why I love meal-planning

Hello, lovely people! It is currently Sunday afternoon and it is raining, for which I am very grateful. {Even though the rain sometimes causes ant invasions in our apartment… stay away, ants!} We can use all the rain we can get. Also, there is something that feels especially cozy to me about rainy weekend days. I just want to listen to Jack Johnson and maybe some old school Maroon 5… Sunday Morning, anyone?

I forgot to mention earlier that last Sunday, I went to a baby shower for my cousin Sharon, who is due with a baby boy in June. So exciting! It was actually the first baby shower I have ever attended, and I thought the hosts were so thoughtful and creative with the way they put the event together. We decorated burp cloths with fun designs, played a game where the goal was not to say the word baby {I totally failed, haha!} and showered Sharon with adorable baby gifts, including some of the cutest onesies I have ever seen. Congrats, Sharon & Matt!

Typically Sundays are when I plan out the week ahead; I like to get a handle on things so I feel like I begin the week with a bang! Allyn and I talk about our schedules for the week and if we have any special events coming up on the calendar. Something else I like to do on Sundays is to jot down a quick dinner menu plan for the week using this handy-dandy whiteboard magnet calendar I picked up in the dollar-bin area at Target.

I never used to really do meal-planning, but I am a full-fledged convert now. I have been surprised at 1) how little time it takes and 2) what a big difference it makes in how prepared and productive I feel. Spending fifteen or twenty minutes looking through recipes and planning out dinners for the week saves me a LOT of time and mental space, because then I don’t really need to think about dinner at all for the rest of the week… I just follow what’s on the whiteboard, and we’re good to go!

Here are some things that have been helpful for me when it comes to meal-planning:

  • I look in our cupboards and fridge and see if there is anything that needs to be used up. For example, when Allyn and I make pasta for just the two of us, we usually only use half a jar of sauce. So I usually like to make some sort of pasta dish two weeks in a row to use up the rest of the pasta sauce. Other examples could be veggies, greens, or little leftover bits from our Blue Apron meals like seasonings or half a head of garlic. For some reason, it makes me ridiculously happy to use up leftover ingredients. Embrace the little things!
  • Putting special dinners on our meal plan calendar, like going to a restaurant in the city with friends or celebrating someone’s birthday, lets us look forward to these events all week long and makes them even more special. As Gretchen Rubin writes about, according to her research on happiness, anticipation plays a huge factor in enjoyment. 
  • Meal-planning gets me to actually try out new recipes that I tear out from magazines or dog-ear in my cookbooks. If left to my own devices, figuring out what to have for dinner the day of, I tend to fall back on my same tried-and-true recipes: vegetable soup, pasta with tomato sauce, chili and corn muffins, enchiladas with black beans. I love all of these recipes, and they are great to have in my arsenal as staples, but it is so easy to fall into a “cooking rut.” I get tired of always eating the same thing, yet never know what else to make. But with meal-planning, I look through my recipe folder and specifically decide in advance what I am going to cook on which days. {I think the key for me is in advance!} Every week, I cook one or two new-to-us recipes. It helps that Allyn is pretty much game to eat whatever I put in front of him, so even my less-successful cooking attempts have been sweetly consumed in our house. 🙂
  • Planning our meals also makes grocery shopping much simpler and much less wasteful. Allyn and I use the app Wunderlist to add items to our shared grocery list whenever we run out of something. When deciding on recipes to make, I immediately add to Wunderlist all the ingredients needed to make everything on our meal plan for the week; this ensures that I don’t forget that one crucial ingredient like lime juice or tumeric that I may not have in the pantry already. I’ve learned that trying out new recipes means branching out of your comfort zone, and sometimes venturing into new aisles of the grocery store you don’t usually visit! Plus, nothing derails my cooking juju more than realizing I forgot to get something on the recipe’s list of ingredients, and need to run out to the store. #letsjustorderpizzainstead
  • Meal-planning helps us prevent food waste, which isn’t just good for our wallets — it’s good for the planet. I was staggered to learn that throwing away a pound of chicken wastes 519 gallons of water! Ruth Mathews of the Water Footprint Network explains that when you throw away food, you are not just throwing away that food item, you are also throwing away all of the resources that went into producing that food item. Furthermore, tossing food into the trash means it will end up in a landfill, producing greenhouse gases that contribute to climate change. If meal-planning helps you eat everything in your fridge before it goes bad, you could be saving thousands of gallons of water every week — not to mention saving extra dollars in your wallet, too!
  • Something else I do that has become a little joke between me and Allyn is that if I am going to be gone for whatever reason and there are leftovers in the fridge I want Allyn to eat up, I write him out a little menu as a reminder. I purposely try to make the leftovers sound as fancy, gourmet and appealing as possible. For the parents out there, this might be an easy way to make leftovers more fun for picky-eating children!

traveling simply + the top 3 hospitality items I wish hotels would provide

Hello, friends! During this holiday season when many of us are traveling, Fairmont Hotels reached out to me about doing a post on the topic of favorite travel amenities. I thought it sounded like a fun idea, plus I am curious to hear your comments on the topic! Please play along in the comments section. 🙂

A big theme for me of late has been trying to simplify and streamline my life. This relates to travel, too! Back in college, I traveled around Europe for three weeks with two of my best friends, each of us bringing nothing more than a backpack as luggage. It was an amazing trip and serves as a reminder for me that you do not need to bring a lot of STUFF to make life-long memories you will treasure always!

Now my only real “must haves” when I travel are: my contacts/glasses; my favorite face-wash and sunscreen; cozy socks; portable snacks like granola bars and fruit; and a good book or two!

Fairmont Hotels also asked my ideas for the top three hospitality items I wish hotels would provide on the West Coast, such as the Claremont Hotel. Mine are a liiiiiiittle out there creative, but see if you agree — I think it would be SO awesome if hotels would provide these things:

Yoga mat

After a long car trip or plane ride, my body is aching to be stretched out. In the past I have tried to do some yoga moves in my hotel room, but it is never very peaceful or comfortable. Bringing my own yoga mat from home is inconvenient; it is bulky and takes up too much space. If a hotel chain provided yoga mats in their hotel rooms, it would definitely persuade me to stay there! Also, by doing so, hotels are sending the message that they care about their guests’ health and peace of mind. Travel can be stressful, especially when you are traveling for business purposes. When I am feeling stressed out, nothing centers me and calms me down like a quick yoga session.

The more I learn about composting our food waste, the more convinced I become of its importance. All of the hotels I have stayed at have little trash bins in the room, but what if one of these was a compost bin with a lid? If emptied every day, this would not smell at all, and it would make a big difference in the amount of waste sent to landfills! When I travel, I often bring healthy snacks such as apples and bananas; it always makes me sad to have to throw these in the garbage instead of composting them.

Why does composting matter? Food waste in landfills decomposes in an anaerobic environment {without oxygen} which produces the gas methane. When it enters our atmosphere, methane is a much more potent contributor to climate change than carbon dioxide. All of this can be solved by composting, because when food waste decomposes in a natural environment with oxygen, no methane is produced. Plus we produce compost to fertilize our future food products. It’s a win-win!

Recipe card

This idea was sparked by my recent visit to the Penzey’s Spices store in Cleveland. One of my favorite things about the store was the tear-off recipe cards scattered throughout the aisles. It was really fun to take home recipes from different parts of the world that featured various spices, many of which I had never before used. Trying out these recipes when I got home was a way to relive my trip a bit and also expand my repertoire in the kitchen. I think it would be neat if hotels adopted this idea and had recipe cards in the room that guests could take home with them. Perhaps hotels in different regions could feature recipes local to that region, or maybe all of the hotels could feature the same recipe and it would change each month or so. This would be a neat way to highlight local restaurants and chefs. The recipes could even be collected in a cookbook at some point that could be available for guests to purchase.

Hi, everyone! Hope your weekend is winding up great.

I had a busy day at church serving as Worship Associate with a special guest minister, Jason Shelton, who just so happens to be a minister at Holly’s church in Nashville! I actually saw him leading the choir when I went to a church service with Holly during my last visit. It was such a nice coincidence to have him visiting my church and it made me feel closer to Holly in a small way. I miss her a lot!

Jason Shelton is a super talented composer and musician, and there was lots of fantastic music during both services today. The theme of today’s worship was “music, change, the old and the new” and I maaaaay have written my Call to Worship about Taylor Swift. I was a little nervous about it, but the writing came straight from my heart and felt so appropriate to the theme. Happily, I discovered there are other T.Swift fans in the congregation {including a very sweet group of seventy-year-old women who came up to me afterwards} and everyone applauded at the end of my Call to Worship! #mychurchrocks

Backing up to Saturday, we celebrated Allyn’s sister Allyson’s birthday last night with a pirate-themed murder-mystery party! My guess about the murderer was completely off, as was most everyone else’s, but Allyson used her excellent sleuthing skills and solved the case. I could tell she really enjoyed her party, which made me happy because she is such an amazing person. I hope the party was a small way to show her how very loved she is! Also, check out the red beard on Allyn {aka Captain Redbeard}… it totally stole the show, haha.

Hi there, friends! Wow, it’s been a whirlwind weekend over here! How about you? It’s been nice to decompress and relax a little this evening after being go-go-go on Friday and Saturday. This morning I had a wonderful, restorative time at church, and chatted with people for quite a while after the service. When I came home, I called a couple friends to catch up while I was lounging in bed. It was lovely!

Then I chopped up bunch of veggies that were on their last legs in the fridge — celery, carrots, onion, bell pepper, snap peas — and threw them together in a pot of soup for dinner, which I ate with my grandma in front of the TV as we watched “Nashville”… my grandma is so funny watching that show, she thinks most of the male characters look alike and is perpetually getting their storylines confused. Such a cutie-pie!

Backing up to Saturday… I was out the door at 10:45 to tutor two of my mentees before driving to the public library to teach four back-to-back classes of kiddos. Other than some of my kindergarteners being scared of the thunder outside {we got some rain this weekend, woo hoo!} it was a pretty uneventful day of teaching. The quote of the day came from one of my eight-year-old students, rocking a shiny plastic dollar-sign ring: “Chuck E. Cheese’s is so HARSH, Miss Dallas. It’s so hard to win tickets!” #secondgradeproblems

After teaching, I drove to my sweetheart’s place and we carpooled to Plank to meet up with Dana and Brad for a double-date! We had such a fun time: chatted over great food, played arcade games {skeeball is my fave!} and of course we couldn’t leave without taking photos in the photo booth:

Hi there, friends! What did you think of the Oscars? I really need to get out to the movies more because out of all the Oscar nominees for Best Film, I had only seen one. I really want to see Boyhood, Selma, The Theory of Everything, and Birdman!

We went over to my Aunt Annie and Uncle Arn’s house to watch the Oscars and eat a delicious homemade pasta dinner. I need to get the recipe for my Uncle Arn’s tomato sauce so I can share it with you guys! He is Italian and makes a darn good pasta sauce.

I’ve been missing Celine a lot today. Trying to be gentle with myself. The grief ebbs and flows. I was talking with my brother earlier, trying to analyze my feelings — how maybe it’s starting to feel real that she’s truly gone; maybe I’m coming out of my denial of her death; maybe my sadness felt overwhelming because of all the beautiful gowns at the Oscars, my dear Celine who loved fashion so much.

Yeah. I think that’s it. I’m just missing my friend. A lot.

valentine’s day recap! + goals + recipes for the week of 2/15

Hello, everyone! Hope you are having a masterpiece day. It feels like springtime here in the Bay Area, sunny and warm. The trees are already bursting into bloom and daffodils are popping up everywhere. I love it!

You know what else I love? Valentine’s Day! I hope you had a great one! Mine was simply delightful. I did some morning baking {perhaps my best batch ever of red velvet crinkle cookies!} and then spent most of the day hanging out with adorable kiddos, teaching classes for Communication Academy. One of my kindergarten students made me a valentine and when her mom came to pick her up after class, she started crying because she didn’t want to leave! Nothing makes a girl feel loved quite like a 6-year-old throwing a temper-tantrum because she has to say goodbye to you. 🙂

After my last class ended at 5:45, I jumped into my car and drove to Oakland for a Valentine’s night date with my sweetheart. The drive was absolutely gorgeous — the sun was setting over the water, and the twinkling lights of the city made a stunning silhouette against the pink and red clouds. It felt like a valentine from Celine. ❤

Allyn and I walked a couple blocks from his apartment to an Ethiopian restaurant for dinner. Have you guys had Ethiopian food before? Before Saturday, the last time I did was back in grad school. I think the food is delicious, and it’s a fun dining experience, eating “family style” with your hands. Another bonus was that, on a night that can get pretty crazy to eat out at a restaurant, this was a quieter, off-the-beaten path place. It was lovely!

Then we went back to Allyn’s place to exchange gifts and watch Jerry Maguire {which I had never seen!} Allyn got me a box of chocolates and a beautiful purse from his travels in Kenya. Not only is the purse gorgeous from a fashion sense, it also supports a great cause. The purse was made through an organization called Amani — which means “higher peace” in Swahili — and is a sewing and reconciliation program for marginalized women in Africa. Women gain experience in sewing, bookkeeping, procurement, quality control, management and design; products sold enable women a chance to earn a consistent income. All in all, it was a perfect Valentine’s Day! ❤

On Sunday morning, Allyn and I headed to church bright and early because I was serving as Worship Associate for the 9:30 service. The topic was Salvation and I spoke about Celine. I was really nervous beforehand, but it felt good to talk about her and I was able to get through it without breaking down into tears. Afterward, so many people in the congregation came up to give me hugs. I’m slowly learning to lean on people in my grief and I feel grateful to be part of such a caring community.

Today has been spent writing, editing, reading, looking through old photos with my grandma {she and my Grandpap are celebrating their 60th wedding anniversary in June and she’s already starting to prepare!} and baking. Lately I just can’t get enough of baking, so I’m embracing it and trying out new recipes! Right now I’m noshing on these zucchini muffins made with coconut flour, plus I added in some peanut butter, shredded coconut and chocolate chips.

goals + recipes for the week of 2/8

Hi there, friends. It’s been a beautifully rainy weekend around here… always SO grateful for rain in our drought-stricken California! This weekend I spent some lovely hours reading, cozied up in my bed, listening to the rain patter outside. Right now I’m reading Molly Anterpol’s stunning short story collection The Un-Americans and I highly recommend it.

Something I was reminded of this past week was how much better all-around I feel when I fuel my body with real, whole foods. In the wake of Celine’s death, I really didn’t feel like eating much at all. When I did eat, it was a lot of bread and cookies and even one-too-many “screw it I’m sad” Starburst that gave me a canker sore.

Then, earlier this week, my body was practically screaming out for veggies. I didn’t know it was possible to experience an intense craving for spinach, but I felt it! So I stopped by the grocery store on my way home from tutoring and filled my hand-basket with cucumbers, bell peppers, celery, carrots, frozen berries… and, yes, a ginormous tub of organic spinach that it is now my mission to use up. I’ve been making scrambled eggs that are actually more spinach than eggs:

I’ve also been throwing spinach into morning smoothies, and I’ve been having lots of fresh spinach salads. Plus I just can’t get enough raw veggies… plates of sliced up carrots, celery, cucumbers, and bell peppers have been my go-to snacks.

Anyway, this is all to say that I’ve been reminded, yet again, how much what I eat effects my mood, energy, and general sense of well-being. When terrible things happen, when I’m feeling down, when everything looks gloomy, it is even more important to feed my body good things. Bring on the veggies!

Hi there, everyone! It’s been a lazy Sunday around here… which is nice, because things are going to pick up pretty soon when I go back to work/teaching/tutoring/church duties! thanksgiving weekend recap + goals for the week of 12/1

Wow, what a Thanksgiving!! I hope you all had a great one with yummy food and lovely company. I feel like I’m still getting back to reality… and acknowledging the fact that it is officially December. How did that happen so quickly?! {Silver lining: Christmas Pandora station, here I come!}

I know this is a bit delayed, but I still wanted to share some pics with you guys from my Thanksgiving weekend at home with my fam 🙂

We hosted twelve of my brother’s MBA classmates for Thanksgiving dinner, which was incredibly fun. They could not have been more gracious guests. Many of them were international students far from home, and a few had never experienced American Thanksgiving before — it was a special treat to be able to introduce them to one of my favorite holidays!

I loved helping my mom in the kitchen. Our menu included turkey, cranberry sauce, stuffing, mashed potatoes, gravy, green beans, corn, a sweet potato casserole that we refer to as “Henrietta’s yams” after my Grandma’s cousin who used to bring it to Thanksgiving every year, vegetarian chili, dinner rolls, a big ol’ salad… and, for dessert, pumpkin and apple pie and pumpkin muffins! Plus, some of our guests brought delicious brownies, black forest cake, and more pie!

While I enjoy turkey with cranberry sauce on top, my favorite Thanksgiving dishes are the sides! Anyone else the same way?

The Friday after Thanksgiving, we went out for a family dinner at Brendan’s, a local Irish pub {my parents are still hooked on Irish culture and cuisine after their trip to Ireland a few months ago!} I love everything about Ireland and was excited to try out this pub, which I thought was extremely authentic both in cuisine and atmosphere… it felt like being transported to Ireland! Definitely planning to go back when I’m in town for Christmas.

After dinner, I drove Greg back down to USC and stayed with him overnight, and on Saturday morning I tagged along to his MBA student tailgate before the USC-Notre Dame football game. It was a blast to hang out with his friends — such a fun group of people! And soaking up extra time with my brother is always a gift.

The rest of the weekend was spent hanging out with my parents, reading, relaxing, going for walks around the neighborhood, visiting my Gramps, and giving lots of love to Mr. Mur-dog.

goals + recipes for the week of 11/16

Hi, friends, and happy Sunday to you 🙂 Sorry I’ve been a bit MIA this week… it’s been unexpectedly busy! On Friday night, I went to Arianna’s high school play that she has been working on for months as the Assistant Director. I’m so proud of her! The set alone blew me away with its intricate attention to detail.

Yesterday, after teaching my rambunctious classes of kiddos, I took BART into the city and met up with my sweetheart for a fun sustainable foods event his MBA program was hosting. I noshed on a delicious spinach dish from a Jamaican restaurant, and Allyn had the jerked chicken and shared some of his dirty rice and plantains with me. It was nice getting to chat with his classmates and catch up with some people I hadn’t seen since Allyn’s surprise birthday party back in October.

Work-wise this week, some exciting developments have been happening that I hope I’m able to share sometime soon. In the meantime, I can tell you that I was really happy to get an acceptance this week from North Dakota Quarterly, the literary magazine out of the University of North Dakota, to publish my short story “Dirt” in their forthcoming “Slow” themed issue. Hooray! It’s been a motivating reminder of the importance of perseverance in pursuing your dreams, despite the inevitable rejections and disappointments — every “No” is one step closer to a “Yes!”

In that spirit… time for goals!
