fabulous friday #52

Hi friends, and happy Friday! Hope you’re up to something fun! I’m heading into the city as soon as I hit “publish” on this blog post to have lunch with my hubby {I still get a little giggly calling Allyn my husband :)} and then I’m going to have an afternoon “writing retreat” at a coffeeshop. I’m excited to delve into this new novel I’m working on, and also to get in some distraction-free commenting time on the wonderful batch of poems and stories I received from my creative writing students this past week. {News since I last posted an update on here: I’m teaching a weekly creative writing class for high school students in San Jose, and I’m LOVING it!} Speaking of things I’m loving…

Here are 5 things I’m loving right now:

1. One Teen Story! I love this little magazine for so many reasons. The issues come out every month, and each issue is a new story geared for teen audiences {but wise and wonderfully written — I think adults will love them, too!} Some of them are even written by teens, including “A Eulogy for Pretzel” and “Sunrise” in this batch below. I often slip a couple issues into my bag when I am taking public transport somewhere, so I can read without having to lug around a bulky book — I can fit these even into my small purse. I also like to use issues as “prizes” to motivate my writing students.

2. Pumpkin Spice Cheerios — I nabbed these when I spotted them at the grocery store because I adore pretty much anything pumpkin spice. I have been eating them for breakfast or as a snack all week long, and I also made these delicious cereal bars from Eating Bird Food.

3. Last weekend, for Allyn’s birthday, I planned a birthday surprise outing for him. I absolutely love birthdays and I had so much fun planning out a fun adventure for us. We went to the pumpkin patch where we were able to conquer a corn maze for the second year in a row and picked out some stellar pumpkins for only $4 each! I have named them Fred & Ginger.

Then we went out to dinner at this neat restaurant called Old City Hall Restaurant that used to actually be the town City Hall — there is so much history in the building, and where the bathrooms are used to be the jail cells! They still have the iron gates and it was definitely the coolest bathroom I have ever seen. I would have taken a picture for you guys but I had left my purse/phone at the table!

I did however take lots of photos of our final stop of the surprise-filled day: the Lumination experience at Gilroy Gardens! This was so cool, you guys! If you live in the Bay Area, I highly recommend it. It is like the Rose Parade meets Christmas lights meets the Chinese lantern festival. We spent a couple hours walking all over the gardens and taking in all the amazing light sculptures. One of my favorites was a ginormous dragon that was entirely built out of china dishes–cups, bowls, plates, etc! It was incredible to behold.

4. Something about autumn always makes me bust out my James Taylor albums, especially October Road, and I love his new one Before This World as well. Lately I’ve also been rocking out to this Ben Rector song… impossible to be in a grumpy or tired mood when this song comes on, am I right??

5. I don’t usually get political in this space, but this election feels too perilous not to speak out against hatred, violence, misogyny, racism, homophobia, and a terrifying frenzy of fear. Too much is at stake to stay silent. In these times of uncertainty, I have been particularly inspired by this movement, #DedicateYourNoTrumpVote, started by writers Julianna Baggott and David Scott, who reached out to fellow writers, family, and friends, who reached out to more folks and word spread quickly. The response has been overwhelming — some pieces are heartbreaking and moving, others inspiring, others simply stunning. The line-up of writers include two Pulitzer-prizewinners, New York Times bestselling novelists, a National Book Award-winner, critically acclaimed poets, as well as social workers, teachers, even a retired lieutenant colonel with the U.S. Army Special Forces. DedicateYourNoTrumpVote.com is looking for people from various walks of life, a diverse range of experience and points of view. why I love meal-planning

Hello, lovely people! It is currently Sunday afternoon and it is raining, for which I am very grateful. {Even though the rain sometimes causes ant invasions in our apartment… stay away, ants!} We can use all the rain we can get. Also, there is something that feels especially cozy to me about rainy weekend days. I just want to listen to Jack Johnson and maybe some old school Maroon 5… Sunday Morning, anyone?

I forgot to mention earlier that last Sunday, I went to a baby shower for my cousin Sharon, who is due with a baby boy in June. So exciting! It was actually the first baby shower I have ever attended, and I thought the hosts were so thoughtful and creative with the way they put the event together. We decorated burp cloths with fun designs, played a game where the goal was not to say the word baby {I totally failed, haha!} and showered Sharon with adorable baby gifts, including some of the cutest onesies I have ever seen. Congrats, Sharon & Matt!

Typically Sundays are when I plan out the week ahead; I like to get a handle on things so I feel like I begin the week with a bang! Allyn and I talk about our schedules for the week and if we have any special events coming up on the calendar. Something else I like to do on Sundays is to jot down a quick dinner menu plan for the week using this handy-dandy whiteboard magnet calendar I picked up in the dollar-bin area at Target.

I never used to really do meal-planning, but I am a full-fledged convert now. I have been surprised at 1) how little time it takes and 2) what a big difference it makes in how prepared and productive I feel. Spending fifteen or twenty minutes looking through recipes and planning out dinners for the week saves me a LOT of time and mental space, because then I don’t really need to think about dinner at all for the rest of the week… I just follow what’s on the whiteboard, and we’re good to go!

Here are some things that have been helpful for me when it comes to meal-planning:

  • I look in our cupboards and fridge and see if there is anything that needs to be used up. For example, when Allyn and I make pasta for just the two of us, we usually only use half a jar of sauce. So I usually like to make some sort of pasta dish two weeks in a row to use up the rest of the pasta sauce. Other examples could be veggies, greens, or little leftover bits from our Blue Apron meals like seasonings or half a head of garlic. For some reason, it makes me ridiculously happy to use up leftover ingredients. Embrace the little things!
  • Putting special dinners on our meal plan calendar, like going to a restaurant in the city with friends or celebrating someone’s birthday, lets us look forward to these events all week long and makes them even more special. As Gretchen Rubin writes about, according to her research on happiness, anticipation plays a huge factor in enjoyment. 
  • Meal-planning gets me to actually try out new recipes that I tear out from magazines or dog-ear in my cookbooks. If left to my own devices, figuring out what to have for dinner the day of, I tend to fall back on my same tried-and-true recipes: vegetable soup, pasta with tomato sauce, chili and corn muffins, enchiladas with black beans. I love all of these recipes, and they are great to have in my arsenal as staples, but it is so easy to fall into a “cooking rut.” I get tired of always eating the same thing, yet never know what else to make. But with meal-planning, I look through my recipe folder and specifically decide in advance what I am going to cook on which days. {I think the key for me is in advance!} Every week, I cook one or two new-to-us recipes. It helps that Allyn is pretty much game to eat whatever I put in front of him, so even my less-successful cooking attempts have been sweetly consumed in our house. 🙂
  • Planning our meals also makes grocery shopping much simpler and much less wasteful. Allyn and I use the app Wunderlist to add items to our shared grocery list whenever we run out of something. When deciding on recipes to make, I immediately add to Wunderlist all the ingredients needed to make everything on our meal plan for the week; this ensures that I don’t forget that one crucial ingredient like lime juice or tumeric that I may not have in the pantry already. I’ve learned that trying out new recipes means branching out of your comfort zone, and sometimes venturing into new aisles of the grocery store you don’t usually visit! Plus, nothing derails my cooking juju more than realizing I forgot to get something on the recipe’s list of ingredients, and need to run out to the store. #letsjustorderpizzainstead
  • Meal-planning helps us prevent food waste, which isn’t just good for our wallets — it’s good for the planet. I was staggered to learn that throwing away a pound of chicken wastes 519 gallons of water! Ruth Mathews of the Water Footprint Network explains that when you throw away food, you are not just throwing away that food item, you are also throwing away all of the resources that went into producing that food item. Furthermore, tossing food into the trash means it will end up in a landfill, producing greenhouse gases that contribute to climate change. If meal-planning helps you eat everything in your fridge before it goes bad, you could be saving thousands of gallons of water every week — not to mention saving extra dollars in your wallet, too!
  • Something else I do that has become a little joke between me and Allyn is that if I am going to be gone for whatever reason and there are leftovers in the fridge I want Allyn to eat up, I write him out a little menu as a reminder. I purposely try to make the leftovers sound as fancy, gourmet and appealing as possible. For the parents out there, this might be an easy way to make leftovers more fun for picky-eating children!

Hi friends, and happy Friday! It’s been far too long since I’ve done a Fabulous Friday post… I’m excited to bring this back today! Hope you’re up to something fun this lovely autumn weekend. 🙂

Here are 5 things I’m loving right now:

1. Being in Lake Tahoe! This is my first time traveling to this gorgeous vacation destination that so many people rave about, and I must say it has lived up to my expectations and then some! It is a beautiful time of year to be here, with crisp fall weather and so much greenery. I snagged a postcard for you guys!

I am loving being part of the Tahoe WordWave Festival. There are so many talented, creative writers and artists all around and it has been a privilege and pleasure to attend the workshops and events. Additionally, I am SO excited for the premiere of my one-act play “Woman, Running Late, in a Dress” tomorrow night at the Valhalla Boathouse Theatre! The cast of my play took a selfie for you. {How adorable are they??}

2. Backing up a little bit, this past Tuesday Dana and I attended the Taste of Walnut Creek, a fundraiser for a variety of local organizations, including my church! Each attendee got a little booklet of coupons and you would walk around downtown and stop at various restaurants to get a sample.

Each sample was quite small, but at the end of the night we were definitely full! {And we didn’t even make it to all of the restaurants offered!} If your town offers something similar, I would for sure recommend attending. Here is a list of the different eats & drinks we enjoyed:

I had an absolute blast strolling around downtown Walnut Creek, eating and chatting with beautiful Dana! I feel so blessed to have such amazing people like her in my life.

3. I can’t get enough coconut butter lately! Have you guys tried this before? I first had it smeared on my morning bagels at Key West when I was there for the Key West Literary Conference a couple years ago, but I kind of forgot about it because I never see coconut butter in the grocery store, just coconut oil. But coconut butter was on sale at Swanson’s Vitamins last week, so I bought a tub.

You guys, I can’t get enough! My favorite thing of late is to prep a slice of toast with half coconut butter, half almond butter. Mmmmm I could eat this all day.

Aaaaand I am pretty sure my love for avocado toast will never die. Bring on the healthy fats!

4. I recently discovered Susan Hyatt {thanks to my girl Alex Franzen} and I am loving her short weekly “GO!” podcasts. Susan releases a new episode each Monday, with the goal of helping you get your week off to a great start. Topics range from your finances to your family to your business/career. I love how these are short enough to listen to as I’m getting ready for the day, and they never fail to give me a burst of inspiration. Susan is like that funny, no-nonsense, motivating friend who gives you the honest kick-in-pants you need. I binge-listened to all of her episodes last week, and now I am kinda bummed I have to wait each week for a new one!

5. Allyn and I got our pumpkins! Fingers crossed they last till Halloween; we are planning to have a pumpkin-carving party with Allyn’s sister on Halloween day. Since I like to name EVERYTHING, I of course had to name our pumpkins. Let me introduce you to Harold and Maude! {Have you seen that movie? Such a great one.}

healthy greek-inspired chicken burgers {with feta!}

My mom has been a brave, bold kitchen dynamo lately! She’s been trying out new recipes and then sharing her successes with me. Thanks, Mama! Then I get to share my faves with you guys!

A couple weeks ago, I shared a recipe for easy, colorful roasted veggies. Today, I’m sharing another recent winner: healthy, easy, greek-inspired chicken burgers.

These come together quickly, and I actually LIKE having leftovers because these burgers heat up great the next day. I also like them crumbled over a fresh tossed salad. The feta cheese and spices really kick these burgers up a notch!

  • 1 lb lean ground chicken breast {uncooked}
  • 1/3 cup crumbled feta cheese
  • 1 tbsp. oregano
  • 1/2 tsp. garlic powder

For toppings:

  • 1 jar roasted red peppers
  • chopped lettuce
  • sliced cheese
  • sliced avocado
  • hamburger buns or rolls, if desired

1. In a bowl, combine the ground chicken with the feta, garlic powder, and oregano. Mom recommends just using your hands to mix!

2. Divide mixture into four balls and press them into patties.

3. Heat a pan on the stove {or your grill/broiler.} Grill the patties until golden brown and cooked through, about 8 minutes per side.

4. Serve topped with red bell peppers, lettuce, cheese, onion — whatever your favorite toppings are! I like eating mine without a bun, topped with avocado, onion, and red bell pepper. Yum!

As we soak up these final end-of-summer days before the autumn sets in, I have found myself wanting to spend as much time as possible outside. Taking long walks, sipping tea out on the back porch, watching the sunset, breathing in the fresh air. I particularly love those late afternoons/early evenings, when dusk sets in and the light has a magical hazy quality that seems especially magical in this transitional period between seasons.

During late autumn and wintertime, I love to cozy up in my kitchen baking or cooking. But right now, I’m in the mood for easy, throw-together meals that are still healthy and nutritious.

Enter these roasted veggies + potatoes.

This recipe comes from my mama and could not be simpler. All you have to do is chop, toss, and bake. I love how customizable it is based on whatever your favorite veggies are, or what’s in season. Plus, it looks beautiful — definitely a dish you could make for company or for a potluck and feel proud about. I think I’m gonna cook up a batch for myself tonight!

  • 2 tbsp. olive oil
  • garlic powder
  • 1 small bag of little red potatoes
  • 2 carrots
  • 1 zucchini
  • 1 yellow squash
  • 1/2 red onion
  • any other veggies of your choosing!

1. Preheat oven to 400 degrees.

2. Chop all the veggies and potatoes into relatively equal-sized pieces.

3. Pour them into a large Ziplock bag and add olive oil.

4. Zip closed and shake well until all the goodies are lightly coated with olive oil.

5. Spread the veggies and potatoes into an even layer onto a baking tray. Sprinkle generously with garlic powder {and/or other seasonings of your choosing.}

6. Roast veggies for 40-45 minutes. I recommend turning the veggies over with a spatula halfway through for even cooking.

7. When the potatoes are tender, everything is done! Remove from the oven and serve warm. Top with cheese if desired.

fabulous friday #51: recap edition!

Hi friends, and happy Friday! Sorry for the radio silence around here the past week or so… it’s been an especially busy time, filled with lots of emotion! I thought I would make today’s Fabulous Friday post a recap version of all the neat things I’ve been grateful to experience and celebrate recently.

Here are 5 things I’m loving right now:

1. Memorial Day weekend was Céline’s Celebration of Life, which was basically a big party honoring her memory and celebrating the amazing, one-of-a-kind, treasure of a person she was.

I wasn’t quite sure what to expect or how I would be feeling, and while the evening was bittersweet and there were certainly tears shed, it was an overwhelmingly loving and beautiful experience. It was a gift to be with my friends from college, and to spend time talking to and connecting with other people who knew and loved Céline from all different facets of her life. The party was themed “Around the World” and I dressed up as Ireland — an excuse to wear my gold dress from college that I always associate with Céline and our college parties.

I think Céline would have really loved it. I miss her every day.

2. My 28th birthday yielded all sorts of sweet surprises. One of my students wrote me this lovely card, and another gave me a piece of her own artwork — a stunning painting of birch trees! She is nine. NINE. I am in awe.

And my darling Dana surprised me with these gorgeous sunny tulips! They make me smile every time I walk past. Thank you, Dana! ❤

3. For my birthday, Allyn surprised me with a cooking class in San Francisco at Sur La Table! It was my first time ever taking a cooking class and it was so much fun. Normally the class would hold up to 16 people, but we lucked out that we were the only two people who showed up — it ended up being a “private” class just for us! I think we got to do a lot more “hands-on” cooking ourselves than we would have if it had been a full class. And when the instructor found out it was my birthday, she brought me a cupcake with a candle in it and everyone sang me “Happy Birthday.” So thoughtful!

We learned to make grilled pizzas with homemade dough and toppings. That’s right, pizza cooked on a grill pan over your stovetop! It was much easier than I expected and turned out amazing. My favorite part was the thick, chewy crust. We made a classic margarita pizza; a Greek-influenced bell pepper and chorizo-topped pizza; and a pizza topped with seasoned lamb and mint pesto. They were all fabulous!

Allyn had a fun time too and we are definitely hoping to take more cooking classes together in the future. Such a unique and cute date!

4. The evening of my birthday, my extended family gathered at my Aunt Annie’s house for dinner. It was wonderful to get to spend time with them all. As always, there was lots of laughter and storytelling around the table. And my grandma baked and decorated my birthday cake herself! Have you ever seen a more adorable cake?

5. On May 30, Allyn graduated with his MBA! He has worked so hard the past two years on his degree and I could not be more proud of him. If graduating were not enough, he was also honored as the Outstanding Student of the Year, chosen by faculty and fellow students. Congrats, sweetheart!!

Hi, everyone! Happy Thursday! Hope your week is thrumming along nicely. 🙂

A little while ago, I promised you this recipe that my mom made for dinner one night during our family reunion in Pittsburgh. Not only is it easy, healthy, and delicious, I love this recipe because it is full of flavor and easily customizable. Don’t like goat cheese? Substitute feta or parmesan, or leave out the cheese altogether. Mom served it over orzo pasta; I like it best over quinoa. Whatever suits your fancy! This also makes great leftovers and heats up well. Hope you enjoy!

chicken & bell peppers with goat cheese

– 2 large chicken breasts, or a package of chicken tenders
– 1/2 cup flour
– 2 tbsp olive oil
– 2 bell peppers; I like the combination of orange and yellow
– 1 small onion
– 1 can diced tomatoes
– 1 small can tomato sauce
– 1 tbsp minced garlic
– fresh basil, to taste
– goat cheese {or feta or parmesan, if you prefer}
– salt and pepper, to taste
– pasta or quinoa, for serving

1. Slice the bell peppers and onion into chunks and set aside.

2. Cut the chicken into small pieces. Pour the flour into a pie pan or shallow dish so it is an even layer. Sprinkle with salt and pepper to taste. With your fingers, roll the pieces of chicken in the flour until they are evenly coated.

3. Pour the olive oil into a skillet over medium heat. When oil is hot, pour in the chicken and saute until cooked through. The flour will create a nice golden-brown crispiness. Once chicken is cooked, remove from pan and set aside.

4. In the same olive oil, saute the bell peppers and onion for about 10 minutes, until the peppers are soft and the onion is translucent.

5. Add the diced tomatoes, tomato sauce, minced garlic, and chicken. Cover and simmer on low.

6. Finely chop the basil. Just before serving, add the basil and goat cheese, to your taste.

7. Serve by itself, or over pasta, rice or quinoa.

a year of living simply: week 15

Hi, friends! Hope your week is off to a great start. I’m off to a morning PT session and some tutoring appointments before I head home to pack my suitcase because… tomorrow I’m leaving on a jetplane for Los Angeles for my amazing brother’s MBA graduation! I’m so darn proud of him. This evening, before I go, I’m meeting up with Dana at one of our favorite local places. So glad I get to see her before I leave!

So that’s what my day is looking like. Backing up a bit, how was your Mother’s Day weekend? I was bummed I was not able to be with my mom in person {though we are going to have a belated celebration this upcoming week when my brother and I are both home!} but I did get to talk to her on the phone. Suffice to say, I am beyond grateful that I am gifted with this amazing woman as my mother. I could go on for hours and hours about how kind, caring, supportive, funny, generous, and all-around wonderful she is. I love you, Mom!

I did get to spend time with Allyn’s delightful mother Barbara on Mother’s Day. She is a firecracker, with so many hilarious and fun stories to share. She is also extremely enthusiastic and encouraging of my writing, which means so much to me. Plus she raised a pretty dang stupendous son who I love very much! 😉 She has welcomed me into the family with open arms. I was lucky to be invited to join Allyn, his mom and sister on their Mother’s Day tradition of going to the horse races! It was my first time ever going to the racetrack and it was a blast. The horses are gorgeous and I loved watching them run. We bet $2 on each race and I ended up winning a couple, so I walked out of there with $1.26 more than I walked in with! Woo hoo! Enough to pay for the $1 hot dog I ate for lunch, haha.

Allyn and I left the races a little early so I could head home to cook Mother’s Day dinner for my grandparents and extended family! I am the oldest grandchild and, as you know, not yet a mother, and I was thinking that if I didn’t volunteer to cook, one of my aunts or my grandma would likely end up hosting a Mother’s Day get-together for our family. I wanted them to be able to relax on their special day, so I stepped up to cook the meal. I made a chicken & bell peppers pasta dish and snickerdoodle cookies for dessert.

Everything turned out great, and it was so lovely for us all to spend time together. It made me especially happy to see my grandma so happy. She was all dressed up in this pretty new blouse my mom got her for Mother’s Day!

Now it’s time for this week’s simplicity…

year of living simply

Our last challenge was to journal about your beliefs — about yourself, your life, your relationships, your world — and reflect on what you wrote. Is something you believe about yourself holding you back? Is anything an old, worn-out belief that is no longer serving you? How about letting go of it?

In addition to my limiting belief of myself as someone who has trouble saying, “No” — that, after a conversation with my sweetheart and some reflection, I realized may not be true about me anymore — I also examined my idea of myself as “not a morning person.” I love the feeling of waking up early with the whole day in front of me, but I have always thought of myself as more naturally a night owl… I’m going to experiment with going to bed earlier and getting up earlier, and see how I like it!

This week’s challenge was inspired by Mother’s Day. It is such a wonderful and important holiday — with the intention of celebrating mothers and mother figures in our lives and thanking them for all they do and have done for us — but I think the true purpose of the day can easily get lost in hurry and stress. Everything is so busy that it is common to wait until the last minute, and then suddenly the day is upon us! We rush around getting cards and flowers and gifts, not focused on the meaning behind them as much as simply having SOMETHING to give.

But what if we approached things a little differently? Specifically, what if we gave ourselves more TIME? When you have a lot of time to do something, it is infinitely less stressful. You don’t even need to spend more time doing the actual thing; simply having more time before the deadline minimizes stress. Looking ahead on the calendar, many of us have graduations to attend in June, plus June 21 is Father’s Day. Your challenge for this week is to prepare for one or more of those upcoming events: brainstorm thoughtful gift ideas, buy cards, plan activities to celebrate. You could even write the cards and wrap the gifts in advance so you are all ready to go! If you have any birthdays coming up in the next couple months, you could plan for those, too. Also, remember you don’t always need to buy material gifts for people — a donation to a favorite charity or a day spent with you doing something fun are meaningful gifts that don’t add any STUFF to a person’s life!

Aaaaaand just like that, it’s the weekend! It is a warm one around here and we are all trying to stay cool, and also soaking up some gorgeous sunshine outdoors. I get to meet up with this pretty lady in a few hours for dinner.

Here are 5 things I’m loving right now:

1. My favorite dessert of late: organic vanilla greek yogurt + fruit {raspberries, blueberries, and strawberries are my faves!} + mini chocolate chips.

2. My wonderful minister gave me a copy of this little book, which takes its title from a beautiful Robert Frost Poem, Nothing Gold Can Stay:

Nature’s first green is gold,
Her hardest hue to hold.
Her early leaf’s a flower;
But only so an hour.
Then leaf subsides to leaf.
So Eden sank to grief,
So dawn goes down to day.
Nothing gold can stay.

I’ve been reading through the short essays in this book when I wake up in the morning and before I go to sleep at night, and it has been a source of comfort.

3. Last weekend I drove to Marcus Books in Oakland to attend a talk by Tavis Smiley about his new book chronicling his 20+ year friendship with Maya Angelou, My Journey With Maya. Tavis’s talk was filled with humor, wisdom, and his trademark insight. He is one of my role models! And I am savoring this book. I would definitely recommend picking up a copy — I think it would make the perfect Mother’s Day or graduation gift!

4. My friend Jess sent me this lovely ring and a nice card in the mail, out of the blue! It was really sweet and made my day. It’s an infinity ring, symbolizing the everlasting bonds of friendship. She sent them to our friendship group from college, as a way of honoring Celine.

5. This *free* April reflection worksheet courtesy of Nicole at Life Less BS. It’s the perfect way to say goodbye to April and hello to May! Nicole never fails to make me feel inspired and ready to tackle my goals and BIG dreams for my life.

Hi, friends, and happy weekend! Hope you’re up to something fun!

Here are 5 things I’m loving right now:

1. This movie: Hank & Asha. My brother sent me a link to it after he watched it on AmazonPrime, and I watched it earlier this week. I was hooked from the first five minutes! It’s a beautiful, unconventional love story told solely through video messages the two characters send to each other. I would definitely recommend checking it out!

2. On the topic of entertainment, I’ve found a new TV show that I’m working my way through… Manhattan Love Story! Does anyone else watch this one? It’s a new show in its first season and I’ve been watching it from the beginning on Hulu. I was missing my love-story sitcom ever since “A to Z” bit the dust {you’ll always have a place in my heart, Andrew + Zelda!} and Manhattan Love Story fills this void perfectly. Fingers crossed this one sticks around!

3. I’ve tried out some new recipes that turned out pretty well this week: an Italian chicken-and-peppers quinoa bowl that I’ll share with you soon; a veggie butternut squash chili {similar to this recipe but with squash subbed for the ground turkey and black beans subbed for the kidney beans, and quinoa added}; and a raspberry-apple cobbler, similar to this one but using raspberries and raspberry preserves instead of pumpkin butter. It was delicious served warm, with a scoop of vanilla ice cream on top!

4. Thanks to The Literary Nest for including my story “The Man Who Lives In My Shower” in their debut issue! This story originally appeared in Zahir: a journal of speculative fiction back in 2010, and it’s wonderful to see it get some renewed attention. You can read it here.
