banana buckwheat autumn muffins

Happy Monday, everyone! It has been a rainy weekend here, which is wonderful because 1) we need all the rain we can get here in California! and 2) it actually feels like autumn! I love everything about autumn. The chill in the air, the scarves and boots, the fall leaves, pumpkin spice everything… it always makes me feel the best combination of cozy and energized!

These muffins are the perfect excuse to do some healthy autumn baking. They’re bursting with the flavors of the season — apple, dried cranberries, pumpkin pie spices — and are also way good for you, packed with protein and naturally sweetened with honey and coconut sugar.

I have been exploring different types of flours in my baking recently and was excited to try out buckwheat after reading about its health benefits: it is an excellent source of nutrients and fiber, is great for your cardiovascular system and helps control blood sugar. Buckwheat is actually not a cereal grain, but a fruit seed related to rhubarb and sorrel, so it is often used as a substitute for those with gluten allergies or who are sensitive to wheat. The seed is ground into a flour that is dark in color and has a strong, nutty flavor.

These muffins get sweetened up by the fruit, but they are definitely not cupcake-sweet. I love to eat them smeared with peanut butter or pumpkin butter for an extra kick of flavor! Hope you enjoy them as much as we do around here!

{recipe adapted from Martha Stewart’s sugar-free muffins}

1/2 cup buckwheat flour
1 tsp baking powder
1 tsp baking soda

1 tbsp ground flaxseed
3 tbsp water
3 eggs
1 ripe banana, mashed
1/4 cup honey
1 tsp vanilla
1 apple, finely diced
1/2 cup chopped walnuts
1/4 cup dried cranberries

1. Heat oven to 350 degrees. Line a 12-cup muffin pan with paper liners.

2. In a small bowl, combine the ground flaxseed and water; mix together and set aside.

3. In a large bowl, mix the buckwheat flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and coconut sugar.

4. In another bowl, whisk together the eggs, banana, vanilla and honey. Add the ground flaxseed-water mixture.

5. Mix the wet ingredients into the dry, then fold in apple, dried cranberries and walnuts.

6. Pour batter to the tops of lined cups. Batter will be very runny, but that is normal!

7. Bake for 30 minutes, until the muffins turn a deep chocolate brown and a toothpick comes out clean.

my trip to nyc

Happy Monday, everyone! Hard to believe we are flirting with mid-November already. Where does the time go?? I feel like an eye-blink ago was Halloween. Anyone else feel that way?

All this weekend, Paris has been on my heart. To me, Paris will always be Celine’s city, and as such it will always be a magical place. The Parisians I have met are wonderful, free-spirited, generous people. Although my heart breaks, along with so many hearts in the world, with the attacks that happened on Friday, I am choosing to give healing energy to thoughts of hope and love, instead of hatred and fear. We love you, Paris.

Before time gets too far along, I wanted to share with you a recap of my recent trip to the Big Apple to visit my brother. It was my fourth time to NYC, but my first time going as less of a tourist: not staying at a hotel, not seeing the big tourist attractions like the Statue of Liberty and the Empire State Building. My brother took me to places that were more off-the-beaten path, that I had never even heard about before, and I felt for the first time a glimpse of what it might be like to live as a true “New Yorker” as my brother is doing during this season of his life. {I am SO proud of him — he has embraced the city and his job and new friends and is simply doing fabulously!}

me and gb reunited

I was so happy to be reunited with my brother! That first night I arrived late {after navigating the bus/subway system from LaGuardia airport… I had to be brave and ask people for help, and everyone was kind and patient, even when I got my huge suitcase stuck in the subway turnstile… all in all, I was quite proud of myself, and quite relieved to make it to Manhattan safely!} Greg and I walked to the Seaport area across the street from his apartment and had a wonderful dinner at the Italian restaurant Il Brigante. I had the eggplant parm. Delicious!

The next morning, we walked to Chinatown so my brother could get his biweekly buzz haircut — he has found a place that does it for $4! Chinatown was so neat to experience because it really did feel like being in a different country, with all the signs in Chinese and people speaking Chinese and little stands along the sidewalk selling hot food and tea. I have been to Chinatown in San Francisco before, but NYC’s Chinatown felt even more immersive to me!

My brother lives in a great apartment in the financial district and his roof has an amazing view! We went up there to take in the sights. Postcard-worthy!

We met up with my dear friend Ben for literary-themed cocktails at the rooftop bar The Library. Ben had been wanting to take me to this bar ever since he discovered it, because of my profound love of books, so it was extra-special to be able to go there with him!

After drinks and a quick dinner, we went to see the Broadway play Hand to God, a dark comedy featuring a hand-puppet that had me laughing… and thinking. The actors were superb!

hand to god play

On our way home from the play, we stopped by Schmackarys for some cookies! I could not decide what to get, so Greg indulged my sweet tooth and we got a box of half-a-dozen to share over the weekend. My favorite was the s’mores. YUM.

The next day, Greg took me to The High Line Park — it used to be a railway, and has great views of the city. It is a neat feeling to be walking through trees in the middle of Manhattan! Greg and I also got a kick out of watching various kids and adults of all ages approach a water fountain/sculpture near where we sat for a break during our walk. After The High Line, we explored Chelsea Market and the lakeshore. It was chilly but beautiful!

We grabbed dinner at The Meatball Shop, a popular restaurant chain in the city, serving all sorts of both veggieballs and meatballs. I love how NYC has such specific and diverse food options!

Thee next day, I met up with Greg after he finished work — I got a tour of his awesome office and got to meet some of his super-nice coworkers! — we headed out for dinner and a VERY special dessert stop. Longtime blog readers may recall my intense love for a certain romantic comedy circa early-2000s? I saw this movie for the first time in theaters when I was in high school, and have watched it pretty much every year since then. It is my “comfort food” movie… what can I say, I just love it! You can guess what it is based on the photo below:

Serendipity!

Yep… Greg took me to SERENDIPITY! As you can tell from the above photo, I was pretty dang excited! And since it was a Monday night, we didn’t even have to wait very long for a table. Greg ordered a classic frozen hot chocolate and I went for the salted caramel frozen hot chocolate. Delicious!

frozen hot chocolate

The true magic of the night came when our waiter approached us holding an iPhone. “You are sitting at a very special table,” he said, thrusting the phone at us to show a picture from IMDB… of my two favorite characters sitting at the VERY SAME TABLE. Ahhhh! It was definitely a serendipitous moment! Greg told the waiter, “Oh, you don’t have to tell her about the movie, she knows exactly what table this is.” Haha! The waiter was kind enough to take our picture and Greg made an image for me with us and John & Sara {from the movie!}

serendipity table!!!

On Tuesday morning, I took the train from Grand Central Station to Wassic to meet up with my dear friends Janet and Lauren for lunch. These two lovelies drove two and three hours respectively to have lunch with me! It was so wonderful to see them. We do not get to see each other all that often, but when we do, everything falls back into place and it is like we just saw each other. I feel very grateful to have such special friends! We went to Harney & Sons tea shop for lunch and oh my gosh, you guys, good thing I was flying back on a plane because otherwise I would have been tempted to buy alllll the tea.

janjan laur

When I got back to the city, I had some time before Greg got off work so I made a quick stop by Central Park. It wasn’t much time to explore, but just walking around one small square at the edge of the park was lovely. Such an incredible, beautiful green space in the center of the city!

All too soon, it was Wednesday morning, and time for me to get on board a plane back home to SFO {but not before taking a silly selfie with my brother!} I miss him very much, but I am so proud of him and I love our adventures together. Already looking forward to the next one! 🙂

my trip to cleveland

Happy weekend, friends! As promised, I wanted to give you a recap of my wonderful trip to Cleveland, OH to visit my dear friend Holly. Cleveland gets some flack in pop culture, but I don’t know why — I thought it was a beautiful, vibrant city with lots to do! If any of you find yourselves in Cleveland, here are some fun things we did that were absolutely lovely.

Cleveland park

Our first morning, Holly took me to the West Side Market, which was an enormous indoor market with a farmer’s market and tons of stalls selling all varieties of food! We spent quite some time wandering around, “window-shopping” and browsing all the delicious options.

Westside market

We ended up splitting a Shepherd’s Pie and a Turkey-Swiss Cornish Pasty, plus a pumpkin cheesecake cupcake for dessert! YUM.

cupcake pumpkin cheesecake

There is quite a vibrant Irish culture in Cleveland, which was evident from the food… I snapped a photo of this cake for my dad, who loves Guinness! I am going to look up a recipe for this cake and try to make it myself one of these days! 🙂

Holly and I also spent some time browsing Penzey’s Spices, located just across the street from the West Side Market, which was my first time ever being to a Penzey’s. It smelled divine in there! I also loved picking up all the free recipes on notecards around the store. I picked up a jar of Dried Jalepeno Peppers for my sweetie, who loves everything spicy! {I, however, am quite the opposite!}

We lucked out with gorgeous weather during my visit to Cleveland. Crisp autumn perfection. Holly took me to Lake Erie, which was so much bigger than I had pictured! It reminded me of the ocean, with the waves lapping the shoreline.

Throughout Cleveland the trees were lit up with bright oranges, reds and yellows. I could not stop taking pictures! It was obscenely beautiful.

During my trip, Holly took me to these restaurants, which I loved:

I always have such a wonderful time with Holly, and it is always hard to leave. I am already looking forward to our next visit!

carrot cake coconut muffins w/chickpea flour

A couple nights ago I posted a photo on Instagram of some evening baking, and multiple people commented asking for the recipe! So of course I had to share it on here. 🙂

This recipe marks my first time ever baking with chickpea flour! I was inspired by Robyn @the real-life rd to order some, because it is packed with veggie protein, iron and fiber, and she swore it is easy to sub into baking recipes. I have to say I was quite impressed with its soft texture and the hint of sweetness it brings to these muffins. To make these gluten-free, I also used rice flour, although you could use whole wheat flour if you would like.

These muffins are moist, soft, and packed with autumn flavors. They have no sugar, just maple syrup. I love them warmed up for breakfast, smeared with peanut butter, and also for dessert! You could even slap some frosting on these bad boys and call them cupcakes.

Hope you enjoy them as much as we did around here! And I will definitely be sharing more recipes with chickpea flour in the future — I’m hooked. 🙂

{adapted from this recipe at Wallflower Girl}

– 1/2 cup rice flour {or whole wheat flour}
– 1/2 cup rolled oats
– 3/4 cup chickpea flour
– 1/2 tsp baking powder
– 1/2 tsp baking soda
– 2 tsp cinnamon
– 1 tsp pumpkin pie spice
– 1/2 cup vegetable oil or coconut oil
– 1 cup water
– 3/4 cup maple syrup
– 1/2 cup grated carrot {I used one large carrot}
– 1 cup shredded coconut
– 3/4 cup raisins
– 1/2 cup chopped walnuts

1. Preheat oven to 350 degrees. Line muffin tins with liners or spray lightly with nonstick spray.

2. In a large bowl, stir together dry ingredients: rice flour, rolled oats, chickpea flour, baking powder, baking soda, cinnamon, and pumpkin pie spice.

3. In a separate bowl, combine wet ingredients: vegetable oil/coconut oil, water, maple syrup, grated carrot, and shredded coconut.

4. Pour wet ingredients into dry ingredients and stir until combined. Batter will seem a little thin, but that is okay!

5. Add raisins and chopped walnuts.

6. Fill your muffin tins pretty much to the top. Bake 20-25 minutes, until a toothpick inserted in the center of a muffin comes out clean.

a year of living simply: week 18

Hi, friends! How is your week going so far? Mine is off to a good start! I picked my sweetie up from the airport on Sunday after his “boys weekend” in San Diego with his high school buddies. I must admit, I was relieved to see him walk down the stairs to baggage claim with no cast on his arm or crutches! {Those crazy guys do a pretty intense Olympiad of sports competitions!} It was nice visiting with him Sunday night and yesterday morning before I left for tutoring commitments. This morning, I had an excellent PT session, met with my lovely friend Trish from church, ran a few errands, stopped by the gym to lift weights, and am meeting up with my dear Dana for dinner tonight after a tutoring sesh with a new client. All in all, a pretty great day!

LOVE. HER.

It’s finally cooled down a little here in California, and yesterday was the first day that sort of felt like the beginning of autumn… overcast skies and a hint of chill in the air. I’ll take it! I love the autumn.

Please send your thoughts and prayers to the victims of the horrendous wildfires sweeping across Northern California. My heart breaks watching the news footage. Sending all good wishes that the fire is under control ASAP — and that we might get some precious, precious rain to help the efforts of the firefighters!

Moving on to our year of living simply challenge

{And if you want to catch up or refresh your memory on the previous posts in the series, click on over here for the entire list.}

year of living simply

Last week’s challenge was to examine your morning routine, and perhaps try making some changes to see if you like what happens. During the summer, I dabbled with getting up earlier in the morning {which meant going to bed earlier, as well!} to feel like I “get a jump on my day” and have some quiet time before the rest of the world awakens. I have always been a natural night owl, but I love the peace and calm of the early morning. I found that I really liked this earlier time schedule, and in general have kept my rising time earlier than it used to be: around 7 a.m. as opposed to 8 a.m. or 9 a.m. Of course, some mornings if I wake up feeling particularly tired {and I have room in my schedule} I let myself sleep in a little later. It’s important to listen to your body!

One thing I worked on this week was to stop pressing “snooze” and just GET UP. Sometime in the last couple of years, I got in the bad habit of pressing snooze multiple times each morning, and — though addictive in the moment when “just five more minutes” seemed like a dream come true — I didn’t like the tone it set for my day. I associate the “snooze” button with negative consequences: not having enough time, rushing out the door, feeling “behind” when the day has just started. Plus, I want to energetically leap into each day, excited about the projects and activities I have on the calendar.

So, this week I put a moratorium on the “snooze.” And, I learned that even when I felt a little groggy when I first turned off my alarm, once I got out of bed, washed my face, drank a glass of water, and put my contacts in, I felt energized and ready to face the day. I think I will always be one of those people who wakes up feeling a little groggy; that’s just me. It doesn’t mean I need “five more minutes” of sleep. The grogginess usually melts away within a couple minutes of getting up, before I’ve even taken my first sip of tea!

tazo pumpkin spice chai tea

When I thought about my ideal morning, I realized that I wanted a little more calm, quiet, “me” time before leaping into my day. Reading in bed for twenty minutes with my mug of tea first thing in the morning feels indulgent, like I’m on vacation — but, really, why can’t I do this every morning? Why does my routine have to be eating my bowl of oatmeal in front of my email inbox? It doesn’t. In fact, it shouldn’t. When I have a bit of quiet time to journal and read in bed first thing in the morning, I feel more centered and focused to dive into the day’s tasks.

I want to try expanding on this a little further and maybe doing ten minutes of yoga and/or meditation in the morning, as well, before I venture out into the world.

picnic view

I love misty Bay Area mornings like this.

This week’s challenge is to examine your nighttime routine. What are your habits at night, before you go to bed?

  • What time do you go to bed? Is it generally the same time every night, or is it scattered?
  • When do you start “winding down” before bed?
  • What are your “winding down” activities? Do you read? Watch T.V.? Play games on your smartphone?
  • Do you stay up later than you intend, or do you usually get to bed about the time you planned to?
  • How is your sleep quality? Do you have a hard time falling asleep? Do you wake up a lot during the night?
  • What is something that makes you feel relaxed? Is there a way you could fit that into your nighttime routine? What would that look like?
These questions are not meant to judge. There is no “right” or “wrong” answer to any of them. They are simply questions for you to reflect upon as you think about your nightly routine and what changes you might potentially make to improve, simplify, or streamline it.

Questions for the day:

  • What did you learn from examining your morning routine? Did you make any changes?
  • What is your nightly routine? What do you like about it? What {if anything} do you wish to change?

a year of living simply: week 17

Hi, everyone! Hope you had a fun, relaxing Labor Day weekend. Mine was a nice mix of working on projects, taking long walks in the sunshine, lounging with a good book, and Netflixing “Orange is the New Black” {I’m a tad late to the party and just started watching… but I can see what all the buzz is about; that show is addicting!}

It’s hard to believe it is already September. The summer flew by! Yet also, it felt long, in a good way. My summer was filled with so many experiences and big events — graduations, travel, teaching, celebrations — that looking back at the beginning of the summer seems like a long time ago. I was talking to Allyn the other day about how July 4th seems like an eternity ago, since a lot has happened in my life since then: I traveled to Chicago to meet up with Holly {+ T.Swift in concert!}; went home to have a few weeks with my family; taught my Eighth Annual Summer Writing Camp; my brother moved to NYC and started his new job; I taught two weeks of Communication Academy camps; I gave my first-ever sermon at church and launched a Young Adults Community Circle; I house-sat/dog-sat for my aunt’s family for a week; I stepped out of my comfort zone and did Improv for the first time… and, I signed with an amazing literary agent {my dream agent!} to represent my novel to publishers. All in all, it’s been a very busy and very exciting couple of months!

This photo encapsulates my summer... exhilarating, wind-swept, filled with sunshine and smiling as I just let myself go with it!

This photo encapsulates my summer: exhilarating, wind-swept, filled with sunshine and new adventures… squinting and smiling as I just let myself go with it!

However, unfortunately, my year of living simply posts went on an unintentional summer hiatus. The entire blog went on a bit of a summer hiatus. At first, I was stressed about it. I felt guilty for not posting. I made lists and tried to figure out when I could wedge in the time.

But then I realized: that was exactly the opposite of what my year of living simply is intended to be.

It’s not about shoe-horning more and more stuff — even meaningful stuff you enjoy — onto your daily to-do list.

It’s about letting yourself do less.

It’s not about rushing around and cramming every minute of your day with stuff.

It’s about letting go. Giving your days margins. Giving yourself grace.

summer grace

So, I gave myself margins and grace. During a crazy-busy season of my life, I let some things lay dormant. Including this blog. Including this year of living simply challenge.

In many ways, I feel like that in itself was my simplicity challenge this summer. Having the faith and the patience to let go, to set it down, and know that the time would come when I could pick it back up again.

And so. Here we are. Summer is drawing to a close, and autumn is upon us. I feel the whirlwind settling a little. I feel that anticipatory energy I always love in the autumn. The start of a brand-new school year {even though I am no longer in school, I still feel the energy!} A blank slate. A row of freshly sharpened pencils. Brand-new notebooks. A new schedule of classes with different teachers and people. {Literally or metaphorically!} Possibility, sparkling everywhere you look.

And I think it’s the perfect time to bring back my year of living simply challenge. I feel rejuvenated and ready to get back on schedule. Ready to refocus on simplifying my life and reflecting on what matters to me. I hope you’ll join me!

{And if you want to catch up or refresh your memory on the previous sixteen posts in the series, click on over here for the entire list.}

year of living simply

In honor of the back-to-school time of year, this week’s challenge is to examine your morning routine. What are your habits in the morning?

  • When your alarm goes off, do you push snooze, or do you leap out of bed?
  • Do you scramble around feeling rushed?
  • Do you never know what to wear, or wear the same outfits over and over?
  • Do you forget things at home?
  • Do you never have enough time?
  • Do you wake up feeling tired, or are you energized for the day?
These questions are not meant to judge. There is no “right” or “wrong” answer to any of them. They are simply questions for you to reflect upon as you think about your morning routine and what changes you might potentially make to improve, simplify, or streamline it.

fabulous friday #41

Happy Friday, everyone! It’s been a while since I’ve done a fabulous friday post… feels good to be back into more of a regular blogging schedule, after the Thanksgiving craziness! 🙂

My day so far has been a great one… restorative morning yoga class, pumpkin spice chai latte at Starbucks, phone chat with my brother, a few errands checked off my list {including the Post Office, which was much less crowded than I was anticipating! Don’t you love when that happens?} This afternoon I have a couple tutoring appointments, and then tonight I’m getting together with my beautiful-inside-and-out friend Dana for dinner. I haven’t seen her in a month and I’m so excited to catch up!

Here are 5 things I’m loving right now:

1. Raaaaaaain! We have finally been getting some rain here in California, and it is so wonderful!

rainy days

We’re singing and dancing like Gene Kelly around here 🙂 I love drizzly winter days when it feels so cozy to be snuggled up inside, sipping a mug of tea while cookies bake in the oven… which leads me to…

2. I made a holiday version of my pumpkin-spice chocolate kiss cookies! I used the same chocolate cake-mix cookie base, and then instead of a pumpkin spice Hershey’s kiss I topped them each with a candy-cane Hershey’s kiss. The classic peppermint + chocolate combo is a winner, plus they look so darn cute!

3. While we’re on the subject of holiday treats, I picked up this black-and-white drizzle kettle corn as an impulse buy at Safeway, and it’s become my go-to dessert. For fellow sweet-and-salty lovers and chocoholics out there, this is right up your alley! I love that it’s made with non-GMO corn and has no artificial flavors, colors, or preservatives; no high-fructose corn syrup; and zero cholesterol or trans fats. The grocery checker told me there is also a peanut butter & chocolate version that I am going to keep my eye out for.

4. This quote from Whitney at sometimes.always.never reflecting on the past year — I feel very similar to the way 2014 unfolded for me:

“It was a year of small, beautiful changes that probably don’t look like a ton to an outsider, but that meant a lot to me. It was a year of personal growth and risks, reflection and change. It was a year of countless little moments that added up to a whole year that turned out to be really beautiful.”

5. I brought back the chocolate advent calendar this year! Greg and I used to get these every year as kids and I have such fond memories of opening them together each morning before school. A couple weeks ago, I spotted chocolate advent calendars when I was at Trader Joe’s, and I grabbed one. {Actually, two — I got one for Allyn, too!}

advent calendar

It brings a smile to my face every morning to see what shape of Christmas chocolate I will get that day. Sometimes it’s the little things, right?

And that’s all for now. Have a delightful weekend, everyone!

Questions of the day:

  • What are you loving right now?
  • What are your plans for the weekend?
  • Do you get a chocolate advent calendar?

fabulous friday #40

Happy Friday, dear friends! I hope you have had a wonderful week and that your TGIF is running along smoothly. I must admit I don’t quite know where this morning went! Yoga class, breakfast, emails, a couple phone calls for work, and now it’s already lunch time! This afternoon I’m hoping to make some headway on a couple writing/editing projects; go to the Verizon store to get my new phone working {my old phone went on the fritz but was insured so I was able to replace it at no cost, woo hoo!}; and then I’ll be tutoring a few kids from late afternoon into the evening.

Should be a great day! Then again, as my Gramps likes to say with a wry smile, “Every day I’m above ground is a great day for me!” Which I think is a grateful attitude you don’t need to be an octogenarian to adopt. 🙂

Here are 5 things I’m loving right now:

1. The gorgeous autumn leaves setting the world on fire right now. Here’s the maple in our side yard, right outside the kitchen window. Every time I see it, my heart leaps. I love the autumn!

maple tree

2. Tazo pumpkin spice chai tea. I scooped this up on sale at Target last week and I’ve been enjoying it every morning since. Nothing like pumpkiny, cinnamony goodness to get my day started off right! {Or perk me up in the middle of a long writing/work sesh!}

tazo pumpkin spice chai tea

Also, this is probably just showing my nerdiness, but does anyone else amuse themselves by reading the writing on food/drink boxes? The story on the Tazo pumpkin spice chai tea box had me smiling: “Cinnamon and cardamom sit by a crackling clove fire, knitting elegant black-tea scarves. Ginger waltzes in with a just-baked pumpkin pie, and the room turns aromatic with sweet spice.” Mmmm. Don’t you just want to curl up and get cozy after reading those words?

3. Not to go TOO pumpkin-crazy {my brother would say, “Too late!” haha} but I was excited to find these pumpkin spice Hershey’s kisses in the discounted Halloween candy section when I got my flu shot earlier this week. Has anyone else tried these babies? I had never even heard of them before, but I was intrigued so I got them.

pumpkin spice hershey kisses

I will say that, as a chocolate-lover, I wish there was some chocolate swirled throughout along with the pumpkin, but these are still a delicious {and dangerously poppable} treat! This weekend I’m planning to bake cookies featuring these pumpkin spice Hershey’s kisses, inspired by my aunt Elaine’s peanut butter blossoms. If they turn out well, I’ll share the recipe!

4. I’m serving as Worship Associate at my church this Sunday, and the sermon’s theme is transience and permanence. While writing my Call to Worship, I came across this beautiful quote from Ovid’s Metamorphoses:

As wave is driven by wave
And each, pursued, pursues the wave ahead,
So time flies on and follows, flies, and follows,
Always, forever and new. What was before
Is left behind; what never was is now;
And every passing moment is renewed.

pumpkin spice cupcakes w/cream-cheese frosting

Well, the Giants got a smack-down last night. It was pretty pitiful.

But Dana and I still had a fun time chowing on deep-dish pizza, catching up {we ended up talking more than watching the game, since the game was so depressing} and playing with her adorable new kittens, Sadie and Hunter! They are so inquisitive, full of energy, and TINY! Here’s a photo I snapped of Sadie cuddled up on Dana’s lap.

sadie

So soft and fluffy! I couldn’t stop petting her.

One good thing about the evening was that at least we had yummy baked goods to help ease our sorrows!

baseball cupcakes

These cupcakes might not have been very lucky, but they sure were delicious! And super easy to make. I got some requests on Instagram for the recipe, so I thought I would share it on here!

My secret weapon: Trader Joe’s pumpkin bread mix. This stuff is amazing! Hands-down my favorite baking mix ever. And it’s seasonal, so stock up while you can!

trader joes pumpkin bread

I’m sure you could use a different pumpkin spice baking mix in a pinch, or make pumpkin muffins from scratch — here’s a recipe I love from Snixy Kitchen.

pumpkin spice cupcakes w/cream-cheese frosting

– 1 package Trader Joe’s pumpkin bread mix
– 2 eggs
– 1 cup water
– 1/2 cup vegetable oil
– 4 oz cream cheese, softened {I used 1/3 reduced-fat kind}
– 1/4 cup butter, softened
– 1 & 1/2 cups powdered sugar

1. Preheat oven to 400 degrees F.

2. In a large bowl, combine baking mix, eggs, vegetable oil and water. Mix until well combined.

3. Pour batter into a muffin tin lined with paper cups. In order to make these rounded baseball cupcakes, I filled the cups all the way to the top with batter. If you would like flatter cupcakes, fill the cups 3/4 of the way full.

4. Bake for 18-22 minutes, until a toothpick inserted in the middle comes out clean. Remove cupcakes from the muffin tin and set on a rack to cool.

5. While cupcakes are cooling, make the frosting: using a mixer, beat together the softened cream cheese and softened butter until smooth and well-combined.

6. Slowly add the powdered sugar, combing well after each addition. I used approximately 1.5 cups, but you can increase or reduce the amount depending on desired sweetness.

7. If frosting is too thick, you might need to add a little heavy cream or milk to thin it out, but I love my frosting thick, so I didn’t add any.

8. When cupcakes are completely cool, use a knife to generously spread them with frosting. To make baseballs, use a red gel frosting to make dotted lines in two half-moons, like the threading on a baseball.

ENJOY!

In the meantime, I’ve got my Giants spirit going all day today! Game 7! Let’s go, San Francisco! 🙂

fabulous friday #38

Happy Friday! You know what this means, right? One week till Halloween!! Do you have any ghoul-tastic plans yet? {Haha, someone is obviously a liiittle too hyped up on caffeine right now… sorry!} Earl Grey before yoga + post-yoga endorphins + pumpkin chai latte from Starbucks after yoga = this version of me you are hearing from right now 🙂

Moving right along… this weekend, Allyn and I are going pumpkin-patching {don’t know if that’s actually a verb, but it is now} and I’m planning to hit up a craft store for a couple last-minute touches for my Halloween costume. If you’re looking for an easy, fun Halloween costume but don’t have any ideas, feel free to check out this post with some costumes that have worked well for me in the past!

Here are 5 things I’m loving right now:

1. This beautiful autumn bouquet from ProFlowers that arrived on my doorstep a couple days ago from my incredibly sweet and thoughtful dad! He sent them just because he was thinking of me and wanted to send some sunshine my way. How amazing is that? I am the luckiest daughter on the planet. I miss you, Daddy!

2. My favorite dessert of late: peanut butter toast topped with mini chocolate chips!

3. Every time this song comes on the radio I do a little happy dance: “Riptide” by Vance Joy.

4. This heart-wrenchingly beautiful and wise short essay my brother wrote for HuffPost called The Girl Effect and My Grandmother. Read it, and believe me — you’ll be glad you did! Here’s a teaser:

“The agony of these missing parts applies not only to our deceased loved ones — it applies to when we allow fear to dampen courage; ignorance to imprison knowledge; and hatred to overwhelm love.”

5. My grandma’s soup. Her chicken tortilla soup just might be my favorite, but she also makes a mean split pea and curried lentil + barley. I’ll try to get the recipes for those latter two up on here soon!

Oh yeah, and one more thing that might explain why I’m feeling so dang happy and excited … I FINISHED MY NOVEL!!!
