marvelous monday: grocery store surprises

Happy Monday, everyone! I hope your Thanksgiving weekend wrapped up well and that you made it home safe if you were celebrating out of town. I am happy to report that Mike and I arrived back safely in Lafayette last night, with enough time to hit up the grocery store, do a bit of work, watch an episode of Arrested Development, put all of our clean laundry away {thanks, Mike’s mom, for letting us do laundry in your lovely machine instead of having to trek to the quarter-eating machines in our apartment complex!} and even put up a few Christmas decorations. The wreath is on our door and my mini tree is on display!

Sometimes it’s the smallest things that add a big smile to your day. I love surprises, and one of my favorite things is to discover a new treat when I’m browsing the grocery store. Look what I found last night:

PUMPKIN SPICE ENGLISH MUFFINS!

I know we are transitioning from autumn into winter, but I remain pumpkin-obsessed. And I’m okay with that!

I enjoyed every bite of a pumpkin spice English muffin for breakfast, half smeared with chocolate peanut butter and the other half with regular peanut butter. I can’t decide which topping I like better. I also want to try cream cheese. I might have to eat another one for a snack later to do further research! 😉

happy halloween! :)

Hi everyone! Hope you are having a spook-tacular Halloween today! Halloween is Mike’s favorite holiday so we have been celebrating all week month long with pumpkin decorations, listening to Halloween Pandora stations, watching ghost-hunting TV shows and scary movies {that I try not to pay too close of attention to … I am a total wuss when it comes to creepy/scary things!} and of course lots and lots of pumpkin-inspired food. {I will be sharing some of my favorite pumpkin recipes next week for a special Pumpkin Week on this blog — stay tuned!}

Do you like my ghost design?

My Halloween started off on a wonderful note last night when I came home to a package on my doorstep … and when I opened it up, I found the most beautiful bouquet of autumn flowers that my dad had sent to me for Halloween! It was such a sweet surprise! My dad always makes me feel so special and loved. I am a very lucky daughter. Now I get a huge smile on my face every time I look across the living room and see them on the table, brightening up the room!

Today I celebrated by making Halloween-themed cupcakes that I took in as treats for my freshmen students. {As I shared this summer, I tend to grow quite fond of my students and have a tendency of spoiling them with homemade baked goods.}

The best part about these cupcakes is the homemade chocolate frosting. I found the recipe on AllRecipes.com and tweaked it a little bit to use less butter but still taste rich and creamy. This frosting is a guaranteed way to make a box-mix cupcake taste gourmet and super special! These cupcakes could be decorated for any holiday or special occasion. I chose to decorate mine with candy corn for Halloween.

– 1 box yellow cake mix {I just used the Kroger brand that was on sale for $1}
– 3 eggs
– 1 & 1/3 cup water
– 1/3 cup vegetable oil or applesauce
– 1/3 cup butter or margarine
– 1/4 cup cocoa powder
– 1 tbsp vanilla extract
– 1 tsp cinnamon
– 3 cups confectioner’s sugar
– 4 tbsp half-and-half
– 1 small package candy corn

1. Preheat oven to 350 degrees. Prepare a cupcake tin with liners and set aside.

2. Bake cupcakes according to package directions. I combined my yellow cake mix with the eggs, water, and oil and beat with a whisk until the ingredients were well combined and the batter was smooth.

3. Fill each cupcake tin 3/4 of the way full and bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.

4. While cupcakes are baking, make the frosting. Melt butter in a small saucepan. Turn off the burner. Add cocoa powder and mix well; then stir in vanilla extract and cinnamon.

5. Pour sugar in to a large bowl. Add the chocolate mixture and the milk and stir until the frosting is smooth and creamy. It will be thick! You can add more milk or half-and-half if you would like it to be thinner.

6. Once cupcakes have cooled completely, frost each one with a generous amount of chocolate frosting.

7. Stick 3-4 candy corn pieces into each cupcake so their tops stick out decoratively.

Here they are all packed up and ready to go for my students!

Inspired by Deme at Fresh Coat of Paint to make use of what you have, I used a striped shirt and vest I already owned to dress up as a pirate. Anyone else using what they already have to dress up? Anyone make a homemade costume? One of my favorite-ever costumes was when I was a little girl, maybe four or five years old, and my dad helped me hand-paint cardboard butterfly wings that we tied to my shoulders with pink shoelaces. It didn’t cost us a single penny and I had so much fun preparing my costume, and when I wore it trick-or-treating I felt like the prettiest little butterfly! I still remember it vividly to this day. One of my favorite parts of Halloween is seeing all the creative, innovative and funny costumes!

midnight snack: pancakes!

I don’t know if I had a lighter dinner than usual last night, or if I burned more calories yesterday zipping around campus in the rain, or what … but late last night I found myself feeling hungry. And you know what was calling to me from the pantry? Pancake mix! So I decided to whip up a quick small batch of butterscotch/chocolate-chip pancakes for a special late-night treat.

Here is the recipe I used to make my perfect, sweetly satisfying late-night snack in case you’d like to try it out yourself sometime. If not for a midnight snack, perhaps for breakfast? 😉

chocolatey butterscotch pancakes

– 1 cup pancake mix {I used Aunt Jemima}
– 3/4 cup water
– handful of chocolate chips
– handful of butterscotch chips
– 1 tsp vanilla extract
– 2 tsp cinnamon
– butter for greasing the griddle

1. Stir together ingredients, being careful not to overmix. Batter will be lumpy.

2. Let batter sit for 3-5 minutes. While batter is resting, warm griddle pan on stove over medium-low heat.

3. When griddle is hot, grease pan with a little butter. {I always use butter because it is the way my mom makes pancakes … I love the crispy edges it gives them!}

4. Cook pancakes 4-5 minutes per side, flipping over when the middle starts to bubble.

5. Serve warm, with syrup if desired. {I prefer mine plain, with the chocolate all melty!}

Mmmm … the perfect end to a blustery autumn day. I was so excited to eat them that I completely forgot to take a picture! Sorry about that. I’m sure you can imagine them!

It could be that my pancake craving comes because I’ve been missing my brother Greg an extra lot lately. Pancakes always make me think of him. He is a pancake fiend! He’s coming to visit me in just a couple weeks and I could not be more excited.

happy birthday holly!

Today is my friend Holly’s 25th birthday! Happy birthday, Holly! ❤ We met our freshman year of college at USC where we lived in the same dorm and quickly bonded over our shared love of Sarah Dessen books, Nora Ephron movies, cheesey rice cakes, giggling, baking, browsing Target, taking long walks {especially in the autumn with hot apple cider from Starbucks!} and listening to Taylor Swift albums on repeat. Holly is one of those people who makes others feel instantly at ease with her warmth and compassion. I admire her for a zillion reasons: her genuine kindness, brave spirit, intelligence, creativity, insightful take on any situation. She is someone I can always call for advice and she will listen thoughtfully and help me come up with solutions when it seemed like there were none. And she is always someone I can count on to make me laugh and find the joy in the everyday moments of life!

Holly is living in Nashville, going to divinity school at Vanderbilt, and I’m bummed I couldn’t celebrate her birthday with her in person. We lived together for our four years of college, but since we graduated our friendship has been “long distance.” I miss her! But we have a little birthday ritual that helps us feel like we get to celebrate together even though we live far apart. It started when Holly baked me a cake on my birthday a couple years ago and sent me a picture. It was such a sweet gesture and I loved thinking of her enjoying some birthday cake on my behalf! We’ve continued baking birthday cakes for each other even though we aren’t together to share them. {I’m hoping one day soon, we will be!}

This year I changed things up a little bit and made Holly some birthday brownies instead of a cake. I used to make brownies all the time in college and I have many fond memories of Friday nights in, eating brownies and watching Friends marathons.

Nom nom nom!

I just used a box mix for these brownies {Duncan Hines Dark Chocolate} but I substituted the oil for applesauce to make them a little healthier and I also mixed in some white chocolate chips for extra chocolate goodness.

And because what goes better with chocolate than strawberries… I sliced up some strawberries and put them on top! Delicious.

rice krispies treats with m&ms

Last weekend I went to a welcome-back potluck for my Master’s program and I volunteered to bring dessert. {I always volunteer to bring dessert — any excuse to bake!} I racked my brain for something to make. Cookies? Cupcakes? Lemon bars? But with a busy weekend to-do list of errands and course planning, I was a little pressed for time. I thought back to picnics and potlucks of my childhood, when my mom would often bring Rice Krispies treats — they used to be one of my favorite desserts. I couldn’t remember the last time I’d had a Rice Krispies treat. A craving hit and it was immediately decided: I would try my hand at making some for the potluck!

Lucky for me, this recipe could not be simpler. It’s the perfect, inexpensive crowd-pleaser for any gathering — especially in the summer, when you don’t want to heat up your kitchen by turning on the oven. This would also be a fun recipe to make with kitchen-helper kiddos!

Looking for a dessert to bring to a Labor Day picnic? Try whipping up some of these!

rice krispies treats with m&ms

-1 package mini-marshmallows
-1/3 cup butter
-1 large bag mini m&ms
-6 cups rice krispies

1. Grease a 9 x 13 pan with butter and set aside. Melt the rest of the butter in a big pot on the stove. When butter is halfway melted, add the marshmallows.

2. Stir until the marshmallow is completely melted and smooth.

3. Turn off the burner. Add the rice krispies two cups at a time, stirring thoroughly until the mixture is combined.

4. Add a heaping cupful of the mini m&ms. {Feel free to use whatever kind of m&ms you want; I like the minis because they are so dang cute!}

5. Press the rice krispies mixture into the greased 9×13 pan. Pour the remainder of the m&m bag onto the top of the rice krispies and press down with a spatula.

6. Let cool for 15-20 minutes {or as long as you can stand it} before slicing into squares and serving.

marvelous monday: strawberry chocolate-chip pancakes

Happy Monday, everyone! How was your weekend? Marvelous, I hope!

I had a fun, relaxing and productive weekend. It was a great balance of work and play! I did some grading and lesson-planning, worked some on the novel I’m writing for my thesis, and did some baking! {Delish new muffin recipe coming later this week, hooray!} The highlight of the weekend was definitely Saturday night, when I drove an hour to Indianapolis to see Bob Dylan in concert!!

It was a beautiful summer evening and the concert was held in an outdoor venue, so we got to enjoy the sunset just as Bob Dylan was beginning to play. I loved the casual, picnic atmosphere. There were no assigned seats {at least not in the back section where we were sitting!} Instead, people sat in blankets or lawn chairs in the grass. It was lovely.

And Bob, of course, was rockin’! It was so neat to hear him play so many of his classic songs live. For an encore he played “Blowin’ in the Wind” which might be my favorite of his songs. You can just barely make him out in this photo I snapped — in the middle of the stage in the black jacket, playing the piano. Can you spot him?

What a fun time! I had a blast. What are some of your favorite concerts you’ve ever been to?

I wanted to start the week off on a luxurious note, so for breakfast I made strawberry chocolate-chip pancakes. How can this not be a fantastic week with these babies kicking it off?

I love this recipe for homemade from-scratch buttermilk pancakes I found on the terrific blog Newfashioned Mom, but you could also substitute your favorite boxed pancake mix.

strawberry chocolate-chip pancakes

– 1 cup unbleached flour
– 1/2 cup whole wheat flour
– 1 teaspoon salt
– 1 tablespoon sugar
– 5 tablespoons powdered buttermilk (or 1 1/4 c. fresh buttermilk, skip the water)
– 1 egg
– 1 cup water
– 1 tsp vanilla extract
– 1 cup chopped strawberries
– 1/2 cup chocolate chips
– butter for greasing pan

1. Heat pan or griddle on medium-low.

2. To make pancake batter: sift together dry ingredients. In a separate bowl, combine buttermilk, egg, water, and vanilla extract. Add egg mixture to dry mixture and stir together until big lumps disappear. {Batter should still be slightly lumpy.}

3. Grease pan with butter and pour in your pancake batter. I use a 1/4 cup scoop.

4. If desired, drop in the chocolate chips and strawberries. I prefer to cook chocolate-chip pancakes and add the strawberries on top after.

Option 1 on the left, Option 2 on the right.

5. When batter begins to bubble in the middle, use a spatula to flip the pancakes over. Cook until golden-brown on both sides.

6. Serve immediately with warm syrup. YUM!

Whenever I make pancakes, my first batch is nearly always a hot mess. Still tastes good, but not as pretty as the others. At least this one kinda looks like a heart! ❤

chocolate spice zucchini muffins

As you have probably figured out by now, I love baking. I haven’t met many baked goods that I don’t like! {I have an especially hard time staying away from the bakery items at Starbucks … I always go in planning to just get a healthy green tea, but the pumpkin bread and/or maple scones love to call my name!}

That said, I do love baking things myself because I love taking a delicious recipe and tweaking it to make it healthier, while hopefully still retaining the deliciousness level.

Which is why when I came across this recipe for chocolate zucchini muffins, I was super excited to try it out. Anytime you can figure out a way to sneak some veggies into a chocolate fix seems like a win to me!

These turned out chocolatey, moist and I liked the hints of cinnamon and spice. They’re pretty healthy as far as muffins go. You could probably add some frosting to these too if you wanted to make some uber-healthy cupcakes!

chocolate spice zucchini muffins

– 3 egg whites
– 1/2 cup sugar {I used 1/4 cup white sugar & 1/4 cup brown sugar}
– 1/2 cup no sugar added applesauce
– 2 tablespoons unsweetened cocoa powder
– 1 teaspoon vanilla extract
– 1 cup grated zucchini
– 1 & 1/2 cups flour
– 1/2 teaspoon baking soda
– 1/2 teaspoon baking powder
– 1/2 teaspoon salt
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon ground cloves
– optional: mini-chocolate chips

1. Preheat oven to 350 degrees. Lightly grease or line a muffin tin with paper liners.

2. In a large bowl beat the egg whites. Beat in the sugar and applesauce. Add the cocoa, vanilla, zucchini and stir well.

3. In a separate bowl, combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.

4. Pour the flour mixture into the zucchini mixture and stir until just moist.

5. Pour batter into prepared muffin tins, filling them about 3/4 of the way full.

6. Optional: For a topping use any, all or a combination of the following: brown sugar, chopped nuts and mini chocolate chips. Sprinkle tops of muffins just prior to baking.

7. Bake at 350 degrees for 20 to 25 minutes. Remove from pan and let cool on a wire rack. Store loosely covered.

-Time: 40-45 minutes {including bake time}

marvelous monday: chocolate strawberry coconut cookies

I’ve been on a bit of a breakfast kick lately as a way to get my week started off right. As soon as I saw this recipe for “Dark Chocolate Strawberry Oatmeal Breakfast Cookies” on Reini Days {one of my favorite blogs — you should check it out!} I knew I had to try it out myself.

I mean, chocolate? For breakfast? How can you go wrong??

These were the perfect way to use up some leftover strawberries I had in the fridge. They smelled absolutely heavenly while baking! Another thing I love about these cookies is that they are healthy enough to justify eating for breakfast, yet also delicious enough to serve for dessert. I modified the recipe a little. Here’s my take on it!

chocolate strawberry coconut cookies

Ingredients:
– 1 cup uncooked oatmeal
– 1 cup flour
– 2 T ground flax
– 1/4 tsp salt
– 1/2 cup shredded coconut
– 1 cup unsweetened applesauce
– 2 egg whites
– 2 T honey
– 1 tsp vanilla extract
– 1/2 tsp coconut flavoring {if desired}
– 1/4 cup chocolate chunks or chips {could be dark, milk, or white chocolate, or a mix!}
– 1 cup strawberries, diced

1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper, and set aside.

2. In a large bowl, mix the oats, flour, flax, and salt.

3. In another bowl, combine the applesauce, egg whites, honey, vanilla extract, and coconut flavoring.

4. Pour applesauce mixture over oat mixture and mix well, until all is combined. Stir in chocolate. Then gently fold in the strawberries.

5. Using a tablespoon, place dough on the lined baking sheet. Bake 10-15 minutes or until lightly browned and firm to the touch.

These are especially delicious still warm and melty from the oven. Enjoy!
