nutritionist bloggers, puts it: a healthy diet means you eat cake AND kale. Nutrition, variety, and pleasure — these are things we should receive from what we eat. Food is not just fuel, it’s also something to enjoy.

In any case, whether you plan to buy one or one-hundred boxes of Girl Scout cookies, here is a guaranteed way to make a Girl Scout smile. This is something Céline learned from her experience as a Girl Scout, and something she would do whenever she came across a green-vested girl selling cookies. Now it is something I do in her honor — one of my favorite ways to remember her.

Step One: Ask the Girl Scout what her favorite cookie flavor is. {She will think you are asking her for advice about which kind of cookie you should try.}

Step Two: Buy a box of whatever her favorite type of cookie is.

Step Three: Hand the box to her and explain it is a gift for her to enjoy. Here’s what I say, “My friend was a Girl Scout and she told me how hard it was to be selling all these cookies without being able to eat any yourself! So these are a treat for you to have. Keep up the great work!”

Step Four: Enjoy all the warm fuzzies filling you up inside.

One Final Note: This is not only a way to make a Girl Scout smile, it is a guaranteed way to make yourself smile, too. 🙂

Hello, friends! I hope you are having a wonderful Presidents’ Day! In honor of our past presidents, here is a link I came across with some truly inspiring quotes: 50 Greatest Presidential Quotes of All Time.

I also hope you had a love-filled {all kinds of love, from friendship to pet-love to romantic love} Valentine’s Day! My minister gave an insightful sermon about the many forms of love in our lives that we should celebrate, rather than only focusing on romantic love. I could not agree more! She also touched upon The 5 Love Languages, a subject I find quite fascinating. You can watch her sermon on YouTube here.

My Valentine’s Day was not just limited to a day, but encompassed the whole weekend! Here are some snapshots:

My sweetie and I ordered Blue Apron for the first time, and received our first delivery on Friday night. We had heard many good things about this meal/cooking service and thought we would try it out for ourselves! We ended up making all three meals in three straight days, for dinner on Friday night, Saturday night and Sunday night. I was blown away by how easy it was, and how absolutely delicious all the meals turned out! Each night Allyn and I would look at each other across the dinner table in disbelief: We just made this?! Really?! I also feel like the recipes taught us some new cooking tips that we can use in lots of future recipes of our own! We are definitely Blue Apron converts now. 🙂

Saturday morning, I woke up with the urge to bake. So I whipped up these easy + healthy apple oatmeal muffins, along with a note: MUFFINS FOR MY STUDMUFFIN. I came across this idea on Pinterest {the wedding-planning frenzy has begun!} and thought it was too cute, so I couldn’t resist doing it for my studmuffin. 😉

After enjoying a couple muffins for breakfast warm from the oven, I headed out for a quick tutoring session, and when I returned home my sweetie surprised me with a beautiful bouquet of flowers!

I spent most of the rest of the day obsessively reading THE GIRL ON THE TRAIN… have any of you guys read this book? Allyn’s sister loaned it to me and I started it on Friday night, and could.not.put.it.down alllll weekend… I finished it on Sunday afternoon! Very suspenseful and full of twists and turns.

Saturday night we made another Blue Apron meal and I had to continue our Valentine’s tradition of red velvet crinkle cookies! YUM. These are so festive and super easy to make {besides the batter turning your hands bright red!} 😉

On Sunday, Allyn came with me to church to announce our engagement news during the “joys and sorrows” part of the service. It was so wonderful to share our happiness with the congregation! Everyone was so warm and joyful, and it warmed my heart.

We stopped by my grandparents’ after church to say hi, and I was delighted when my aunts and cousins surprised us and came by for lunch, too! We hadn’t seen them for a while and it was so fun to chat and share stories. Grandma busted out some of the wedding photo albums from when my aunts got married, and there was much laughter while looking through them. {’80s fashion out in full force!} My grandma then disappeared for a little while into her bedroom and emerged holding her own wedding dress from 60+ years ago! It was a goosebumps-inducing sight. The dress’s beautiful lace is still preserved quite well. It was quite a special moment!

My grandparents also surprised me with “engagement flowers”… our apartment is now bursting with flowers and I love it!

When we got home, Allyn and I got some work done for a little bit, and then he asked, “Do you want to go mini-golfing?” There is a very cute course less than a mile from our new apartment, where Allyn and his family have gone many times. It was a beautiful evening so we walked over to Golfland and played 18 holes. There were many families and couples out and the atmosphere reminded me of summertime. I played pretty well, but Allyn absolutely rocked it. He got THREE hole-in-ones! How is that even possible?! Needless to say, he beat me handily.

When we got home our stomachs were growling, so we made our final Blue Apron meal of the batch: seared chicken with mashed potatoes and maple-glazed carrots. It was both of our favorite one from the bunch {and all of them were delicious!}

easy, throw-together, can’t-fail fruit cobbler

Sometimes my grandparents like to shop at Costco.

Which is great! I love Costco! The only problem: there are only three of us in the house. None of us are teenage boys with roaring appetites. And my Grandma likes to buy fruit at Costco.

Which means we sometimes often have a whole bunch of fruit ripening all at once.

So I devised this fruit cobbler recipe out of necessity. I really hate throwing away/wasting food, but a girl can only stir so many strawberries into her morning oatmeal. So one day I chopped up a bunch of strawberries that were on the verge of going bad, added some squishy blueberries and a sad, mealy apple, and topped the whole thing with some stale, also-bought-at-Costco oatmeal cookies that I crushed up with a rolling pin.

I slid the whole thing into the oven and crossed my fingers that when I pulled it out half an hour later, the concoction would have magically transformed into deliciousness.

Well, guess what? IT DID.

This disappeared from the pan in record time and is a new favorite dessert of my cousin Bianca. {Don’t tell her how easy it is to make… she thinks I’m a superhero every time I bring her some!}

Since then, I’ve made this recipe with a variety of different fruit and topping combinations, and it comes out delectable every single time. So I wanted to share it with you! If you’re looking for an easy, can’t-fail way to use up some past-its-prime fruit — or if you’re just looking for an easy, delicious dessert to make for your family or bring to a party — this is a wonderful recipe!

And {shhhh}… it’s actually healthy! There is no extra sugar added into this dish, unless you use crumbled cookies as the topping — most of the sweetness comes from the baked fruit!

ingredients:
– fruit: strawberries, apples, pears, grapes… whatever is in your fridge! blueberries and raspberries work well, too!
– if you are using less-juicy fruit such as apples or pears, add a little fruit juice {apple, cranberry, orange, whatever you have on hand!}
– topping: stale cookies {I’ve used oatmeal raisin, sugar, even animal crackers} OR granola OR mix up rolled oats with cold butter
– spices to taste {I like cinnamon!}

directions:

1. Preheat your oven to 350 degrees. Get out a glass pie pan or a shallow glass dish and set aside.

2. Slice up the fruit until relatively small, even chunks. Mix together. If you are using drier fruit, add about 1/4 cup of fruit juice.

3. Pour the fruit mixture into the glass pan.

4. Make your topping. If you’re using stale cookies, place them inside a plastic Ziplock baggie and crush them with a rolling pin until they are crumbled. To make a homemade topping, use your fingers to crumble a few small pieces of cold butter through about 1 cup of rolled oats. Add spices to taste, and a bit of brown sugar if you would like. I’m also a fan of sprinkling the cobbler with granola, like I did here:

5. Bake for 35-45 minutes, until bubbly and golden brown on top. It will make your kitchen smell delicious!

I like to eat this fruit cobbler on its own, or serve it warm topped with iced cream, or stir it into yogurt! Hope you enjoy!

1. I was feeling really sad earlier this week about Celine… just missing her a lot. My sweetheart surprised me with beautiful flowers and took me out to dinner. He is simply the best.

2. Speaking of flowers… the amaryllis that Allyn’s stepmom Laurel gave me three weeks ago is finally blooming! It’s so pretty. And I’m thrilled that I’ve kept it alive and haven’t accidentally killed it! {I don’t have the greenest thumb…}

3. One of the little girls I tutor is selling Girl Scout cookies, so I bought a few boxes from her… and she delivered them to me in the sweetest decorated bag. How cute this this?

On the subject of Girl Scouts, Holly reminded me of something really awesome that Celine used to do: when she saw Girl Scouts selling cookies at a table, she would buy a box of cookies and then GIVE the cookies to the Girl Scouts so they could enjoy them while they worked. Such a simple, thoughtful act of kindness that brings SO much excitement and happiness to the girls! It is also the perfect solution for those times you want to support the Girl Scouts, but don’t particularly want a bunch of cookies hanging around your pantry.

4. My thoughtful friends Shane and Lauren sent me cards this week. Always brightens my day to receive love in the mail!

On my agenda for the weekend: tonight Allyn and I are going to dinner and to a play — a production of Part I of Angels in America, a powerful play I read and loved in college. I’ve never seen it onstage and am very much looking forward to it! Tomorrow, I’m teaching all day and then in the evening Allyn and I are meeting up for a double-date with Dana and Brad at this new-ish adult arcade place called Plank that looks really fun. I’m excited!

super-simple graham cracker caramel pecan cookies

Hello, friends! I’m popping by with a quick, easy-peasy recipe for you today! I saw this recipe on the back of my box of Safeway graham crackers, and it looked intriguing so I decided to try it out.

It turned out delicious and was so simple to make, with only four ingredients! Plus everything comes together in a flash because you only need to bake the cookies for 10 minutes. My Grandpap said, “I don’t know what these cookies are called, but they are so good it’s sinful!” 🙂 Hope you enjoy!

– 1 sleeve graham crackers {about 9 large rectangular crackers}
– 1/3 cup butter
– 1/3 cup packed brown sugar
– 1 cup chopped pecans

1. Preheat oven to 350 degrees. Line a baking sheet with aluminum foil.

2. Place graham crackers close together in a single layer on top of the aluminum foil.

3. In a saucepan, melt the butter. Add the brown sugar and stir together until butter and sugar are well-combined. Bring mixture to a boil and cook for 4 minutes, stirring continuously.

4. Pour brown-sugar mixture over the graham crackers and spread evenly across the crackers with a spatula or wooden spoon.

5. Scatter pecan pieces on top of the caramelized sugar.

6. Bake for 10 minutes.

7. Remove from oven and let cool for 10 minutes before cutting them in half to make square cookies.

Happy Friday, everyone! I haven’t felt like doing one of these posts for the past few weeks… but I was thinking today about how Celine was an incredibly fabulous person, and I think she would like the idea of all of us recognizing and celebrating the fabulous things, large and small, that we are loving in our lives each week. So, I am happy to be back this week with a fabulous friday post for you. 🙂

1. Care packages. Tania sent me three books that she thought I would like: A New Earth: Awakening to Your Life’s Purpose by Eckhart Tolle; Painted Prayers by Jodi Uttal; and We Are All Completely Beside Ourselves by Karen Joy Fowler. Reading is such a comfort to me, and I am already working my way through these good books.

2. Another book arrived in the mail this week — Every River On Earth, a book that I have a short story in! It’s been at least two years since my piece was accepted for this collection, and it was so exciting to finally hold it in my hands. It is a beautiful book and I am proud and grateful to be a part of it!

3. This inspiring post from Nicole at Life Less BS with some concrete tips for achieving any of your goals using a simple, little-by-little approach. I especially liked this quote:

“Change doesn’t have to be huge in order to be hugely impactful. If you’re sitting there waiting until you have ‘enough time’ or the ‘right circumstances’ to make a big change, you’re making it too hard on yourself. Who says big changes are the only way? Who says it has to be all or nothing?”

4. I baked some delicious sunflower butter cookies using this recipe, adding in both dark chocolate chips and butterscotch chips. They turned out great! Definitely a make-again. Plus, they are gluten-free!

5. Valentine’s Day! This has always been one of my favorite holidays, whether I’ve been single or in a relationship, because it is all about letting the people you love know that you love them. If you’re looking for some sweet, inexpensive Valentine’s gift ideas, here are some ideas! My favorite way to celebrate is with cards. I still have the cards my parents sent me last year up in my room:

It’s a typical Friday for me… this morning I headed to one of my fave yoga classes, now I’m getting some work done on the computer, and later this afternoon I’m tutoring a few great kiddos.

We have been getting LOTS of rain here the past couple days… they say it’s one of the biggest storms we’ve had here in five years! Fortunately we are all safe and sound here. If it’s stormy and bad-weathered where you are, please be safe!

1. The Lucy Hale song “Mistletoe.” It’s been bopping around in my head off and on since I heard her sing it on the “CMA Country Christmas” TV program, and this week I finally went and ordered it on iTunes. Love it!

4. I’ve been craving veggies — carrots, celery, bell peppers, kale — even more than usual lately. For example: last night, I sliced up half a bell pepper as part of my dinner, and ended up going back to the fridge and polishing off the rest of the pepper later that night as a snack! I’ve never craved bell pepper before, but there you have it! I believe our bodies tell us what they need, so I’ve been riding the veg-tastic train all week. Happy Friday, everyone! It’s been a while since I’ve done a fabulous friday post… feels good to be back into more of a regular blogging schedule, after the Thanksgiving craziness! 🙂

My day so far has been a great one… restorative morning yoga class, pumpkin spice chai latte at Starbucks, phone chat with my brother, a few errands checked off my list {including the Post Office, which was much less crowded than I was anticipating! Don’t you love when that happens?} This afternoon I have a couple tutoring appointments, and then tonight I’m getting together with my beautiful-inside-and-out friend Dana for dinner. I haven’t seen her in a month and I’m so excited to catch up!

Here are 5 things I’m loving right now:

1. Raaaaaaain! We have finally been getting some rain here in California, and it is so wonderful!

We’re singing and dancing like Gene Kelly around here 🙂 I love drizzly winter days when it feels so cozy to be snuggled up inside, sipping a mug of tea while cookies bake in the oven… which leads me to…

2. I made a holiday version of my pumpkin-spice chocolate kiss cookies! I used the same chocolate cake-mix cookie base, and then instead of a pumpkin spice Hershey’s kiss I topped them each with a candy-cane Hershey’s kiss. The classic peppermint + chocolate combo is a winner, plus they look so darn cute!

3. While we’re on the subject of holiday treats, I picked up this black-and-white drizzle kettle corn as an impulse buy at Safeway, and it’s become my go-to dessert. For fellow sweet-and-salty lovers and chocoholics out there, this is right up your alley! I love that it’s made with non-GMO corn and has no artificial flavors, colors, or preservatives; no high-fructose corn syrup; and zero cholesterol or trans fats. The grocery checker told me there is also a peanut butter & chocolate version that I am going to keep my eye out for.

4. This quote from Whitney at sometimes.always.never reflecting on the past year — I feel very similar to the way 2014 unfolded for me:

“It was a year of small, beautiful changes that probably don’t look like a ton to an outsider, but that meant a lot to me. It was a year of personal growth and risks, reflection and change. 5. I brought back the chocolate advent calendar this year! Greg and I used to get these every year as kids and I have such fond memories of opening them together each morning before school. A couple weeks ago, I spotted chocolate advent calendars when I was at Trader Joe’s, and I grabbed one. {Actually, two — I got one for Allyn, too!}

It brings a smile to my face every morning to see what shape of Christmas chocolate I will get that day. Sometimes it’s the little things, right?

I have a simple, delicious recipe to share with you today! These cookies are easy to make, come together in a flash, and would be the perfect holiday treat for a party or get-together. I brought them to a BBQ this past weekend and they were a big hit!

I got the idea for these cookies when I came across these babies at Walgreens after getting my flu shot: pumpkin spice Hershey’s kisses!

I was intrigued and they were on sale, so I scooped them up! When I got home, I started brainstorming what I could bake with them, and I thought about the cookies my mom makes during the holiday season using chocolate Hershey’s kisses. I thought I could make a similar cookie — except with pumpkin spice kisses, I decided I wanted a chocolate cookie base.

Rummaging around in my pantry, I found this.

So I decided to make chocolate cake-mix cookies {similar to the funfetti cookies I made for Grandpap’s birthday two years ago.} I love cake-mix cookies because they are dense, soft and chewy. Yum!

I was able to whip these cookies up in about half an hour, and they turned out great! If you don’t have Hershey’s kisses, I think just making the chocolate cookies would also be a hit. Add in some peanut-butter chips and you’ve really got it made! 🙂

– 1 box chocolate cake mix {I used triple-chocolate fudge; I bet devil’s food would be good, too!}
– 1/3 cup vegetable oil
– 2 eggs
– 1 cup chocolate chips
– pumpkin spice Hershey’s kisses

1. Preheat oven to 350 degrees.

2. Combine cake mix, oil, eggs and chocolate chips in a large bowl. Dough will be stiff and sticky.

3. Cover bowl with plastic wrap and refrigerate for 15-20 minutes, to allow dough to become easier to handle.

4. Drop rounded tablespoons of dough onto an ungreased cookie sheet, about 2 inches apart. {Note: these cookies EXPAND quite a bit! My first batch, I made the dough balls much too big. Just a tablespoonful is enough, I promise!}

5. Bake for 9-11 minutes, until cookies are set.

6. Remove from oven and cool in pan for 1-2 minutes, then transfer to a wire rack to cool completely.

7. While cookies are still warm, gently press a pumpkin spice kiss into the center of each one.

You can easily adapt these cookies based upon your favorite Hershey’s kiss. I think using a peppermint kiss or white-chocolate kiss would be divine!

Happy Friday, dear friends! I hope you have had a wonderful week and that your TGIF is running along smoothly. I must admit I don’t quite know where this morning went! Yoga class, breakfast, emails, a couple phone calls for work, and now it’s already lunch time! This afternoon I’m hoping to make some headway on a couple writing/editing projects; go to the Verizon store to get my new phone working {my old phone went on the fritz but was insured so I was able to replace it at no cost, woo hoo!}; and then I’ll be tutoring a few kids from late afternoon into the evening.

Should be a great day! Then again, as my Gramps likes to say with a wry smile, “Every day I’m above ground is a great day for me!” Which I think is a grateful attitude you don’t need to be an octogenarian to adopt. 🙂

Here are 5 things I’m loving right now:

1. The gorgeous autumn leaves setting the world on fire right now. Here’s the maple in our side yard, right outside the kitchen window. Every time I see it, my heart leaps. I love the autumn!

2. Tazo pumpkin spice chai tea. I scooped this up on sale at Target last week and I’ve been enjoying it every morning since. Nothing like pumpkiny, cinnamony goodness to get my day started off right! {Or perk me up in the middle of a long writing/work sesh!}

Also, this is probably just showing my nerdiness, but does anyone else amuse themselves by reading the writing on food/drink boxes? The story on the Tazo pumpkin spice chai tea box had me smiling: “Cinnamon and cardamom sit by a crackling clove fire, knitting elegant black-tea scarves. Ginger waltzes in with a just-baked pumpkin pie, and the room turns aromatic with sweet spice.” Mmmm. Don’t you just want to curl up and get cozy after reading those words?

3. Not to go TOO pumpkin-crazy {my brother would say, “Too late!” haha} but I was excited to find these pumpkin spice Hershey’s kisses in the discounted Halloween candy section when I got my flu shot earlier this week. Has anyone else tried these babies? I had never even heard of them before, but I was intrigued so I got them.

I will say that, as a chocolate-lover, I wish there was some chocolate swirled throughout along with the pumpkin, but these are still a delicious {and dangerously poppable} treat! This weekend I’m planning to bake cookies featuring these pumpkin spice Hershey’s kisses, inspired by my aunt Elaine’s peanut butter blossoms. If they turn out well, I’ll share the recipe!

4. I’m serving as Worship Associate at my church this Sunday, and the sermon’s theme is transience and permanence. While writing my Call to Worship, I came across this beautiful quote from Ovid’s Metamorphoses:
