why I love meal-planning

Hello, lovely people! It is currently Sunday afternoon and it is raining, for which I am very grateful. {Even though the rain sometimes causes ant invasions in our apartment… stay away, ants!} We can use all the rain we can get. Also, there is something that feels especially cozy to me about rainy weekend days. I just want to listen to Jack Johnson and maybe some old school Maroon 5… Sunday Morning, anyone?

I forgot to mention earlier that last Sunday, I went to a baby shower for my cousin Sharon, who is due with a baby boy in June. So exciting! It was actually the first baby shower I have ever attended, and I thought the hosts were so thoughtful and creative with the way they put the event together. We decorated burp cloths with fun designs, played a game where the goal was not to say the word baby {I totally failed, haha!} and showered Sharon with adorable baby gifts, including some of the cutest onesies I have ever seen. Congrats, Sharon & Matt!

Typically Sundays are when I plan out the week ahead; I like to get a handle on things so I feel like I begin the week with a bang! Allyn and I talk about our schedules for the week and if we have any special events coming up on the calendar. Something else I like to do on Sundays is to jot down a quick dinner menu plan for the week using this handy-dandy whiteboard magnet calendar I picked up in the dollar-bin area at Target.

I never used to really do meal-planning, but I am a full-fledged convert now. I have been surprised at 1) how little time it takes and 2) what a big difference it makes in how prepared and productive I feel. Spending fifteen or twenty minutes looking through recipes and planning out dinners for the week saves me a LOT of time and mental space, because then I don’t really need to think about dinner at all for the rest of the week… I just follow what’s on the whiteboard, and we’re good to go!

Here are some things that have been helpful for me when it comes to meal-planning:

  • I look in our cupboards and fridge and see if there is anything that needs to be used up. For example, when Allyn and I make pasta for just the two of us, we usually only use half a jar of sauce. So I usually like to make some sort of pasta dish two weeks in a row to use up the rest of the pasta sauce. Other examples could be veggies, greens, or little leftover bits from our Blue Apron meals like seasonings or half a head of garlic. For some reason, it makes me ridiculously happy to use up leftover ingredients. Embrace the little things!
  • Putting special dinners on our meal plan calendar, like going to a restaurant in the city with friends or celebrating someone’s birthday, lets us look forward to these events all week long and makes them even more special. As Gretchen Rubin writes about, according to her research on happiness, anticipation plays a huge factor in enjoyment. 
  • Meal-planning gets me to actually try out new recipes that I tear out from magazines or dog-ear in my cookbooks. If left to my own devices, figuring out what to have for dinner the day of, I tend to fall back on my same tried-and-true recipes: vegetable soup, pasta with tomato sauce, chili and corn muffins, enchiladas with black beans. I love all of these recipes, and they are great to have in my arsenal as staples, but it is so easy to fall into a “cooking rut.” I get tired of always eating the same thing, yet never know what else to make. But with meal-planning, I look through my recipe folder and specifically decide in advance what I am going to cook on which days. {I think the key for me is in advance!} Every week, I cook one or two new-to-us recipes. It helps that Allyn is pretty much game to eat whatever I put in front of him, so even my less-successful cooking attempts have been sweetly consumed in our house. 🙂
  • Planning our meals also makes grocery shopping much simpler and much less wasteful. Allyn and I use the app Wunderlist to add items to our shared grocery list whenever we run out of something. When deciding on recipes to make, I immediately add to Wunderlist all the ingredients needed to make everything on our meal plan for the week; this ensures that I don’t forget that one crucial ingredient like lime juice or tumeric that I may not have in the pantry already. I’ve learned that trying out new recipes means branching out of your comfort zone, and sometimes venturing into new aisles of the grocery store you don’t usually visit! Plus, nothing derails my cooking juju more than realizing I forgot to get something on the recipe’s list of ingredients, and need to run out to the store. #letsjustorderpizzainstead
  • Meal-planning helps us prevent food waste, which isn’t just good for our wallets — it’s good for the planet. I was staggered to learn that throwing away a pound of chicken wastes 519 gallons of water! Ruth Mathews of the Water Footprint Network explains that when you throw away food, you are not just throwing away that food item, you are also throwing away all of the resources that went into producing that food item. Furthermore, tossing food into the trash means it will end up in a landfill, producing greenhouse gases that contribute to climate change. If meal-planning helps you eat everything in your fridge before it goes bad, you could be saving thousands of gallons of water every week — not to mention saving extra dollars in your wallet, too!
  • Something else I do that has become a little joke between me and Allyn is that if I am going to be gone for whatever reason and there are leftovers in the fridge I want Allyn to eat up, I write him out a little menu as a reminder. I purposely try to make the leftovers sound as fancy, gourmet and appealing as possible. For the parents out there, this might be an easy way to make leftovers more fun for picky-eating children!

a year of living simply: week 14

Happy Wednesday, my friends! This morning, I was woken up by a wild turkey gobble-gobble-squawking on the lawn outside my bedroom window. It was quite a unique alarm to wake up to and a funny sight to usher in my day. 🙂

Today is going by quickly thanks to a mix of writing, “housekeeping” business type stuff, errands, and a gym session where I tried out the elliptical for the first time in a long time. It was exciting to do some cardio again without pain! My PT is working, slowly but surely — I just have to keep being patient and doing my exercises.

Now it’s time for this week’s simplicity…

Last week’s challenge — inspired by Lauren Singer, a 23-year-old blogger living in NYC who hasn’t produced ANY waste in two-plus years — was to pay attention to how much waste you produce and try to produce less. I found that simply being attentive helped me produce less garbage. For example, I refrained from using paper towels whenever possible, and instead of grabbing a stack of paper napkins at Starbucks, I only took one. I made sure to recycle even small pieces of paper, like oatmeal packets, that can easily sneak into the garbage. I reused envelopes when mailing packages at the post office. Instead of using Ziplock baggies to pack my veggie snacks, I used reusable containers. {Purchasing glass containers is on my to-do-list!} I aim to continue being aware of and working to reduce my waste, and I have a goal of learning how to start a compost container, too, for food waste. My sweetheart composts and it was something I was attracted to about him from the very beginning — his care for small details to help the environment. #treehuggersmakemeswoon

This week’s challenge was inspired by a conversation I had with my sweetie earlier this week. We always call each other to say goodnight and talk about our days, and sometimes we wind up on these conversational tangents that are really fascinating and I feel like I learn so much more about him from our long meandering talks. Anyway, somehow we got on the topic of how we perceive ourselves, and he said something I wasn’t anticipating: that sometimes he is surprised by things I say about myself here, on my blog. For example, a few weeks ago when I posted about how I’m learning to say “No” to things and how I tend to say “Maybe” and hem and haw and dread until I eventually say “No” and feel like I’m letting the person down — Allyn said that he never had that view of me at all. He sees me as someone who is very intentional about how I spend my time and proactive about committing to the things that matter to me. Of course, he admitted, there are surely things in my daily life and routine and work obligations, etc. that he doesn’t know about, but still — it got me thinking.

And when I tried to come up with specific examples of things I have said “Yes” to lately that I really haven’t wanted to do, my list was pretty dang short. A lot of memories I have of that behavior are pretty far in the past, like back in my high school and college days. I realized that maybe, without realizing it, I’ve been holding onto a limiting belief about myself and haven’t given myself credit for learning and growing. Maybe I am a different person now — stronger, more self-aware, more intentional and proactive about my time and my commitments — than I used to be when I was afraid to say, “No.” Perhaps in this instance, there is more truth in the way that Allyn sees me, than in the way I see myself.

So this week’s challenge is to do some journaling about your beliefs: about yourself, your life, your relationships, your world. Be honest. Don’t write about what you “think” you should believe; write the story you tell yourself, deep down. Then reflect on what you’ve written. Is something you believe about yourself holding you back? Is anything an old, worn-out belief that is no longer serving you? How about letting go of it? If you are the type of person who likes ritual {as I do!} write your limiting belief or idea on a slip of paper and burn it to symbolize releasing it from your life.

lessons i’ve learned from living with my grandma

I’ve been living with my grandparents for almost three months now. Daily life with these two full-of-life octogenarians has been such a gift. My grandparents are insightful, intelligent, kind, hard-working, and often hilarious people. And their love for each other warms my spirit.

I’ve learned a lot from watching and listening to my grandma. Here is a woman who graduated from college, earned a Master’s degree in Education while working full-time as a teacher, and also raised four children — often by herself, as my grandpap traveled a lot for his job. She grew up during the Great Depression and WWII and learned from her mother how to live with the utmost frugality. She is the matriarch of our family, always going out of her way to make sure her children and grandchildren are happy and well-fed and comfortable. She talks to her sister every day, keeps up with a wide network of friends, and volunteers her time through various organizations. I’m so proud of the woman she is, and proud to be her granddaughter.

I thought it would be fun to share some lessons, large and small, that I’ve learned from living with my grandma these past few months. {I’m sure there will be more posts to come on the subject!}

1. Love is more powerfully shown through actions than through words. My grandma isn’t one to say “I love you” all that often. She says she can’t really remember her parents ever telling her they loved her, but she always knew they loved her because of their loving actions. My grandma is always doing kind things for the people she cares about. Yes, I believe it is important to tell the people you love how much you love them, but even more important is backing up those words with loving actions. Without caring gestures and acts of love, the words “I love you” lose their meaning.

2. Always bring a jacket. You never know when the weather’s going to turn, and you don’t want to be cold.

3. Always bring a snack. You don’t want to be hungry. Just stick a granola bar in your purse, at the very least.

4. Get to the show early to get a good seat. My grandma is always the first person at the movie theater, picking the best seat in the house. Often she’ll change her mind two or three times before she finds the seat she wants.

5. The freezer is your friend. My grandma hates wasting food. All leftovers are refrigerated. If she thinks we won’t eat them in time, she’ll put them in the freezer for later. Bread, cakes, cookies, pies — everything can be frozen and resurrected later. The woman wastes nothing. It’s amazing.

6. If you don’t know what to make for dinner, raid your fridge and make soup. You can’t go wrong with a pot of chicken stock and cut-up veggies.

7. Take a walk every day. Every morning, even when her hip is a little sore, she puts on her tennis shoes and goes for a walk around the neighborhood. Even just fifteen or twenty minutes of exercise makes a difference. My grandma also believes in getting your exercise in early, before the craziness of the day sets in.

8. When the weather’s nice, sit outside. If the sun in shining and the breeze isn’t too cold, you can bet you’ll find my grandma outside on the patio, relaxing in her lounge chair, reading the paper or talking to her sister or enjoying an afternoon nap. 

9. Sometimes people are yo-yo heads. Forgive them. My grandma’s favorite term for someone who disappoints is a “yo-yo head.” According to her, we’re all yo-yo heads sometimes. That’s why we have to be patient with each other.

10. Strangers are simply friends you haven’t met yet. My grandma is the Queen of Small-Talk, the friendliest person I’ve ever known. She talks to everyone — people waiting behind her at the post office, the barista at Starbucks, the person sitting the next seat over on BART. All the grocery store checkers know her by name. To me, sometimes the world can seem lonely or disconnected, everyone staring at their tiny phone screens or listening to their iPods. But my grandma reminds me every day that the world is a friendly place if you make the effort to be friendly yourself.

Happy Tuesday! As promised in an earlier post, I have a quick & easy recipe to share with you today: oven-roasted pumpkin seeds. If you are someone like me who does not like to waste anything, this is a great way to get the most bang for your buck out of your carved Halloween pumpkins!

After you’ve scooped out all those slimy pumpkin guts, why not roast up the pumpkin seeds for a healthy and delicious snack or salad-topper? Pumpkin seeds are a terrific source of zinc, vitamin e, and a wealth of antioxidants!

1. Preheat oven to 350 degrees and line a baking sheet with aluminum foil.

2. Rinse the seeds clean of all pumpkin goop.

3. Dry the seeds on a paper towel.

4. In a small bowl, stir 2 tbsp butter or coconut oil with the seeds until they are well-greased.

5. Spread out the seeds in one layer on the baking sheet. {We had enough pumpkin seeds to do two separate batches.}

6. Season however your heart desires! We did one sweet batch {pumpkin pie spice + cinnamon} and one savory batch {garlic salt + ground pepper.}

7. Bake for 10-12 minutes, until seeds begin to turn golden brown at edges. Be careful not to overcook the seeds, because they burn quickly! Roasting pumpkin seeds reminded me a lot of cooking popcorn, where things can go from delicious –> disastrous in a very short time frame.

Kitchen Tip Tuesdays: delicious recipes to re-use your leftovers

A couple weeks ago, I posted a tip about making the most of your oven time by cooking meat or veggies to use later in the week. {I often bake chicken to use in later dishes.}

This week, I’m sharing some recipes to use up leftovers. I really dislike wasting food, and re-using your leftovers in new recipes is a great way to save food and money!

  • Leftover mashed potatoes? Fry them up into potato pancakes.
  • Leftover oatmeal? Make these delicious, super-moist oatmeal cookies.
  • Leftover veggies? Add them to pasta or a casserole.
  • Leftover fish? Make baked fish cakes.
  • Leftover chicken? Add it to a leafy green salad, or mix in some mayo, mustard, raisins and almonds to make chicken salad.
  • Leftover quinoa or rice? Dump it in a pot of soup to make the meal heartier.
  • Leftover French or sourdough bread? Tear it up into chunks and bake cinnamon french toast.

review of “7: an experimental mutiny against excess” by jen hatmaker

You know when you hear a ton of good things about a book or a movie or TV show, and there’s a part of you that is hesitant to delve into that piece of entertainment or knowledge because you’re worried that it’s been built up too much, that it can never live up to your expectations now that so many people have raved about it to you?

Often, when I do end up caving and watching or reading whatever it is everyone is buzzing about, I do feel a little disappointed in the end — I guess my imagination and expectations are too easily raised to insurmountable heights! But there have been a few exceptions, when I have just been knocked off my feet by something that had already been built up so much. Off the top of my head, I can think of:

  • The Catcher in the Rye by J.D. Salinger
  • To Kill a Mockingbird by Harper Lee
  • the musical Wicked {I saw it with my mom, who was similarly blown away}
  • Downton Abbey {Mike and I resisted this for a while but are now thoroughly on the Downton Abbey train! Still a little behind, making our way through Season 2 and trying to avoid spoilers on Facebook!}

And now I have a new thing to add to my list: Jen Hatmaker’s amazingly inspiring book 7: an experimental mutiny against excess.

I bought this book because I kept seeing great things pop up about it on many of my favorite blogs. The idea behind the book really intrigued me; here is the synopsis from Jen’s website:

7 is the true story of how Jen (along with her husband and her children to varying degrees) took seven months, identified seven areas of excess, and made seven simple choices to fight back against the modern-day diseases of greed, materialism, and overindulgence.”

When sifting through my thoughts about this book, the first thing that struck me was that my experience reading this book is a little ironic, considering Jen’s message of taking your life back from the modern pressures of materialism and overindulgence. Because I gobbled up this book. I devoured the whole thing in less than two days. I just could not stop myself from reading “a little more, just a little more, one more chapter …” Talk about indulgence! 🙂

There were a number of things that made reading this book so addictive. First, I loved Jen’s voice. Much in the same way I felt like reading The Happiness Project was an extended conversation with author Gretchen Rubin over coffee, reading 7: an experimental mutiny against excess felt like I was sitting with Jen Hatmaker at her kitchen table, listening to stories from her life. She opens her home and her life to readers, and her voice is so warm and inviting. I read part of this book on a plane trip, and I had to bite my lip multiple times so as not to laugh out loud. She is hilarious!

I think one of my reservations about reading this book was that I would feel “preached at,” but this is not one of those books. The book is written in a diary format, so reading it feels like you are there with Jen in the trenches as she attempts to make these huge changes in her life. She chronicles her failures and setbacks in addition to her successes and high points — by the end of the book {or, to be more honest, by the end of chapter 2 or 3!} I felt like Jen was one of my good friends. Or perhaps my own personal cheerleader, encouraging me to take the leap and implement some of these ideas into my own life.

The book proceeds chronologically over the course of a year in Jen’s life, with each chapter devoted to a month of the project. {She took off a couple weeks between months to recharge and regroup.} Here is the breakdown of how Jen organized her 7 project:

  • month 1: Food
  • month 2: Clothes
  • month 3: Possessions
  • month 4: Media
  • month 5: Waste
  • month 6: Spending
  • month 7: Stress

I think for me, the most eye-opening and inspiring chapters were those devoted to waste/the environment, possessions and stress. After reading this book, I feel so blessed to have so much, yet also the pressing need to unburden myself from extra possessions — I want to give more to others, to use what I have for good. I feel even more committed to my year of kindness challenge and inspired to do even more! And I have plans in the works to create a more efficient and thorough household recycling system — I try to recycle what I can, but I think I can do better. I will keep you posted!

Well, this review is getting quite long, so I guess I should wrap it up … as you can probably tell, I highly recommend this book. It surpassed even my built-up expectations, moved me, made me think, and warmed my heart. Perhaps above all else, it made me feel hopeful and inspired to do my small part to make a difference and make the world a better, brighter place. Jen Hatmaker is a testament that we all can take charge of our lives, mutiny successfully against excess, and live a more simplified, healthier and happier existence!
