For my Grandpap’s birthday this past weekend, we made him his favorite dessert: cherry-cheese pie! It was a big hit with my family, and I was surprised at how simple it was to make. This would be a great holiday dessert alternative to pumpkin or pecan pie!

grandpap’s favorite cherry-cheese pie
– 2 eggs
– 1/2 cup sugar
– 2 tsp vanilla extract
– 1 & 1/2 cups sour cream
– 2 packages {8 oz each} cream cheese, softened {I used one regular package and one package of reduced-fat}
– 2 tbsp melted butter
– graham cracker crumb crust
– 1 can {21 oz} cherry pie filling

1. Preheat oven to 325 degrees.

2. Beat together eggs, sugar, vanilla, and sour cream.

3. Cut cream cheese into small pieces. Gradually add the cream cheese to the sour-cream mixture, beating well.

4. Beat in melted butter.

5. Pour cheese mixture into 9-inch graham cracker crust. Bake for 35 minutes, or until set in center. Will firm up as it cools.

6. Top with cherry pie filling; chill cherry cheesecake pie thoroughly before serving.

Hi friends! Apple Week continues today with a recipe for apple pie bites, adapted from one I came across at The Washington Post online. Unfortunately I don’t have a picture of these babies … you’ll just have to trust me on this. They’re: 1) delicious; 2) easy to make; and 3) gluten-free! In other words, these apple pie bites are the bomb dot com.

For the crust:
– 1/2 cup gluten-free flour {I used coconut flour, which turned out very well}
– 1/2 cup almond flour or almond meal
– 1/2 tsp cinnamon
– 2 tbsp agave syrup or maple syrup
– 2 tbsp unsweetened applesauce
– 1/4 cup ice water

For the filling:
– 1 cup finely diced, skin-on apple
– 2 tbsp unsweetened applesauce
– 1 tsp vanilla extract
– 1 tsp agave syrup or maple syrup
– 1/2 tsp ground cinnamon

1. Preheat oven to 375 degrees. Lightly grease a mini muffin pan and set it aside.

2. In a medium bowl, whisk together the flour, almond meal and cinnamon. Add the maple syrup, applesauce and water; stir to form a soft dough.

3. Divide the dough evenly among the wells of the mini-muffin pan. Use your fingers to press down the dough so that it lines the bottom and sides of each well.

4. Now make the filling: stir together the apple, applesauce, vanilla extract, maple syrup and cinnamon in a separate bowl. Divide evenly among the dough-lined muffin pan wells, pressing down the filling so it is firmly packed.

5. Bake for 15 to 18 minutes; the edges of the tarts will be lightly browned and the filling will have settled a bit. Cool in the pan for 5 minutes, then use a fork to gently dislodge and transfer each tart to a wire rack to cool.

These are the perfect light dessert or portable snack! Happy baking!

Hi everyone! I’ve decided to designate the next few days as Apple Week here on the blog! I have a few apple-themed recipes I’m excited to share with you, so I thought why not group them together in a single week … after all, no time of year says apple like autumn does!

Today, I’m excited to share the recipe for the apple cake I shared a teaser picture of in yesterday’s post. Grandma and I baked this cake for our dinnertime get-together at my aunt’s house, and it was a huge hit! There were only six of us there, and pretty much the entire cake got devoured by the time we left.

for the cake:
– 5 cups apples {peeled, cored and chopped}
– 1 & 3/4 cups flour
– 1/4 cup almond meal
– 2 tsp baking soda
– 2 or 3 tsp cinnamon {depending on your tastes}
– 1 tsp salt
– 3/4 cup brown sugar
– 1/4 cup maple syrup or agave
– 1/2 cup vegetable oil
– 1 cup applesauce
– 2 eggs
– 1 tsp vanilla

for the crumb topping:
– 1/2 cup flour
– 1/2 cup brown sugar
– 1 tsp cinnamon
– 2 tbsp butter

for the brown sugar glaze:
– 1/2 cup brown sugar
– 1 tsp vanilla
– 2 tbsp water

1. Preheat oven to 350 degrees. Lightly grease a 9 x 13 baking pan and set aside.

2. In a large bowl, stir together the brown sugar, maple syrup/agave, and chopped apples. Mix until apples are well coated with sugar. Set aside.

3. In a separate bowl, beat together eggs, vegetable oil, applesauce, and vanilla until well combined.

4. Sift together dry ingredients: flour, almond meal, baking soda, salt, and cinnamon.

5. Add dry ingredients to the wet ingredients and mix well.

6. Pour the batter over the apple-sugar mixture. Stir until well combined, then pour into the baking pan.

7. To make the crumb topping: mix together flour, brown sugar and cinnamon. Add butter in small pieces. Mix until you have a fine, crumbly mixture. Generously sprinkle the crumb topping over the apple cake batter.

8. Bake for approximately 45 minutes, until a toothpick inserted in the center of the cake comes out clean. {Note: your house will smell AMAZING when this is baking!}

9. While cake is baking, make your brown sugar glaze by combining brown sugar, vanilla and water in a small bowl. Stir until smooth.

10. Remove cake from oven and drizzle with brown sugar glaze, which will harden as the cake cools.

In my opinion, this cake is best served warm with a scoop of vanilla ice cream. Enjoy!!

Happy Monday, everyone! Hope your week is off to a good start. 🙂 The BART strike continues up here in the Bay Area, and I feel so bad for all of the commuters into the city who rely on BART and now have to find other means of transportation. Please send good thoughts that the issues get resolved soon and the trains will start running again!

My cousin Arianna went to the Homecoming Dance this weekend and she looked absolutely gorgeous! I love this photo of her and my grandma … we were calling them our two ladies in red:

Yesterday was another family-filled day, and I loved it! In the morning I headed over to cheer on my cousin Makena in her soccer game — not only did her team win, but she scored three goals! I was so proud. She is quite the soccer star!

Then I headed over to the U.U. church a couple towns over {the closest one to where I live now} … it was my first time going to this particular church, and everyone was so welcoming and kind. The church itself is stunningly beautiful, on top of a mountain, and the chapel has a ton of windows looking out over the green hills and the valley below. I was definitely happy I made the drive, and I plan to go back next Sunday! It can be intimidating to walk into a new church, and it takes me a few weeks to feel completely comfortable and to start recognizing familiar faces.

In the evening, we got together for dinner with my other aunt’s family. Grandma and I made an apple cake with cinnamon crumb topping and brown sugar glaze … YUM! It was actually a very easy recipe, and was a big hit with everyone. Grandpap even went back for thirds! I’ll have to share the recipe on here soon.

Now … on to the kindness! Last week’s kindness challenge was to advocate for someone, particularly someone younger or newer or just starting out on their career path. I sent a dozen or so emails to young writers with contest information I came across, and I also spoke on the phone to a few high school students about their writing and college applications. I always come away from these conversations inspired myself — I hope they felt the same way!

The Week 42 Kindness Challenge is to buy someone else’s morning java fix or afternoon caffeine boost. This might mean paying for the person behind you in line at Starbucks or bringing lattes to your coworkers as a mid-week treat. Whatever strikes your fancy!

gluten-free oatmeal chocolate-chip cookies

I have an easy recipe to share with you today — another winning gluten-free cookie!

– 1/4 cup butter
– 1/2 tsp baking soda
– 1/2 tsp baking powder
– 1/2 cup brown sugar
– 1/2 cup agave or maple syrup
– 3 cups gluten-free rolled oats
– 1 cup chocolate chips
– 2 eggs
– 1/2 cup chopped walnuts
– 1 tsp vanilla
– 1 cup peanut butter

for chocolate drizzle:
– 1/2 cup chocolate chips
– 2 tbsp butter

1. Preheat oven to 350 degrees and line a cookie sheet with parchment paper.

2. In a large bowl, combine brown sugar, agave/maple syrup, and butter. Beat until creamy.

3. Add the eggs, vanilla, baking soda and baking powder and beat well.

4. Add peanut butter and mix.

5. Stir in oats, chocolate chips, and walnuts.

6. Drop by rounded tablespoons onto baking sheet and bake 10-12 minutes until lightly brown around edges.

7. To make chocolate drizzle: microwave chocolate chips and butter for 20 seconds. Stir until chocolate and butter and melted and well-combined, microwaving more if needed. {Be careful not to burn the chocolate!}

8. Once cookies are done, let them cool and then drizzle with melted chocolate.

Enjoy! I love these with a big glass of milk!

Happy 4th of July! I’m taking a few minutes today — as I try to every day, but especially today — to be grateful for all the men and women who have fought to establish and protect our nation’s independence. We are all so blessed to live in freedom. Every human being should have that blessing — in fact, it shouldn’t even be a blessing. It is a basic human right.

I’ll also be thinking today of the Four Freedoms Speech that FDR gave in 1941, and especially of the Norman Rockwell paintings that were published in the Saturday Evening Post in 1943. I was fortunate enough to see the original paintings a number of years ago with my Gramps and brother when a traveling exhibit came to town. I feel incredibly blessed to enjoy all of these freedoms. What are you doing today to celebrate the 4th of July? We’re going over to my aunt and uncle’s house for a backyard barbeque and pool party. I’m looking forward to a sunny day of relaxing with my family.

I signed up to bring dessert {no surprise there!} and I decided to bust out a new recipe that didn’t require me to turn on my oven. {It’s been so dang hot out!} I was inspired by this recipe on Money-Saving Mom for chocolate oatmeal no-bake bars. I love rice krispies treats, so I adapted the recipe to use mostly rice krispies. Here’s my take on it:

– 1/4 cup coconut oil
– 1/4 cup maple syrup
– 1 cup peanut butter
– 2 cups mini marshmallows
– 1 cup chocolate chips
– 1 tsp vanilla extract
– 1 cup rolled oats
– 3 cups rice krispies

1. Grease a 9 x 13 glass pan and set aside.

2. In a big pot over medium-low heat, melt coconut oil, maple syrup, and peanut butter. Stir until melted and well-combined. {Be careful it doesn’t burn!}

3. Add vanilla and chocolate chips. Stir until chocolate is all melted.

4. Add marshmallows and stir until the marshmallows are melted.

5. Remove from heat. Add rolled oats and stir. Add rice krispies, one cup at a time, until well-combined.

6. Pour into the glass pan and refrigerate until chocolate has hardened and the bars have “set.”

I can’t remember if I mentioned it on the blog yet, but my brother has recently started eliminating gluten from his diet, so I’ve been experimenting in the kitchen to see if I can come up with some yummy gluten-free treats! Here is a recipe that went over well in my household. Hope you enjoy!

gluten-free pumpkin oatmeal chocolate-chip cookies

– 2 cups gluten-free oats
– 1 egg
– 1/4 cup maple syrup or agave
– 1 (15 ounce) can pumpkin puree (not pumpkin pie)
– 1 ripe banana, mashed
– 1/2 cup peanut butter or almond butter
– 1/2 cup ground flaxseed
– 2/3 cup dried cranberries
– 1/2 cup chopped walnuts
– 1 tbsp cinnamon
– 1 tsp pumpkin pie spice
– 1 tsp vanilla
– 1 tsp baking soda
– 1/4 tsp salt
– 1 cup chocolate chips

1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.

2. Beat the egg. Stir in maple syrup, mashed banana, peanut butter, pumpkin puree, and vanilla. Mix well.

3. In a separate bowl, mix together the dry ingredients: oats, ground flaxseed, cinnamon, pumpkin pie spice, baking soda, and salt.

4. Slowly, add dry ingredients to wet ingredients, and stir until combined.

5. Add chocolate chips, dried cranberries, and walnuts, and mix well.

6. Drop batter by rounded tablespoons onto baking sheet. Bake for 10-12 minutes, until cookies are set in the middle and browned at the edges.

Happy Friday, friends! Hope you have something fun planned for this weekend. 🙂 I am getting ready to head to LA this afternoon for my cousin Amanda’s bachelorette party! I am so excited! It will actually be the first bachelorette party I’ve ever attended. I’m looking forward to seeing my cousins and friends and celebrating Amanda’s final days of singledom!

I have a delicious recipe to share with you today! I made this for my dad’s birthday cake on Monday. He loves peanut butter and chocolate, so I took my peanut butter cup brownies and upgraded them to a “brownie-cake” … and the highlight is definitely the homemade peanut butter frosting! This frosting is SO simple to make, and if you like peanut butter, you are in for a treat! I predict you will be licking the bowl. {Or maybe that’s just me!}

I will warn you in advance, I didn’t even try to healthify this dessert … I don’t even want to know how many calories/fat/sugar/etc. is in a slice of this! Sometimes you just have to treat yourself, right? But I did just come across this recipe by Lindsay at The Lean Green Bean for healthy sweet potato brownies that I might try using in this recipe in the future! If you try it out, let me know how it goes!

I used my fave boxed brownie mix … Ghiradelli dark chocolate!

I made the batter as directed {if you’re trying to healthify things a little, you could substitute unsweetened applesauce for half of the oil} and poured the batter into a lightly greased 8 x 8 pan. Then I stuck in mini dark chocolate peanut butter cups in a tic-tac-toe pattern.

Bake at 325 degrees for 45 minutes, or until a toothpick inserted in the center comes out clean.

Once the brownies were cool, I frosted them with homemade peanut butter frosting!

– 1/4 cup butter, softened
– 2/3 cup creamy peanut butter
– 3/4 cup powdered sugar
– 2 tbsp milk {to taste … depending on your frosting consistency preferences!}

1. Mix together the butter and peanut butter until well blended.

2. Slowly add the powdered sugar and beat until smooth. Add milk until it gets to desired consistency.

After frosting the brownies, my final step was sprinkling mini chocolate chips over the frosting layer. Ta da! My favorite dessert ever!

These disappeared from our house in record time!

Kitchen Tip Tuesdays: 3-ingredient banana cookies

Hi everyone! Time for another Kitchen Tip Tuesdays post! {Here are links to my previous posts about making the most of oven time and reusing leftovers in new recipes.}

I have a quick recipe to share with you today — it’s an easy and delicious cookie that is also healthy for you! And it only has three ingredients {one of which is chocolate!} 🙂 That’s my kind of recipe!

This would make the perfect sweet dessert, kid-friendly snack, or grab-and-go breakfast. It’s also a great way to use up spotty bananas before they go bad.

All you need to make these babies are:

  • 2 bananas
  • 1 cup rolled oats
  • 1/4 cup chocolate chips {if desired; I used mini chocolate chips for mine}

1. Preheat oven to 350 degrees.

2. Mash bananas in a bowl. Add oatmeal and chocolate chips and stir until well combined.

3. Plop dough onto a greased cookie sheet {I greased mine with coconut oil} and bake for 15-18 minutes.

Done and YUM! How easy is that?

This recipe is also easily customizable to suit your tastes! You can add chopped nuts, raisins, peanut butter, coconut … whatever your taste buds desire!

I’m so excited to share a guest recipe post today! This delicious recipe comes from Lisa of Lisa’s Lentils, who I was matched with for March Foodie Pen Pals. {Tune in Monday for a post about the delicious treats she sent me!} Lisa was kind enough to share this recipe with us today. It was originally published on her blog here.

{vegan} healthier toffee bars

  • 2 tbsp Earth Balance spread
  • 2/3 cup coconut sugar
  • 1 flax egg {1 tbsp flaxseed + 3 tbsp warm water}
  • 1 tsp vanilla
  • 1 cup unsifted oat flour
  • 1 dark chocolate bar, crumbled
  • 1 cup chopped walnuts {optional}

1. Preheat oven to 325 degrees and place parchment paper in a 9Ă—12 pan.

2. Cream the Earth Balance spread and coconut sugar.

3. Add the flax egg, vanilla, and oat flour and mix well.

4. Spread the mixture into the prepared pan.  Make sure it’s very thin.

5. Bake for 20 minutes.

6. Remove from pan and immediately cover with the chocolate pieces and walnuts.

7. Cut into squares.

8. {Optional} Refrigerate for 30 minutes before serving.
