a virtual coffee date

Last week, one of my favorite bloggers — Whitney at sometimes.always.never — wrote a post about what she would talk about if you sat down for a cup of coffee together. I loved getting a peek into her thoughts and life at the moment. I’ve been feeling a bit scatterbrained this week, with lots of projects and ideas competing for space inside my head, so this type of post was calling to me. I wish I could sit down and have a real coffee date with all of you! I guess a virtual one will have to do for now.

So, brew a mug of your favorite coffee or tea {I’m currently obsessed with the Harney & Sons hot cinnamon spice black tea that my mom got me for Christmas}, get cozy, and let’s chat.

I would probably suggest a coffee date at my new house so I could show you around. There are still plenty of boxes to unpack and pictures to hung up, but the “bones” of our new home are settled in and the space is feeling more and more cozy and familiar. I’d give you a little tour and then we’d sprawl out together on the couch in the living room, which is perhaps my favorite room of the whole house and the perfect place to curl up with a book. I love the fireplace and the natural light!

I would tell you about how my mom came to visit last weekend and how spending time with her nourishes my soul. One of the joys of growing up is feeling more on a “peer-to-peer” or “friend-to-friend” level with your parents. I love talking with my mom about marriage, running a household, work-life balance… basically I try to pick her brain as to how she manages to be so dang amazing. I feel incredibly lucky to have her as my mom! She booked her trip to coincide with our move and she was a HUGE help in getting things organized and moving in some new-to-us family furniture. {Even though she was sick with a cold — she’s such a champ.} My aunt Annie is moving soon and she generously gave us a bunch of pieces, including some beautiful rugs, a coffee table, and a professional wooden desk that I still can’t quite believe is mine!

Speaking of the desk, I would tell you about how my incredible husband does.not.give.up. The desk is BIG and at first, it seemed like it would just  b a r e l y  not fit through the doorjamb into the room we’ve designated as an office. We tried turning it around various ways and tried fitting it through the doorway at various angles, but nothing was working. The desk kept getting stuck partway through the doorway. Mom and I were ready to throw in the towel. “I’ll be fine with the old desk,” I said, even though my heart felt disappointed.

But no. Allyn was convinced that there was a way it would work. Eventually, he turned the desk vertically and was able to wiggle it through the doorjamb. Success! Mom and I could not believe it. All it took was some clever thinking and rethinking, determination not to give up too soon… and a screwdriver take the door off its hinges! There is definitely a life lesson in that experience.

{Right about now I would take a sip of my tea and confess to you that I was pretty dang nervous about detaching and reattaching the office door. But it worked out great! The door is good as new and my new desk is happily in place under the window.}

I would tell you how wonderful it was to see my mom, but that it highlighted how much I miss my dad and brother, and how I can’t wait to see them both in April to cheer on Greg as he runs the Boston Marathon! He just amazes me and makes me so proud. April is going to be an incredibly busy month, filled with exciting travel plans and lots of friend + family time. I am gearing up!

I would tell you how my new collection of short stories WOMAN, RUNNING LATE, IN A DRESS has officially been released into the world and it is surreal and scary and thrilling and hopeful to think of people reading my words and feeling transported into these characters’ lives. Holding the book in my hands still gives me goosebumps. People have already said some really nice things about it, which also gives me goosebumps. If you’d like a copy, you can snag one here! I would tell you how I’m developing a new program for people who want to grow more confident in their writing skills, work on writing projects that are important to them, and generally become better, happier, more productive writers! I would tell you how I’m loving the longer daylight hours, even though it has been a bit tougher to get up in the morning this week. I would rave about this recipe and this song and I would let you borrow this book, which I devoured in two days. We would eat some homemade pumpkin muffins and I would tell you about my ongoing quest to quit sugar and how it’s going fairly well. I’ve definitely scaled back, and there’s no more mindless sugar-snacking going on, but sometimes a girl just needs a square or two of dark chocolate. And that’s okay.

I would ask you about your family and your circle of friends, about what you’re loving and what you’re craving, about your dreams big and small, in this precious season of life you are journeying through.

And then we’d pour some more coffee or tea, and keep talking. Because nothing warms the heart like some good conversation.

Aloha! from The Big Island & Chobani Flips GIVEAWAY!

Aloha, friends!! I am typing this from a beautiful, breezy outdoor patio overlooking the pool at our vacation place in Hawaii… it is my first time to ever visit Hawaii, and I have been utterly blown away! Allyn’s grandfather has rental property on The Big Island, and when it worked out for Allyn and I to join his family for a short vacation in paradise, we jumped at the chance. June was a total workaholic month for me — between teaching summer camps for kids and keeping up my usual tutoring work, celebrating the release of Dancing With The Pen II, taking on some weekend literature classes for high school students, planning my ninth annual Summer Writing Camp, spearheading a screening of the Minimalism documentary in my hometown {seats still available if anyone is interested!} and preparing to marry the love of my life in less than two months… life has been quite a whirlwind!

Which is all to say, this vacation has come at the perfect time. Sun, sand, snorkeling… sunset dinners, hikes, lazy mornings… lots of relaxation and interesting conversation with people I love… it has been the “recharge” I needed!

An unanticipated perk of this trip is that it introduced me to Chobani Flips, a new product from my favorite yogurt company! The past month or so, I have been trying to eat yogurt every day to help keep my gut happy with probiotics, and I am a big fan of Chobani because they use real ingredients, natural sweeteners, and are always non-GMO. why I love meal-planning

Hello, lovely people! It is currently Sunday afternoon and it is raining, for which I am very grateful. {Even though the rain sometimes causes ant invasions in our apartment… stay away, ants!} We can use all the rain we can get. Also, there is something that feels especially cozy to me about rainy weekend days. I just want to listen to Jack Johnson and maybe some old school Maroon 5… Sunday Morning, anyone?

I forgot to mention earlier that last Sunday, I went to a baby shower for my cousin Sharon, who is due with a baby boy in June. So exciting! It was actually the first baby shower I have ever attended, and I thought the hosts were so thoughtful and creative with the way they put the event together. We decorated burp cloths with fun designs, played a game where the goal was not to say the word baby {I totally failed, haha!} and showered Sharon with adorable baby gifts, including some of the cutest onesies I have ever seen. Congrats, Sharon & Matt!

Typically Sundays are when I plan out the week ahead; I like to get a handle on things so I feel like I begin the week with a bang! Allyn and I talk about our schedules for the week and if we have any special events coming up on the calendar. Something else I like to do on Sundays is to jot down a quick dinner menu plan for the week using this handy-dandy whiteboard magnet calendar I picked up in the dollar-bin area at Target.

I never used to really do meal-planning, but I am a full-fledged convert now. I have been surprised at 1) how little time it takes and 2) what a big difference it makes in how prepared and productive I feel. Spending fifteen or twenty minutes looking through recipes and planning out dinners for the week saves me a LOT of time and mental space, because then I don’t really need to think about dinner at all for the rest of the week… I just follow what’s on the whiteboard, and we’re good to go!

Here are some things that have been helpful for me when it comes to meal-planning:

  • I look in our cupboards and fridge and see if there is anything that needs to be used up. For example, when Allyn and I make pasta for just the two of us, we usually only use half a jar of sauce. So I usually like to make some sort of pasta dish two weeks in a row to use up the rest of the pasta sauce. Other examples could be veggies, greens, or little leftover bits from our Blue Apron meals like seasonings or half a head of garlic. For some reason, it makes me ridiculously happy to use up leftover ingredients. Embrace the little things!
  • Putting special dinners on our meal plan calendar, like going to a restaurant in the city with friends or celebrating someone’s birthday, lets us look forward to these events all week long and makes them even more special. As Gretchen Rubin writes about, according to her research on happiness, anticipation plays a huge factor in enjoyment. 
  • Meal-planning gets me to actually try out new recipes that I tear out from magazines or dog-ear in my cookbooks. If left to my own devices, figuring out what to have for dinner the day of, I tend to fall back on my same tried-and-true recipes: vegetable soup, pasta with tomato sauce, chili and corn muffins, enchiladas with black beans. I love all of these recipes, and they are great to have in my arsenal as staples, but it is so easy to fall into a “cooking rut.” I get tired of always eating the same thing, yet never know what else to make. But with meal-planning, I look through my recipe folder and specifically decide in advance what I am going to cook on which days. {I think the key for me is in advance!} Every week, I cook one or two new-to-us recipes. It helps that Allyn is pretty much game to eat whatever I put in front of him, so even my less-successful cooking attempts have been sweetly consumed in our house. 🙂
  • Planning our meals also makes grocery shopping much simpler and much less wasteful. Allyn and I use the app Wunderlist to add items to our shared grocery list whenever we run out of something. When deciding on recipes to make, I immediately add to Wunderlist all the ingredients needed to make everything on our meal plan for the week; this ensures that I don’t forget that one crucial ingredient like lime juice or tumeric that I may not have in the pantry already. I’ve learned that trying out new recipes means branching out of your comfort zone, and sometimes venturing into new aisles of the grocery store you don’t usually visit! Plus, nothing derails my cooking juju more than realizing I forgot to get something on the recipe’s list of ingredients, and need to run out to the store. #letsjustorderpizzainstead
  • Meal-planning helps us prevent food waste, which isn’t just good for our wallets — it’s good for the planet. I was staggered to learn that throwing away a pound of chicken wastes 519 gallons of water! Ruth Mathews of the Water Footprint Network explains that when you throw away food, you are not just throwing away that food item, you are also throwing away all of the resources that went into producing that food item. Furthermore, tossing food into the trash means it will end up in a landfill, producing greenhouse gases that contribute to climate change. If meal-planning helps you eat everything in your fridge before it goes bad, you could be saving thousands of gallons of water every week — not to mention saving extra dollars in your wallet, too!
  • Something else I do that has become a little joke between me and Allyn is that if I am going to be gone for whatever reason and there are leftovers in the fridge I want Allyn to eat up, I write him out a little menu as a reminder. I purposely try to make the leftovers sound as fancy, gourmet and appealing as possible. For the parents out there, this might be an easy way to make leftovers more fun for picky-eating children!

In short, meal-planning makes cooking much simpler, less stressful, and more enjoyable for me. Now… I’m off to plan this week’s meals! 🙂 Enjoy the rest of your weekend!

my health heroes

Earlier this month I received an email from the American Recall Center, “a brand new website devoted to providing health and wellness news in simple, straightforward terms.” They say their ultimate goal is to help their readers take complete charge of their health by being fully informed!

They asked me if I would be interested in participating in their “Who Keeps you Healthy?” campaign by answering the question, “Who is your Health Hero?”

I immediately wrote back, “Of course!” I’ve spent the past couple weeks thinking about the question, and I’ve decided it’s too hard for me to pick just one person. I’m extremely fortunate to have multiple Health Heroes: my family!

In addition to running many marathons including Boston, he is a “running streaker” and has run at least three miles every single day since July 7, 2003 — that’s nearly 4,000 days! He keeps track of his streak and writes about running on his website.

My mom inspires me with her commitment to cooking nutritious meals, eating a healthful whole-foods diet, and making time for exercise even when she is busy. She has run many marathons and goes running in the morning before work, and walks twice a day with Mr. Mur-dog. She is truly a strong woman inside and out, and is my favorite gym buddy — she always encourages me to do one more rep on the weight machines! And, longtime blog readers may remember, my mom and I climbed Mt. Whitney together back in 2003.

Trojan_Invite_2011My brother inspires me with his dedication to exercise and being healthy, even in the midst of a super-busy academic and work schedule; he is a student in USC’s MBA program, works part-time in the USC Athletic Office, and serves as a leader of multiple student and volunteer groups. Yet he still makes time to run multiple times a week and is even taking part in a meditation course this semester. He inspires me to be healthy and happy in mind and spirit in addition to my physical body.

The more I thought about Health Heroes, the more my list grew:

  • My grandparents, all in their eighties, go on walks nearly every day. My Gramps rides the stationary bike every morning while watching the news. My Grandpap still plays golf occasionally and my Grandma plays bridge every week to keep her mind sharp.
  • My Aunt Annie does Pilates multiple times a week and my Aunt Mary goes to super-early-morning cycling class at the gym before work.
  • My friends {both in real life and the blogosphere} have inspired many healthy adoptions that are now a part of my daily routine: my yoga practice, my morning breakfast smoothies, my lunchtime salads, my nighttime meditation ritual, even trying new things like zumba!
  • My cousins inspire me to remember to have FUN exercising and moving my body, because isn’t that what it’s all about?

I feel so fortunate to have so many Health Heroes in my life who motivate me to stay true to my own goals for a healthy, happy, fulfilled life!

asbestos awareness week

A few weeks ago, I was approached by the Mesothelioma Cancer Alliance about their national awareness campaign. I learned that every year around 3,000 people are diagnosed with mesothelioma, a deadly cancer caused by exposure to asbestos. On average, they are given 10 months to live. That’s a mere 300 days. And yet, according to the MCA, asbestos is “still widely used in the U.S. It affects our water, air, and soil quality, as it does not break down or biodegrade.” The MCA works to spread awareness because mesothelioma is caused by asbestos exposure, so knowing more about asbestos and its risk factors can make a huge difference in preventing this cancer.

April 1-7 is Asbestos Awareness Week, so I wanted to share some facts that I was given by the Mesothelioma Cancer Alliance:

Scary stuff! This definitely has motivated me to investigate my own surroundings and products to make sure that asbestos is not present.

Happy TGIF, friends! It’s been a beautiful sunny week in the Bay Area, though the weather has been drier than ever — which means wildfires are a very real danger. Please send your thoughts & prayers for rain!

Here are 5 things I’m loving right now:

1. Martin Luther King, Jr. Day of Service on January 20th. I can’t think of a better way to remember Dr. King than a national day of service in his honor. I’m excited to get involved with a community service project on Monday. Here’s a wonderful link about the Day of Service with a helpful guide to find projects happening your area! Or, do an act of kindness!

2. Morning yoga. I’ve started going to a yoga class that meets every Tuesday & Thursday morning. I may not be the most talented yogi in the land {a not-so-nice instructor once told me, “You are the least flexible young person I’ve ever seen!” Ummm, thanks? At least I’m trying!} … but I always feel way energized and refreshed after yoga class. And I’m improving, little by little, day by day. I’m even contemplating adding a morning Saturday yoga class to my routine!

3. Big ol’ salads. {Which always makes me think of this Seinfeld episode!} One of my health goals for this year is to eat a salad or a green smoothie every day. My body just feels better when I feed it good fuel. Right now I can’t get enough of crunchy toppings like fresh bell pepper, celery and edamame. YUM.

4. My aunt’s two poodles, Lucy & Rocca. This week I’ve been writing at her house during the day to keep her dogs company so they don’t get too lonely. Mr. Mur-dog will always hold the key to my heart, but these two dogs are pretty dang sweet and adorable, too! {Just don’t tell him I said that.}

5. This “revamp my spirit” playlist by Heather Waxman. My current favorite playlist, guaranteed to start my day off on a great note! I especially love the first track, “Riptide” by Vance Joy.

Happy Friday, friends! And happy November! How was your Halloween? I had soooo much fun handing out candy to a ton of adorable trick-or-treaters. Lots of princesses, superheroes, and some amazing homemade costumes including a Medusa with hand-sewn snake hair! I hope your night was spooktastic and filled with more treats than tricks. 🙂

Here are five things I’m loving today:

1. Thanks to Robyn’s blog The Real-Life RD, I discovered this natural nutrition boost Vega One to add to my morning smoothies, and I’m loving it! I got the French Vanilla flavor and it’s very sweet, so I normally add just a quarter scoop to my morning smoothie. But it leaves me feeling satisfied for longer, and I love getting all kinds of plant-based nutrients and vitamins in my body first thing in the morning. It’s great way to wake up!

2. Two nights ago, I got to see the terrific writer Tom Barbash give a reading at San Jose State … I’ve been a fan of his work for a while, and I’m even more so now because he is such a warm, engaging and humble person. I am simultaneously devouring and savoring his new short story collection, Stay Up With Me. I’d highly recommend it!

3. Does anybody else watch the TV show Nashville? I got pulled into an episode the other night when I was drowsily getting ready for bed, and I’m now hooked! I guess I should have known this would be a show for me: after all, I love Nashville since it makes me think of Holly, I love country music, I love Connie Britton {Friday Night Lights!!} and I love romantic drama storylines, which the show has plenty of! Now I just need to get caught up on last season…

4. This evening I’m excited to hang out with a group of USC alumni to watch our Trojans play Oregon State … I’m all ready to cheer them on!

5. I get to see my friend Dana on Sunday! We haven’t seen each other in a few weeks and I’m so looking forward to catching up. She always puts a smile on my face. Plus, I get to meet her sweet dog Heidi, which I am looking forward to!

my favorite gluten-free baking supplies

Happy Thursday, everyone! Is it just me, or does today feel like Friday to anyone else? It’s bizarre that this week feels long because it’s actually been a short week with the holiday on Monday! Oh, well. It’s still been a good one!

As I shared a couple weeks ago, I’ve recently been trying to go gluten-free, and it actually hasn’t been nearly as difficult as I expected … I feel energized and vibrant, which could be because I’ve eliminated gluten or could simply be because I’m eating more fruit and veggies than ever! Either way, I’m loving it!

One of the things I was most concerned about in going gluten-free was that I would miss baking. You all know how I love to bake, and I was worried that eliminating regular baking flour would cause my baked goods to be … well, gross. But I needn’t have worried. Even if you aren’t gluten-free, there are some wonderful alternative flours you might want to try out just for the fun of it! Here are my current faves:

As far as baking styles go, I’m a by-the-seat-of-my-pants baker. A little bit of this, a little bit of that … I like to experiment! Typically, if a recipe calls for two cups of regular flour, I’ll add about a cup of gluten-free flour, 3/4 a cup of gluten-free oats, and 1/4 to 1/2 cup of other things!

1. Trader Joe’s Gluten-Free All Purpose Flour

This is my favorite gluten-free flour base. It’s a mix of rice flour and tapioca flour, and it is a perfect substitute for all-purpose flour! I’ve also tried Bob’s Red Mill brand of gluten-free all-purpose flour, and that kind was good also, but I like this Trader Joe’s version better.

2. Gluten-Free Rolled Oats

I love baking with oats! They make muffins and breads heartier and healthier. Plus I think they give baked goods a great texture. Just makes sure you purchase a gluten-free version of rolled oats, if gluten-free matters to you! {Sometimes wheat sneaks into things you wouldn’t expect…}

3. Almond Meal

This an easy way to slip more heart-healthy almonds into your diet! An added bonus: almond meal makes baked goods extra moist. Just be careful not to add too much, or your finished product might be a little too crumbly.

4. Ground Flaxseed

I started adding a few tablespoons of ground flaxseed into my muffin and bread batter even before I went gluten-free. Flaxseed is packed full of omega-3s and fiber. I usually just add 1/4 a cup at most, so I can’t really taste it, but if you like a rich nutty flavor you can add more! You can also sprinkle ground flaxseed over your cereal or hot oatmeal for a morning nutritional boost.

my favorite quick, healthy + gluten-free breakfasts

I’ve recently began eating a gluten-free diet — my brother found out that he is allergic to gluten and feels much better on a gluten-free diet, and since we share the same genes I thought I would give it a try, too! Breakfast was the meal I felt most stumped by: my quick go-to breakfast used to be a whole-wheat english muffin or toast with peanut butter. I haven’t yet found a gluten-free bread loaf that I love, so I went back to the drawing board.

Here are four of my new favorite healthy, gluten-free breakfasts. They are delicious when enjoyed slowly over the morning newspaper, and are also perfect for busy mornings when you need to eat something quick!

1. Oatmeal with nut butter & fruit. Make sure you use gluten-free oats. I like topping mine with blueberries, walnuts, and a spoonful of almond butter.

2. Greek yogurt + fruit, with a handful of walnuts or almonds on the side. My favorite combo lately: plain greek yogurt + a drizzle of honey + a sliced banana.

3. A smoothie made with greek yogurt and/or a spoonful of nut butter, plus spinach & chia seeds of course! Right now I am loving a combo of strawberries + mango + a sliced peach. And here is a delicious looking recipe from Danica at It’s Progression that I am planning to try out this week.

4. Homemade muffins topped with peanut butter. I try to make a batch of banana muffins or apple-cinnamon muffins {substituting a gluten-free flour blend for the wheat flour} every weekend, and then I get to enjoy them as breakfast and snacks throughout the week.

my 3 favorite ways to use sauteed spinach

Spinach is SO good for us. This superfood is high in fiber, antioxidants, cancer-fighting flavonoids, vitamin A and vitamin K — promoting healthy bones, skin, vision, brain and nerve function. {Read more here.}

I always put a handful of raw spinach into my smoothies {I promise, you can’t taste it!} and lately I’ve started sauteeing spinach and using it in many of my favorite recipes. To sautee baby spinach, simply spray a frying pan with a bit of olive oil, add minced garlic if desired, and cook the spinach for 3 to  5 minutes on medium-low heat, until the leaves are wilted.

1. Atop a veggie pasta bowl. I love to layer a bit of brown rice pasta, some roasted veggies {zucchini, bell pepper, tomatoes, yum!}, sauteed spinach, and then top the whole she-bang with tomato sauce and a sprinkle of feta cheese. NOM!

2. Wrapped up inside an enchilada. This would be the perfect way to sneak more veggies into a non-veggie-lover’s diet. I layer some sauteed spinach on top of the ground turkey mixture, pour on some sauce, wrap it up and pop it in the oven to bake.

3. In my morning scrambled eggs. One of my favorite combos of the moment is sauteed spinach, avocado, onion and chicken sausage. A great power-breakfast to get your day off on the right foot!
