a tour of our apartment

Hello, friends, and happy Monday! Hope your day is off to a marvelous start. I am heading off soon to my favorite yoga class, but before I go I wanted to share with you some belated photos of the new apartment I moved into a couple months ago with my sweetie! We have finally gotten everything unpacked and all of our artwork hung up on the walls.

{Real talk: I snapped some photos right before we had Allyn’s mom and sister over for dinner, so this is a bit more tidy than it typically is! But we are trying to keep things relatively neat & clutter-free!}

If you were coming over for a visit, here is where you’d begin…

… you’d pull up to the outside of our apartment complex and park in one of the tree-shaded spots. Then we’d come out to greet you and lead you inside!

When you walk into our apartment, there is a short little hallway with a coatrack my sweetheart so handily installed, a hall closet and a linen closet, and our little bathroom. Over to your right is our kitchen…

One thing both Allyn and I really liked about this apartment from the first moment we saw it is the open layout. It is so nice to be able to prep dinner in the kitchen while still talking and visiting with people out in the living room area. And I think the openness makes our little one-bedroom apartment seem a bit bigger, too!

Our living room area leads out to a big balcony {which currently holds not much except for a few empty pots waiting for plants and Allyn’s bike.} When the weather gets warmer and spring fully arrives, I’m excited to get planting a little herb garden out there and maybe setting up an outdoor table and chairs for some al fresco dining!

The only room we have left to show you on our tour of our new apartment is the bedroom… as you can see, I snapped this photo when my sweetheart was working {his desk is there in the corner}… hi, honey!

The thing I love most about our apartment is that it feels like us. It is not the fanciest or biggest place, but it is homey and cozy and filled with reminders of the people we love, and our love for each other. Speaking of which, I haven’t even shared one of my favorite decor items…

… our LOVE sign! Haha, I know it is corny, but I just love this sign so much. I found it on sale at Michael’s after Christmas and scooped it up, and then my sweetheart kindly installed this floating shelf so it can be displayed in all its lit-up glory. It always makes me smile!

And I would be remiss saying goodbye without letting our beautiful new fern plant say hello. His name is San Fern-ando and he was a housewarming gift from Allyn’s sister, Allyson. Did you know that Boston ferns are wonderful natural air purifiers? Plus they are so cheerful and green and easy to care for. We love ours!

marvelous monday: year of kindness challenge

In a post a few weeks ago I shared that I’ve been thinking a lot lately about how to be a better person and give more to the world around me. Give more, do more, brighten more, serve more. I want to be grateful and I want to be joyful, and in my experiences the best way to do so is to give gratefully and joyfully to others. Case in point: one of my favorite experiences over this past holiday season was taking handmade cards and cookies to the local nursing home. In this next year–and beyond, for the years to come– I want to work on stepping outside myself {my petty grievances, my small problems, my unhelpful worries} and focus on the people and neighbors and global community around me.

Inspiration clicked into action when I came across this amazing post by blogger Becka about her birthday tradition of doing a random act of kindness for every year she has been alive. {I also found a similar and very neat Facebook community, The Birthday Project!} Reading through her deeds and looking at all the smiling photos, I felt energized and filled with hope. I immediately knew I wanted to do the same thing for my birthday this year — and then I thought, my birthday isn’t until May. I don’t want to wait that long! Why wait?

Hence, I present to you my Year of Kindness challenge.

what I wore to see “the nutcracker”

Happy Monday, everyone! It is a marvelous Monday for me because I am back home soaking up time with my family! When I am with them, I just feel so joyful and comforted. I love my family!

Yesterday afternoon my mom, Mike and I went to see a local ballet production of “The Nutcracker.” It is a tradition for my mom and me to see it together every year, and it was really nice to have Mike come along this year!

The weather in Ventura has been beautiful and sunny — a welcome relief from the cold weather in Indiana — so I decided to take advantage of this and wear a skirt, tights, a short-sleeved blouse and light sweater.

You can’t quite see my shoes in this picture, but they are the same ones I wore to Thanksgiving dinner.

The ballet was terrific as always. Such a talented group of dancers! They amaze me with their poise and grace. And I love the music! It really gets me into the holiday spirit.

Afterwards, we came home and I made healthy turkey enchiladas for dinner. My Gramps joined us, and it was so wonderful to see him!

marvelous monday: apple-banana oatmeal muffins

You know how much I love muffins, especially healthy, hearty and delicious muffins that will get your day off to a marvelous start! Here’s another recipe that I found and tweaked slightly to make it more nutritious. I will be enjoying for breakfast all week and I hope you like it, too!

apple-banana oatmeal muffins
{recipe adapted from this one at Rock Recipes}

– 1 & 1/2 cups oatmeal
– 1 cup  whole wheat flour
– 1 tsp baking powder
– 1 tsp baking soda
– 1/2 tsp salt
– 2 tsp cinnamon
– 1 tsp nutmeg
– 2 eggs
– 1 tsp vanilla extract
– 2/3 cup milk {I used soy milk, but any kind will do!}
– 1/4 cup applesauce {I used no-sugar-added}
– 1/4 cup brown sugar
– 1 ripe banana, mashed

1. Preheat oven to 350 degrees. Line a muffin tin with paper wrappers.

2. Peel the banana and mash it until the biggest lumps are out.

3. In a large bowl, combine the sugar, eggs, applesauce, milk and vanilla. Set aside.

4. In a different bowl, mix together oatmeal, flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

5. Slowly add dry ingredients to wet ingredients, mixing well.

6. Add in the banana. If batter is too thick, add more applesauce.

7. Spoon batter into muffin tins until they are about 3/4 of the way full.

8. Bake for 12-15 minutes, until a fork inserted in the center comes out clean.

These muffins are SO good served warm! Inspired by Julie at the blog Peanut Butter Fingers, I topped mine with some dark chocolate peanut butter for a healthy breakfast that tasted decadent. It’s the perfect way to get an ordinary day off to a special start!

marvelous monday: grocery store surprises

Happy Monday, everyone! I hope your Thanksgiving weekend wrapped up well and that you made it home safe if you were celebrating out of town. I am happy to report that Mike and I arrived back safely in Lafayette last night, with enough time to hit up the grocery store, do a bit of work, watch an episode of Arrested Development, put all of our clean laundry away {thanks, Mike’s mom, for letting us do laundry in your lovely machine instead of having to trek to the quarter-eating machines in our apartment complex!} and even put up a few Christmas decorations. The wreath is on our door and my mini tree is on display!

Sometimes it’s the smallest things that add a big smile to your day. I love surprises, and one of my favorite things is to discover a new treat when I’m browsing the grocery store. Look what I found last night:

PUMPKIN SPICE ENGLISH MUFFINS!

I know we are transitioning from autumn into winter, but I remain pumpkin-obsessed. And I’m okay with that!

I enjoyed every bite of a pumpkin spice English muffin for breakfast, half smeared with chocolate peanut butter and the other half with regular peanut butter. I can’t decide which topping I like better. I also want to try cream cheese. I might have to eat another one for a snack later to do further research! 😉

marvelous monday: little oases of rest in a hectic, busy season

Happy Monday, everyone! It’s that time of year … the holidays are upon us. All weekend I’ve been seeing not just Thanksgiving decorations in stores, but Christmas decorations, too! Some houses in my neighborhood have even put up lights and lawn ornaments. {Which I’m admittedly not used to, coming from California, but it does make sense here in Indiana where you want to get the lights up before the first snow hits!} It seems like Christmas season sets upon us earlier and earlier every year … which isn’t necessarily a bad thing for me, a girl who starts playing Pandora Holiday stations in October. I love the warmth and comfort of the holiday season!

Still, the holidays bring with them a lot of busyness — gifts to buy, special meals to cook, cards to send, relatives in town, parties to attend, and just a general hectic pace of life that can be overwhelming. Coupled with the approaching end-of-semester obligations and deadlines: final papers and projects to grade, class presentations, meetings — and for me this year, a completed rough draft of my thesis to turn in — and life can quickly feel out-of-control crazy-busy!

I’ve started doing a brief stretch and deep-breathing routine each morning to get my day off on the right foot, which I’ll share with you later this week. But something else that has helped me keep my sanity and approach the holiday season with a grateful heart {as it is meant to be celebrated, after all!} is to take little breaks throughout the day to slow down, take a breath, and reward myself for the work I have gotten done. Even just ten or fifteen minutes away from my computer or pile of dirty dishes can be enough to clear my head and make me feel worlds happier and more refreshed. Here are some of my “oases”:

  • making a phone call to my friends or family
  • reading a chapter of a good book or a story from a magazine
  • taking a power nap
  • going for a brisk walk around the neighborhood
  • daydreaming with a cup of tea

marvelous monday: pumpkin week!

Happy Monday, everyone! How was your weekend? I had one of my favorite types of weekend: cozy at home, laid-back, while also productive. {Or, as my brother calls it, “tcb-time: taking care of business!”} I am taking the GRE Subject Exam in literature next weekend and spent a good chunk of time studying for the test using a study guide I got from the Princeton Review, which is amazingly helpful and has actually been cracking me up quite a bit with the authors’ witty jabs and digs at the test. {Mike probably thinks I am going crazy from too much studying when he looks over and sees me giggling over my test book.} If you or someone you know is studying for the GRE or a GRE Subject Exam, I’d highly recommend their study guides!

Another reason I am feeling so jazzed this morning: my brother is coming to visit on Thursday! He’s staying for a long weekend and I am SO excited to see him. He is one of the most incredible people I’ve ever met and has been my best friend since he was born and I was two and a half years old. 🙂 I feel really blessed that we are so close and that he still wants to spend time with his big sister. I am going to be on pins-and-needles driving to the airport after class on Thursday afternoon!

As we transition from October into November, I had a realization: Halloween might be over, but I am *SO* not done with pumpkin yet! I feel like I haven’t even begun to take advantage of this marvelous squash in my autumn cooking. So, this week on the blog, I bring to you Pumpkin Week! Every day I’ll post a new pumpkin recipe, spanning all meals of the day. I’m hoping this week will motivate me to try all these pumpkin recipes I’ve stored up {like this amazing list from Two Peas & Their Pod} and might also inspire you to try some new recipes yourself!

Today we start with breakfast. I was inspired by Julie at Peanut Butter Fingers to work some pumpkin goodness into my morning batch of oats. It was easy and delicious — like having a healthy version of pumpkin pie to start the day off right! Plus, I love oatmeal on cold winter days. It warms my belly and just gets me into a happy mood.

pumpkin spice oatmeal

– 1/2 cup oats
– 1/3 cup milk {I like vanilla rice milk, but soy milk, almond milk, or just plain old dairy milk would all work}
– 1/4 cup pumpkin
– 1 tsp pumpkin pie spice
– 1 tsp cinnamon

Combine all ingredients in a microwave-safe bowl and stir together. Microwave for 2-3 minutes {depending on your microwave’s power} until desired consistency. I like my oatmeal pretty thick; my mom loves hers watery. It’s a preference thing!

Enjoy warm. Add more cinnamon or pumpkin pie spice as desired. YUM!

marvelous monday: making the most of long car rides

Hi everyone! Hope you had a nice weekend! As I mentioned on Saturday, Mike and I spent the weekend visiting his family, who live in the Chicago suburbs, about a 2.5 hour drive away from us. I miss my family — it is difficult living so far away from them! — but Mike’s family is warm and welcoming and I always love seeing them.

It was a fun weekend! Home cooking, lots of laughter and long conversation, and a visit to the pumpkin patch! Yesterday was a beautiful autumn day in Illinois and we took advantage of it!

If there is one thing I dislike about visiting Mike’s family, it is the long car ride there and back … I am not the biggest car person and five hours in two days feels long to me! I get carsick easily and can’t read or write in the car. I am someone who hates feeling unproductive and I get antsy sitting still in a confined space for so long. But it is obviously worth the drive to get to see Mike’s family, and also I’ve found that by shifting my mindset and implementing some easy car-ride strategies, it has actually become time I look forward to and enjoy! Here are some tips that work for me that I’m hoping might make your next long car ride or even your daily commute more enjoyable:

  • If you have company, savor it! Take the opportunity to have some nice uninterrupted conversations. I love the long, wandering conversations Mike and I have during our car trips together — serious, silly, deep, insightful. It’s quality time we get to spend together, just the two of us, talking. It reminds me of when we first started dating and spent so much time talking-talking-talking, soaking up each other’s stories.
  • Driving solo? Why not take the time to call up a friend or family member for a catch-up chat? {Of course, make sure to use a hands-free headset and drive safe!}
  • Listen to a comedy album. My current fave: the insanely witty Demetri Martin! {You can check out his new album here.} The drive goes by so fast when you are cracking up the whole way there!
  • Listen to an audiobook. I got this idea from my dad, who often runs to audiobooks. {He’s made his way through quite some impressive tomes this way, such as East of Eden and Huckleberry Finn!} Audible.com is a great resource for downloading audiobooks. Or go the free route and check out CDs from the library! When I drove cross-country with my mom to move from California to Indiana for grad school, this is what we did. The CDs are admittedly a little clunkier than your iPod, but they still do the trick.
  • Scan the radio for new-to-you stations. Mike and I found a station that plays Irish-inspired music, which we both love. It felt like a special treat to listen to songs we’d never heard before, and I was scribbling artists’ names down in my notebook to look up later.
  • If you’re not the one driving, spend a little time being productive: pick up any trash that’s found its way onto the floor or between the seats, write checks to pay some bills, etc. One car trip, I organized Mike’s glove box. {Which I will share in a later post!}
  • Do something crafty. I have found long car rides to be an ideal time to knit! I am halfway through a new scarf for Mike right now, thanks to car-ride knitting time.
  • Gaze out the window and daydream. Sometimes we all need some time to reflect and let our minds wander. Tap into your imagination and see where your thoughts take you!

marvelous monday: staying positive when you’re sick

Hi everyone! I feel like it’s been for…ev…er since I’ve posted. I’ve missed you! As you can tell from the title of this post, I’ve been sick with a nasty cold. Sniffles, coughing, congested, feverish, and soooo tired. You know that weary-bones, sandpaper-eyes tiredness you get when you’re sick? Yep, that’s me.

It can be hard to stay positive when your body is fighting a cold. You’re sick and tired and all you want to do is crawl back into bed and sleep the day away! But it isn’t always possible when Monday rolls around and work and obligations beckon. So, in keeping with the “marvelous monday” theme, I woke up this morning and tried to keep my thoughts on the upside. Here are some things that help keep a smile on my face even when I’m sick:

  • eating breakfast in my cozy Purdue Snuggie that my parents got for me when I decided to come to Purdue for grad school. So warm, and so functional!

  • warm green tea with honey … perfect natural throat soother.
  • snuggling up with a good book {right now I’m reading My Name is Memory by Ann Brashares — a unique, creative romantic read from the author of the Sisterhood of the Traveling Pants series}
  • the beautiful autumn leaves outside my window and on my drive to school.

  • sweet phone calls and texts from my parents and brother checking up on me to see how I’m feeling
  • wonderful students who seemed to sense that I was feeling under the weather and were extra well-behaved and participatory in class discussions today.
  • a reminder that I am so fortunate to normally be feeling 100% healthy and energetic, and I need to be grateful for my body and take care of it! As a naturally go-go-go 24/7 type of person, relaxation can be a challenge for me. Sometimes being sick in bed with a cold is the reminder I need to slow down, rest, and take care of myself by making sure I spend some time in relaxation mode, even when I get back to feeling healthy.

marvelous monday & happy october! baked cinnamon-sugar donut holes

There has been a briskness in the air lately that feels just. so. autumn! It’s lovely. It makes me want to curl up under a cozy blanket with a cup of tea and a good book. {If you’re looking for a good book, I’ve been devouring Elizabeth Berg’s novels lately … I fell in love with her novels Durable Goods and Joy School back in high school, and she is an author I can always return to and feel like, YES, she gets it — this is why I want to be a writer, this is what I want my books to do for people! I nearly always have at least one good, full-hearted cry while reading her books, and I always feel sad to finish them because I don’t want to leave her characters. I’m reading Open House right now and it is wonderful!}

But, yes, back to autumn … I was thrilled when Maria at Two Peas & Their Pod put together this fantastic list of 50 pumpkin recipes! I found myself checking off every one: yes, I want to make that; ooh, that looks delicious; yes, that one, too! Like a kid in a toy store a week before Christmas: I want them all! 🙂

One of the recipes that immediately caught my attention was baked donut-holes. I’m always looking for a way to health-i-fy things. Hmmm, homemade baked donut holes? Why not give it a whirl?

I am SO glad I did! They are pretty much mini-muffins, but roll them in cinnamon-sugar and they do taste like donut holes. These are pumpkiny, cinnamon-sugary, and perfect for autumn. Make them for breakfast and eat them warm from the oven with a big glass of milk!

ingredients:

For the Donuts:
1 & 3/4 cups all-purpose flour
1 tsp baking powder

1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1/4 tsp ground cloves
1/3 cup canola oil
1/2 cup light brown sugar
1 large egg
1 tsp vanilla extract
3/4 cup canned plain pumpkin {not pumpkin pie filling}
1/2 cup skim milk

For the Coating:
4 tsp unsalted butter, melted
2/3 cup granulated sugar
2 tbsp cinnamon

1. Preheat oven to 350 degrees. Spray a mini muffin tin with baking spray and set aside.

2. In a medium bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves. In a separate, large bowl whisk together oil, brown sugar, egg, vanilla, pumpkin and milk until smooth. Add dry ingredients to wet ingredients and mix until just combined.

3. Divide batter evenly among muffin cups.

4. Bake for 10-12 minutes or until a toothpick comes out clean.

5. While the muffins bake, melt butter in one bowl and combine granulated sugar and cinnamon in another bowl.

6. Remove muffins from oven and cool for 2 minutes. Dip each muffin in melted butter, then roll in cinnamon sugar to coat. Serve muffins warm or at room temperature.

YUM. And easy! And {for a donut} relatively healthy, too! Hard to beat that. 🙂
