Aloha! from The Big Island & Chobani Flips GIVEAWAY!

Aloha, friends!! I am typing this from a beautiful, breezy outdoor patio overlooking the pool at our vacation place in Hawaii… it is my first time to ever visit Hawaii, and I have been utterly blown away! Allyn’s grandfather has rental property on The Big Island, and when it worked out for Allyn and I to join his family for a short vacation in paradise, we jumped at the chance. June was a total workaholic month for me — between teaching summer camps for kids and keeping up my usual tutoring work, celebrating the release of Dancing With The Pen II, taking on some weekend literature classes for high school students, planning my ninth annual Summer Writing Camp, spearheading a screening of the Minimalism documentary in my hometown {seats still available if anyone is interested!} and preparing to marry the love of my life in less than two months… life has been quite a whirlwind!

Which is all to say, this vacation has come at the perfect time. Sun, sand, snorkeling… sunset dinners, hikes, lazy mornings… lots of relaxation and interesting conversation with people I love… it has been the “recharge” I needed!

An unanticipated perk of this trip is that it introduced me to Chobani Flips, a new product from my favorite yogurt company! The past month or so, I have been trying to eat yogurt every day to help keep my gut happy with probiotics, and I am a big fan of Chobani because they use real ingredients, natural sweeteners, and are always non-GMO. Aaaaaand just like that, it’s the weekend! It is a warm one around here and we are all trying to stay cool, and also soaking up some gorgeous sunshine outdoors. I get to meet up with this pretty lady in a few hours for dinner.

Here are 5 things I’m loving right now:

1. My favorite dessert of late: organic vanilla greek yogurt + fruit {raspberries, blueberries, and strawberries are my faves!} + mini chocolate chips.

2. My wonderful minister gave me a copy of this little book, which takes its title from a beautiful Robert Frost Poem, Nothing Gold Can Stay:

Nature’s first green is gold,
Her hardest hue to hold.
Her early leaf’s a flower;

Then leaf subsides to leaf.

I’ve been reading through the short essays in this book when I wake up in the morning and before I go to sleep at night, and it has been a source of comfort.

3. Last weekend I drove to Marcus Books in Oakland to attend a talk by Tavis Smiley about his new book chronicling his 20+ year friendship with Maya Angelou, My Journey With Maya. Tavis’s talk was filled with humor, wisdom, and his trademark insight. He is one of my role models! And I am savoring this book. I would definitely recommend picking up a copy — I think it would make the perfect Mother’s Day or graduation gift!

4. My friend Jess sent me this lovely ring and a nice card in the mail, out of the blue! It was really sweet and made my day. It’s an infinity ring, symbolizing the everlasting bonds of friendship. She sent them to our friendship group from college, as a way of honoring Celine.

5. This *free* April reflection worksheet courtesy of Nicole at Life Less BS. It’s the perfect way to say goodbye to April and hello to May! Nicole never fails to make me feel inspired and ready to tackle my goals and BIG dreams for my life.

fabulous friday #31 {dana’s visit to ventura!}

Happy Friday! I’m looking forward to a weekend of relaxation, writing time, cheering on my Trojans, and dinner with friends. What wonderful things are you up to?

Today I want to give you a recap of my sweet friend Dana’s visit to Ventura! We had so much fun, and the weather was gorgeous — I couldn’t resist sharing these photos with you!

Here are 5 highlights from Dana’s visit:

1. Fish & chips at the Harbor! We went to a local favorite, Andria’s {longtime readers may remember it as Gramps’s favorite, too!} We also spent some time walking around the Harbor, looking at the boats and listening to live music.

2. Going to the beach! It was a relatively calm, quiet morning — seagulls were pretty much our only company as we stretched out on the sand. After soaking up the sunshine for an hour or so, we went over to The Deck and had lunch. Their fish tacos are amazing!

3. Soaking in the sunshine at the Santa Barbara Pier. It was a gorgeous Memorial Day and after a delicious lunch we walked all along State Street and ended up at the pier.

4. We met up with Erica at Food Truck Tuesdays! I ordered an amazing gourmet grilled cheese with herbed gouda, butternut squash, cranberry compote, and walnuts on 9-grain bread. {My taste buds are already craving fall, I guess!} We had so much fun talking and laughing until the event closed down. I was so busy talking and enjoying our visit that I neglected to take a photo, whoops! Though here’s an older photo of Food Truck Tuesdays:

5. Murray was SO in love with Dana! He would come sit next to her and place one paw on her lap, like he was trying to hold her hand. We joked that he was “courting” her. I love this picture of the two of them!

Happy Friday, friends! What wonderful things are you up to today?

Here are 5 things I’m loving right now:

1. Being home with my sweet parents {who are celebrating their 32nd wedding anniversary next week!} and of course Mr. Mur-dog! He is so stinkin’ cute, even in his cone/Elizabethan collar. Poor guy should be getting it off soon, fingers crossed!

2. This quote from Carolyn Hax:

“Even those of us who learn from our mistakes will also repeat some. This business of being human is basically a jalopy ride over potholes, which is why it’s so important to ride with the best people you know, wherever possible, and to make sure you take note of any particularly beautiful scenery.”

3. I can’t get enough of strawberries with vanilla Greek yogurt. To me, this tastes exactly like strawberries with whipped cream — BUT it’s even better because it’s healthy for you! I’ve been having this for dessert all week. And since it’s actually good for you, you could even have it for breakfast! 🙂

my favorite quick, healthy + gluten-free breakfasts

I’ve recently began eating a gluten-free diet — my brother found out that he is allergic to gluten and feels much better on a gluten-free diet, and since we share the same genes I thought I would give it a try, too! Breakfast was the meal I felt most stumped by: my quick go-to breakfast used to be a whole-wheat english muffin or toast with peanut butter. I haven’t yet found a gluten-free bread loaf that I love, so I went back to the drawing board.

Here are four of my new favorite healthy, gluten-free breakfasts. They are delicious when enjoyed slowly over the morning newspaper, and are also perfect for busy mornings when you need to eat something quick!

1. Oatmeal with nut butter & fruit. Make sure you use gluten-free oats. I like topping mine with blueberries, walnuts, and a spoonful of almond butter.

2. Greek yogurt + fruit, with a handful of walnuts or almonds on the side. My favorite combo lately: plain greek yogurt + a drizzle of honey + a sliced banana.

3. A smoothie made with greek yogurt and/or a spoonful of nut butter, plus spinach & chia seeds of course! Right now I am loving a combo of strawberries + mango + a sliced peach. And here is a delicious looking recipe from Danica at It’s Progression that I am planning to try out this week.

4. Homemade muffins topped with peanut butter. I try to make a batch of banana muffins or apple-cinnamon muffins {substituting a gluten-free flour blend for the wheat flour} every weekend, and then I get to enjoy them as breakfast and snacks throughout the week.

Happy weekend everyone! Hope you are out doing something relaxing, lovely and joyful. It is a gorgeous sunny crisp fall day here in West Lafayette, and I am soaking it in! My plans for the day include lunch at Panera, doing some work there, and then going for a nice walk down by the river. I’m making orange chicken with veggies in the crock-pot for dinner tonight … I’ll let you know how it turns out!

You may remember a few weeks ago I found a recipe on the blog Stacey Snacks for peach streusel muffins … at the time I didn’t have any peaches so I adapted it to make blueberry streusel muffins. They turned out great! However, I was eager to try it with peaches as the original recipe called for, and I finally did.

The results were incredible! These just might be my favorite muffins ever. Stacey was right about the combination of the peaches and the streusel topping … heavenly!

I was a little intimidated first by the streusel topping, but believe me it is super easy to make. These muffins are also a healthy breakfast or snack {or even tasty enough for a healthy dessert!} because they are packed with peaches and use applesauce and protein-packed Greek yogurt in place of oil.

for the topping:
– 1/3 cup uncooked oatmeal
– 1/3 cup all-purpose flour
– 1/3 cup firmly packed light brown sugar
– 1 tsp ground cinnamon
– 3 tbsp unsalted butter, softened

for the muffin batter:
– 2 cups all-purpose flour
– 1/2 cup sugar {or 1/4 cup stevia/truvia}
– 1 tsp baking powder
– 1/2 teaspoon baking soda
– 2 tsp ground cinnamon
– 1/2 teaspoon salt
– 3 eggs
– 1 tbsp unsalted butter, melted
– 1 cup Greek yogurt
– 1/4 cup unsweetened applesauce
– 1 tbsp pure vanilla extract
– 2 ripe peaches, cut into chunks {I like mine with the skin on for extra nutrients, but you could certainly peel them if you prefer}

1. For the topping: In a small bowl, combine the flour, brown sugar and cinnamon. Stir in the butter, and mix until well blended. Set aside.

2. Preheat the oven to 375 degrees. Line muffin cups with paper liners or spray with nonstick spray.

3. In a medium bowl, sift together the dry ingredients, from flour to salt, and set aside.

4. In a separate bowl, whisk the eggs, butter, yogurt and vanilla.

5. Add the egg mixture to the dry mixture. Stir until just moist and blended, being careful not to overmix.

6. Fold in the peaches.

7. Scoop the batter into the prepared muffin pan until the batter comes to the top of the paper liner or pan. Sprinkle with the brown sugar streusel topping, and lightly press the topping into the muffin batter.

8. Bake for 22-25 minutes, until tops are golden brown and a knife inserted in the middle comes out clean.
