fabulous friday #4

Happy Friday, everyone! I’m writing this from the beautiful new John McKay Student Athletic Center at USC … so excited to be back at my alma mater for Homecoming weekend!

Here are five things I’m happy about:

1. Getting to hang out with my brother! This guy makes me laugh like no one else on the planet. I love him so much!

2. The USC Homecoming football game! I’m going with my friend Ben, who I haven’t seen in far too long … can’t wait to catch up. My parents are also driving down tomorrow morning and we’re going to tailgate with them and my brother’s business school friends. Should be a ton of fun! {Apparently last time my mom went to the tailgate with my brother, everyone thought she was a Dean, haha. She’s just such a dignified lady.} 🙂

3. This morning I had a coffee date with Erica at our favorite local coffee shop Simone’s. Nothing like a pumpkin chai latte and two hours of laugh-filled conversation with this beautiful lady to get my weekend off to a great start!

4. My dad took me out for a sushi lunch date before I headed down to USC. He’s such a sweetie! When I was living at home we’d try to go on lunch dates every Friday, so it was extra special to continue our tradition when I was home today.

5. Mr. Murdog was oh-so-excited when I came home and gave me the most exuberant, tail-wagging welcome. And I got to take him out on a walk with my mom last night after dinner, which is one of my favorite rituals. I love walking and talking with my mama!

If you couldn’t tell … I’m happy to be back home for the weekend!

Questions of the day:

  • What are your weekend plans?
  • What are you happy about on this lovely Friday?

Happy Friday! What fun plans do you have on the horizon? I’ve been battling a cold this week, but thanks to plenty of rest, green tea, and Grandma’s homemade soup, I am feeling much better … ready to embrace the weekend!

Here are five things I’m smiling about:

1. The USC-Cal Berkeley game! I’ll be heading over bright and early with some new friends from the East Bay Alumni Club. I’m so excited to tailgate and cheer on our Trojans! It’s been five years since I’ve been to a USC football game — crazy!

2. Pumpkin spice English muffins are back on the grocery store shelves! YUM. Is it too much to slather these with pumpkin butter? Because you bet that’s what I’ll be eating for breakfast all week. 🙂

3. My Grandpap’s birthday is tomorrow! We’re all getting together to celebrate on Sunday. Bianca and I are planning to make these funfetti cookies {thanks for the recipe Sarah!} and Grandpap’s favorite dessert, cherry-cheese pie. Photos and recipe to come!

4. Two new songs that I’ve been listening to over and over:

5. Whitney’s blog posts reflecting on her recent trip to Africa … wow, you guys. Read her words and gaze at her photos and prepare to be inspired. She makes me smile, she brings tears to my eyes, she makes me feel filled with grace.

Questions of the morning:

  • What are you loving today?
  • What do you have planned for this weekend?

fabulous friday #2

Happy Friday, friends! And happy November! How was your Halloween? I had soooo much fun handing out candy to a ton of adorable trick-or-treaters. Lots of princesses, superheroes, and some amazing homemade costumes including a Medusa with hand-sewn snake hair! I hope your night was spooktastic and filled with more treats than tricks. 🙂

Here are five things I’m loving today:

1. Thanks to Robyn’s blog The Real-Life RD, I discovered this natural nutrition boost Vega One to add to my morning smoothies, and I’m loving it! I got the French Vanilla flavor and it’s very sweet, so I normally add just a quarter scoop to my morning smoothie. But it leaves me feeling satisfied for longer, and I love getting all kinds of plant-based nutrients and vitamins in my body first thing in the morning. It’s great way to wake up!

2. Two nights ago, I got to see the terrific writer Tom Barbash give a reading at San Jose State … I’ve been a fan of his work for a while, and I’m even more so now because he is such a warm, engaging and humble person. I am simultaneously devouring and savoring his new short story collection, Stay Up With Me. I’d highly recommend it!

3. Does anybody else watch the TV show Nashville? I got pulled into an episode the other night when I was drowsily getting ready for bed, and I’m now hooked! I guess I should have known this would be a show for me: after all, I love Nashville since it makes me think of Holly, I love country music, I love Connie Britton {Friday Night Lights!!} and I love romantic drama storylines, which the show has plenty of! Now I just need to get caught up on last season…

4. This evening I’m excited to hang out with a group of USC alumni to watch our Trojans play Oregon State … I’m all ready to cheer them on!

5. I get to see my friend Dana on Sunday! We haven’t seen each other in a few weeks and I’m so looking forward to catching up. She always puts a smile on my face. Plus, I get to meet her sweet dog Heidi, which I am looking forward to!

Questions for the morning:

  • What are you loving right now?
  • What are your plans for the weekend?

fabulous fridayyyy

Happy TGIF, friends! I’ve noticed a lot of my favorite bloggers doing “things I love Friday” type posts, and they always get my weekend off on a good note. So I thought I would join in on the fun!

Here are five things I am loving today:

1. The wildlife in my grandparents’ neighborhood! It is not uncommon to see families of deer nibbling at grass as I drive past on my way to morning yoga. Every time I see them, I squeal with excitement. Earlier this week I finally pulled over and snapped a picture, not even caring that I looked like a tourist in my own neighborhood. Look at these cuties!

2. Speaking of cuties … my grandparents are so adorable! I am so grateful I get to have this year living with them. They make me smile every single day! Here’s a photo I stealthily took of them the other day when my Grandpap was trying {unsuccessfully} to teach my Grandma how to work the Google Maps app on her phone:

gparents

3. These s’mores pancakes from Peanut Butter Fingers. I WANT.

4. The other day when I was driving I heard the song “I Hope You Dance” by LeAnn Womack that I remember loving in high school but had not heard in ages … what a great song! The lyrics all came back to me and I was belting it out. Now that I’m older, the wisdom in the lyrics rings even more true.

5. I get to hang out with these two lovely ladies all weekend…

celine and jess

… and tonight we get to see Jess in The Producers! I can’t wait! I know she’s going to break a leg!

Questions of the morning:

  • What fun things do you have planned for this weekend?
  • What old songs always make you smile when you hear them on the radio?

happy friday!

I have finished teaching my afternoon class, which means it is offically SPRING BREAK here at Purdue! Woo hoo! There may still be snow on the ground, but it is beginning to feel a little more like spring. Today’s temperature was a balmy 40 degrees, and it is staying light out later and later, which is so nice after a long winter of 5 pm sunsets.

A few fun things of late:

  • Yesterday I saw Warm Bodies, a zombie love story. It was witty and hilarious and surprisingly moving. I loved it! If it’s still playing where you are, I’d highly recommend it.
  • Today I had lunch with good friends at Panera {shout-out to Sarah The Pajama Chef: fuji apple chicken salad is the best!} My friend Matt and his wife Casey recently got the most adorable basset hound puppy named Merriwether, and I could not stop petting her soft ears and wrinkly face. I miss our family dog Murray a TON — I even dreamed about him last night! — and I can’t wait to see him this summer! He would have been jealous at all the attention I was giving Merriwether.

murray jealous

  • I just finished reading Gone Girl by Gillian Flynn, a suspenseful, twists-and-turns mystery that was recommended to me by mulitple people and I have to say, I really could not put it down. The book is over 400 pages but I flew through it in a matter of days, even staying up late to read it a few nights! I was over-all satisfied by the book and very impressed with the author’s plotting and characterization talents, but for me the ending was disappointing. It felt like a roller-coaster that is building and building, and then just stops before the final descent. There is a final twist, but my main feeling when closing the book was frustration. Has anyone else read Gone Girl? What did you think of it?
  • The next book I’m planning to read is The Fault in Our Stars by John Green as part of the March PBF Book Club. I have read other books by John Green in the past and LOVED them, so I have high hopes for this one!
  • Maybe I am feeling book-crazy because I stopped by the local library this afternoon and spent some time browsing — one of my favorite things to do! I go to the library pretty much once a week and stock up on not just books, but also DVDs and CDs. Before I moved to Lafayette, I often used to overlook the library as a wonderful treasure trove of free entertainment.
  • I’m super excited to be participating in The Lean Green Bean’s Foodie Pen Pals group for March! It’s free to sign up, and you’re paired with another blogger or reader to send a box of treats and food goodies to that month. I’m having a blast picking out things to send to my pen-pal. You can learn more about the group and sign up for next month at The Lean Green Bean.

Hope you have a wonderful weekend! Anyone else getting spring fever?

easy sausage, veggie & potato bake

Happy Thursday! I thought I would share a simple recipe with you today that my mom showed me back when I was home for Christmas. {Hard to believe that was a month ago!} It’s perfect for a cold winter night when you want to make something healthy and hearty — and an extra bonus is that it comes together really quick!

sausage potato veggie bake

easy sausage, veggie & potato bake

– 1 package of your choice of sausage {i like turkey sausage or chicken sausage}
– 1 medium onion
– 1 red bell pepper
– 1 green bell pepper
– 3 cloves garlic, minced {i used 3 tsp of pre-minced garlic}
– 2-3 lbs of small red potatoes {depending on your amount of potato love}
– 1 cup chicken broth {i like the low-sodium kind}
– salt & pepper to taste

1. Quarter the potatoes. Bring a pot of water to a boil and cook the potatoes for 10-15 minutes, until soft.

2. Brown the sausage in a skillet until cooked through.

3. While sausage and potatoes are cooking, roughly chop up the veggies. Combine in a big bowl with the garlic until well-tossed.

pepper and onion

4. Once potatoes are cooked through, drain the water.

5. Once sausage is cooked through, transfer to a cutting board and slice into pieces.

6. In a glass baking dish, combine veggies, potatoes and sausage. Pour chicken broth over mixture. Add salt and pepper to taste.

7. Bake for 20 minutes in a 350 degree oven, until veggies are tender.

8. Serve plain or over rice! I like serving this dish with corn muffins.

What are your plans for this upcoming weekend? Mike and I are going to have a quiet night in tomorrow — I’m looking forward to cuddling up on the couch with a movie! {Looking to save money on date night? I compiled a list of some of my favorite strategies here.}

Till soon!

Review of “The Happiness Project” by Gretchen Rubin

Today was a glorious 50-degree day here in Indiana, and a Friday to boot! I celebrated by stopping by a frozen yogurt shop for a midafternoon snack. They still had the holiday flavors out and I perhaps gorged myself on a little too much of the gingerbread fro-yo {I am a sucker for anything gingerbread flavored, as evidenced by this photo of my happy gingerbread chai latte face} and needless to say, I am now in a little bit of a fro-yo sugar coma. I will persevere onward…

So, you may remember that this book was on my to-read list back in November as part of the book club hosted by blogging phenom Julie at PB Fingers.

the-happiness-project

You may also have noticed that finishing the book was crossed off my to-do list a while ago and that I mentioned one of the book’s principles {“Do good, feel good”} in my post about taking cards & cookies to the nursing home for the holidays.

To be honest, I think I kind of blurred together that post and the book in my mind, and thought I had already posted a review of The Happiness Project on here … until I went to look for the post last night and couldn’t find it. Whoops!

Better late than never, right? 😉

The Happiness Project takes us through a year-long quest of writer Gretchen Rubin to become happier and more grateful for her life and her blessings. She focuses on a specific area of her life for each month, such as feeling more energetic, being a better parent, and improving her relationship with her husband. Her aim is to continue the lessons from each month into the next month {picture a snowball accumulating more and more power as it rolls forward} so that by the end of the year she is attempting to put all of her lessons into practice. I really liked how she set up the project, and the book, in this organized, easy-to-follow way. I am using this strategy to tackle my own goals for this year: I have broken them up into different categories and am focusing on one main category per month, which will hopefully make it less overwhelming to stay on track and get things done.

Rubin writes in an accessible way, almost like a friend chatting to you over coffee. I also liked how she interspersed quotes, examples, and scientific & psychological research she had done throughout the book. It is clear she dove full-heartedly into her happiness project and I think that is a big part of what makes her story so inspiring and invigorating. This book is part of what motivated me to start my own year of kindness challenge!

year of kindness button

I was moved by Rubin’s “Splendid Truths” about Happiness {you can read the entire list on her blog here} especially her Second Splendid Truth:

“One of the best ways to make yourself happy is to make other people happy;
One of the best ways to make other people happy is to be happy yourself.”

Reading this statement made me feel joyfully understood. This would be my First Splendid Truth; this is my key to happiness. I make myself happy by making other people happy. And I try to brighten other people’s days with my own happiness. I remember a mantra I came up with in elementary school: “Why be sad when you could be happy?” It still rings true, for me, in most situations.

Something else that I found useful from this book was the appendix, which is filled with handouts and resources for people interested in starting their own happiness projects. Rubin wrote that one of the most motivating things for her was to track her progress with daily charts, and as I am someone also motivated by checking things off lists, I devised my own goal list for the week to keep me motivated on those routine goals that could easily fall by the wayside.

All in all, I think The Happiness Project is a motivating and inspiring book to read while also asking yourself, “What does my own Happiness Project look like?”

Have any of you read The Happiness Project? What did you think of it? I’d love to hear your thoughts.

** For January, the PB Fingers book club pick is The Secret Keeper by Kate Morton.

** I’ll also be reading and reviewing 7: an experimental mutiny against excess by Jen Hatmaker if anyone wants to join me! I’d be happy to post links to your book reviews, too!

Have a great weekend! I am planning a night in watching Men in Black III {which I still can’t believe I managed to miss in theaters… I’ve been wanting to see it for.ev.er!}

Hope your night is filled with fun and relaxation and perhaps even a little Friday fro-yo! 😉

meal planning whiteboard

Happy Friday, everyone! I must admit I am really feeling the TGIF vibe today. I love teaching, but the first week back at school always seems so loooong … I think because everything is new, I’m learning all my students’ names, figuring out my new schedule, etc. I’m looking forward to a weekend of recharging my batteries and getting ahead for the upcoming week!

Over the past few months, I’ve gotten really into reading different organization and recipe blogs {you can find links some of my favorites here.} Something I’ve seen recommended again and again is using meal-planning to get organized, save time, and save money. For as much as I like to cook, I’ve never been a weekly meal-planner. I’m the type of person who decides what to make for dinner that morning, at lunch, or even sometimes when staring into my half-empty fridge, stomach rumbling, trying to figure out what I can throw together quickly for a meal.

And you know what? It can be stressful! One of my least favorite things is heading home after a long day with no idea of what to do for dinner. Those are the days I will end up grabbing food out somewhere. I do enjoy eating out in restaurants, but I like it best when it’s something planned in advance, something I can look forward to all day — it feels more special that way.

Which all goes to say, I’ve been thinking about implementing a meal-planning schedule into our routine for a while. This week, with the beginning of a busy new school year, I finally did something about it!

I went to Target yesterday and in the back-to-school aisle I found this adorable whiteboard with a blue frame and attached pen — plus, it had a magnet on the back. Just what I needed! Best part of all: I snagged it for only $3.00.

All I had to do was take it out of the packaging, slap it up on the fridge, and write out my planned menu for the week. On Tuesday Mike and I are planning to go to Outback Steakhouse for dinner to use a gift certificate we have, and on Friday I’m getting together with my friends Xun and Hai for dinner.

I chose to place the whiteboard on the side of the fridge where I’ll see it every time I walk into the kitchen. I hung it right above a monthly calendar/newsletter I get from the apartment complex. It’s my new “information station”!

It makes me feel so great to have the week sketched out like this — no more stress wondering what to have for dinner! And I think planning out the week this way will help save money {and last-minute grocery trips to get that one ingredient I don’t have…}

Do you use weekly meal-planning? I’d love to hear any of your tips!
