Hi, friends! Today is my 26th birthday!

I’m planning to celebrate today by taking flowers to the local nursing home, paying for someone else’s coffee during a chai latte date with my friend Erica, picking up litter during a run at the park, leaving some kind notes in public places, and visiting the preemies at my local hospital {I was a preemie myself, born three months prematurely, and it is a birthday tradition to visit the parents of preemies in the NICU.} And of course I’m looking forward to spending time with my friends and family, eating yummy food, baking something delicious, and curling up with a good book or one of my favorite chick flicks!

Thank you for celebrating with me! I have a good feeling that it’s going to be one of my most special birthdays yet! 🙂

Today is my dear daddy’s birthday! I feel so grateful that I get to be home to celebrate with him! My dad is a truly amazing person. He is my friend and role model, my biggest fan and supporter, and one of the most genuinely kind and caring people I have ever met. He is also hilariously witty, goofy, and fun! I love every minute I get to spend with my dad. I hope he has a fantastic birthday today! I love you, Dad!

On this Memorial Day, I also wanted to take a moment to remember and say thank you to all the brave, selfless men and women who have served our country. Words cannot express the gratitude I feel for your sacrifice and service — not only today, but every day!

We read this poem in church yesterday, and it really struck a chord with me, so I wanted to share it here:

Two Sides of War (All Wars)

saturday upsides: special delivery to the nursing home

Happy Saturday, everyone! So we all survived the end of the world … hooray! There’s an upside right there. 😉

Another upside: today is my brother’s 23rd birthday! Happy birthday, Greg!!

We are going out to brunch, per our special sibling tradition, and we’ll be going out to dinner as a family. I’m excited to celebrate the birthday of my amazing brother! My first-ever memory is when he was born. I was two-and-a-half years old and I just remember standing in the living room of our old house, telling my mom to “Call Daddy, call Daddy!” My dad was at work and my mom was home with what she thought was the flu {it was two weeks before her expected due date} when her water broke … my dad rushed home and we just barely made it to the hospital in time! My family always jokes that I almost delivered my brother that day!

My final upside for this lovely Saturday is based on the idea “Do good, feel good.” There’s nothing like those warm-fuzzies you get when you feel like you did something nice for someone else — I find it especially powerful during the holiday season. It means so much to feel like I could make someone’s holiday a little brighter!

I’ve been thinking a lot lately of my friend Jewell, who passed away two years ago in February. She was an incredibly sweet and compassionate person and I used to visit her at the local nursing home, where we shared many meals and long conversations. Here we are about a year before she died:

I used to enjoy making Jewell homemade Christmas gifts and cards, and last Christmas {the first once since her death} I really missed her. This year, I had an idea: I could still give a gift to Jewell by doing something kind for others in her memory.

So I whipped up a batch of sweet treats {my butterscotch pudding cookies & holiday white chocolate pretzels!} and spent an hour making homemade cards. I used crayons, stamps, stickers, and markers to make my own designs, and I also “upcycled” some Christmas cards we’d received in previous years by cutting off the front picture and gluing it to a new piece of cardstock to make a new card.

I made sixteen cards in total. Then I packed up some treats on a plate, gathered all my cards together, and headed out to the nursing home for a Yuletide delivery!

I could feel Jewell’s warm spirit with me as I delivered the cards and cookies to the nursing home residents. They were so happy and waved and hugged me and said, “Thank you!” and “Merry Christmas!” I hope Jewell was looking down and smiling.

Today is my friend Holly’s 25th birthday! Happy birthday, Holly! ❤ We met our freshman year of college at USC where we lived in the same dorm and quickly bonded over our shared love of Sarah Dessen books, Nora Ephron movies, cheesey rice cakes, giggling, baking, browsing Target, taking long walks {especially in the autumn with hot apple cider from Starbucks!} and listening to Taylor Swift albums on repeat. Holly is one of those people who makes others feel instantly at ease with her warmth and compassion. I admire her for a zillion reasons: her genuine kindness, brave spirit, intelligence, creativity, insightful take on any situation. She is someone I can always call for advice and she will listen thoughtfully and help me come up with solutions when it seemed like there were none. And she is always someone I can count on to make me laugh and find the joy in the everyday moments of life!

Holly is living in Nashville, going to divinity school at Vanderbilt, and I’m bummed I couldn’t celebrate her birthday with her in person. We lived together for our four years of college, but since we graduated our friendship has been “long distance.” I miss her! But we have a little birthday ritual that helps us feel like we get to celebrate together even though we live far apart. It started when Holly baked me a cake on my birthday a couple years ago and sent me a picture. It was such a sweet gesture and I loved thinking of her enjoying some birthday cake on my behalf! We’ve continued baking birthday cakes for each other even though we aren’t together to share them. {I’m hoping one day soon, we will be!}

This year I changed things up a little bit and made Holly some birthday brownies instead of a cake. I used to make brownies all the time in college and I have many fond memories of Friday nights in, eating brownies and watching Friends marathons.

I just used a box mix for these brownies {Duncan Hines Dark Chocolate} but I substituted the oil for applesauce to make them a little healthier and I also mixed in some white chocolate chips for extra chocolate goodness.

And because what goes better with chocolate than strawberries… I sliced up some strawberries and put them on top! Delicious.

carrot cake with coconut cream-cheese frosting

I don’t know about you, but I loooooove cream-cheese frosting. I had never attempted to make some myself {I’ll admit it: I was intimidated} … whenever I made a cake I always chickened out and opted for the store-bought kind. But whenever I got a piece of red velvet cake or carrot cake from a bakery or restaurant, and the cream-cheese frosting was obviously homemade, it always tasted a million times better.

So, for Mike’s birthday, when I asked him what kind of cake he wanted me to make, he requested carrot cake … with cream-cheese frosting, of course! And I knew I had to try making the good homemade frosting for my sweetie.

I am SO glad I did! It was way easier than I expected, and sooooo delicious. This is now my go-to frosting for any cakes, cookies, cupcakes — you name it, I’ll frost it with coconut cream-cheese goodness.

Here is the recipe for both the carrot cake and the frosting. The carrot cake is relatively healthy as far as cake goes: no oil or butter; egg whites, applesauce, carrots. The frosting is not healthy in the least, but it is worth it!

cake:
– 6 egg whites
– 3/4 cup sugar
– 1 cup applesauce
– 1/2 cup skim milk
– 2 tsp vanilla extract
– 1/2 tsp ground cloves
– 1 tsp ground nutmeg
– 2 tbsp cinnamon
– 2 tsp baking soda
– 2 cups flour
– 2 cups shredded carrots
– 8 oz can crushed pineapple with juice
– 1/2 cup raisins {though I left them out because I don’t like raisins}
– 1/2 cup chopped walnuts {if desired}

frosting:
– 4 ounces cream cheese, softened
– 1/4 cup unsalted butter, softened
– 2 cups confectioners’ sugar
– 1 tablespoon heavy cream
– 1/4 teaspoon salt
– 1/2 teaspoon coconut flavoring {optional}
– 1 teaspoon vanilla extract
– 1/4 cup sweetened shredded coconut

directions:

1. Preheat oven to 350 degrees. Lightly grease a baking pan with cooking spray.

2. In a large mixing bowl, beat egg whites. Slowly beat in sugar, then applesauce, skim milk, and vanilla. Stir in cloves, nutmeg, cinnamon, baking soda, and flour.

3. Stir in, one ingredient at a time, pineapple (with juice), carrots, walnuts, and raisins.

4. Pour into the prepared pan. Bake for 35 – 40 minutes. Your cake is done when a fork inserted in center comes out clean.

5. While your cake cools, make the frosting: Beat the cream cheese and butter in a mixer bowl until light and fluffy. Gradually add the confectioners’ sugar, one cup at a time, alternating with heavy cream. Beat in the salt, coconut flavoring, and vanilla extract. Continue beating until mixture is smooth and spreadable. Add additional confectioners’ sugar if necessary to thicken the frosting, or more cream to thin. Stir in the coconut.

6. Once the cake has cooled, spread the frosting evenly over it with a knife or spatula. If you can bear the wait, pop the frosted cake in the fridge for half an hour or so to give the frosting time to set. I think this cake tastes even better the next day, after spending a night in the fridge!

Upon taking his first bite, Mike declared:

“BEST. CARROT. CAKE. EVER.”
