Today is my amazing friend Holly’s birthday! As per our tradition, I baked her something special even though we’re not together right now to celebrate. {Fortunately I am going to visit her in two weeks, so we get to celebrate belatedly then!}

Holly is one of those people that just has this light about her. She glows with warmth and genuine kindness. She is a constant source of joy in my life. We would talk often on the phone this summer when I was living at home, and my family would immediately know I was talking to her because I would erupt into fits of giggles. She is that type of friend. She knows me to my core and she loves and accepts me exactly as I am. And the amazing, generous person she is makes me want to be a better person myself. I feel so blessed that our friendship has grown with us the past eight years and even though we are physically separated by distance, as the years pass we grow closer than ever.

mt. whitney wednesdays

Ten years ago, when I was sixteen, I climbed Mt. Whitney in one day with my mom. It is one of the most amazing things I’ve ever done. It was euphoric and exhausting; I truly pushed my body to the limit and accomplished something that had at one time seemed out of my reach.

When I realized that this July is the 10-year anniversary of our climb, I wanted to do something here on the blog to celebrate. I came across a journal I kept leading up to and during the climb, which gave me the idea to share those journal entries with you.

Whether you’re planning to climb Mt. Whitney, hike a different mountain, run a marathon, complete a triathalon, or whatever your adventurous dreams may be — I hope these journal entries will be fun and inspiring to read! I’ll be doing a new post every Wednesday and all the posts will be archived here.

“Because it’s there.” – Sir Edmund Hillary’s reply, when asked why he climbed Mt. Everest, the tallest mountain on Earth

“Because Hillary inspired me,” is my reply whenever I am asked why I climbed California’s Mt. Whitney. While Whitney is 14,541 feet lower than Everest, it is still the tallest mountain in the contiguous United States at 14,494 feet.

Exactly how did Hillary inspire me? By coincidence, he became the first person to reach the peak of the world’s tallest mountain on May 29, 1953 — and I was born on the 29th of May, 34 years later. This serendipitous piece of information got me interested in doing something memorable on the 50th anniversary of his historic achievement in 2003.

So it was that I decided to climb Mt. Whitney, the “Culminating Peak of the Sierras.” To me — a girl who was born three months prematurely, weighing just two pounds, six ounces, and who doctors feared wouldn’t survive — the goal of standing {if not on top of the world} at least on top of the lower 48 states, was truly an Everest-like challenge.

What follows is the journal of my experiences. {Stay tuned for more next Wednesday!}

Happy 4th of July! I’m taking a few minutes today — as I try to every day, but especially today — to be grateful for all the men and women who have fought to establish and protect our nation’s independence. We are all so blessed to live in freedom. Every human being should have that blessing — in fact, it shouldn’t even be a blessing. It is a basic human right.

I’ll also be thinking today of the Four Freedoms Speech that FDR gave in 1941, and especially of the Norman Rockwell paintings that were published in the Saturday Evening Post in 1943. I was fortunate enough to see the original paintings a number of years ago with my Gramps and brother when a traveling exhibit came to town. I feel incredibly blessed to enjoy all of these freedoms. What are you doing today to celebrate the 4th of July? We’re going over to my aunt and uncle’s house for a backyard barbeque and pool party. I’m looking forward to a sunny day of relaxing with my family.

I signed up to bring dessert {no surprise there!} and I decided to bust out a new recipe that didn’t require me to turn on my oven. {It’s been so dang hot out!} I was inspired by this recipe on Money-Saving Mom for chocolate oatmeal no-bake bars. I love rice krispies treats, so I adapted the recipe to use mostly rice krispies. Here’s my take on it:

chocolate peanut butter rice krispies treats

– 1/4 cup coconut oil
– 1/4 cup maple syrup
– 1 cup peanut butter
– 2 cups mini marshmallows
– 1 cup chocolate chips
– 1 tsp vanilla extract
– 1 cup rolled oats
– 3 cups rice krispies

1. Grease a 9 x 13 glass pan and set aside.

2. In a big pot over medium-low heat, melt coconut oil, maple syrup, and peanut butter. Stir until melted and well-combined. {Be careful it doesn’t burn!}

3. Add vanilla and chocolate chips. Stir until chocolate is all melted.

4. Add marshmallows and stir until the marshmallows are melted.

5. Remove from heat. Add rolled oats and stir. Add rice krispies, one cup at a time, until well-combined.

6. Pour into the glass pan and refrigerate until chocolate has hardened and the bars have “set.”

father’s day recap

Hi friends! How was your weekend? Mine was wonderful + busy — so busy that I didn’t have time to post about Father’s Day until now! Thanks for your patience with me.

I had a busy weekend, but it was busy with good things: delicious homemade food; gluten-free baked goods {new recipe coming soon!}; lunch out with the fam on a beautiful sunny day; shopping with my mom for a dress for her to wear to my cousin Amanda’s wedding {she found the perfect one that looks gorgeous on her!}; after-dinner fro-yo with plenty of toppings; cheering at the TV with my fam as we watch the NBA Finals; curling up with a heartwarming book, Emily Giffin’s Where We Belong; a long, laugh-filled, soul-soothing phone date with my bff Holly; snippets of peaceful yoga time on my new yoga mat {birthday present from my parents, thanks guys!}; a powerfully moving sermon at church about helping others; and my Gramps came over for Father’s Day dinner!

At my church, the congregation always sings a song as the children leave the chapel and head off to Sunday school. This week, the words struck me as particularly meaningful:

“How could anyone ever tell you/You were anything less than beautiful? How could anyone ever tell you/You were less than whole? How could anyone fail to notice/That your loving is a miracle? How deeply you’re connected to my soul.”

The lyrics made me think of my dad, who has always made me feel beautiful, whole, loved and connected. {My mom makes me feel this way, too, but my dad was especially on my mind because of Father’s Day!} I count my blessings every day that I have been so lucky to grow up in the warmth of my parents’ unconditional love. For as long as I can remember, my dad has always done little things like opening my car door for me and laughing at my jokes, and not-so-little things like genuinely listening to my thoughts and opinions and telling me that I can accomplish anything I put my mind to. He also always, always tells me he loves me and is proud of me. Throughout my life, my dad has been a shining example of how I deserve to be treated — and not just in the way he treats me, but also in the kind and respectful way he treats my mom. I love you so much, Daddy!

I’m planning to celebrate today by taking flowers to the local nursing home, paying for someone else’s coffee during a chai latte date with my friend Erica, picking up litter during a run at the park, leaving some kind notes in public places, and visiting the preemies at my local hospital {I was a preemie myself, born three months prematurely, and it is a birthday tradition to visit the parents of preemies in the NICU.} And of course I’m looking forward to spending time with my friends and family, eating yummy food, baking something delicious, and curling up with a good book or one of my favorite chick flicks!

Thank you for celebrating with me! I have a good feeling that it’s going to be one of my most special birthdays yet! 🙂

happy mother’s day!

I feel so blessed that I am able to celebrate my sweet, kind, beautiful, brilliant mama today!

We went for a morning walk at the beach, and now are relaxing on the couch. Later I’m making chili & corn muffins for dinner and pb cup brownies for dessert. Oh, and I whipped up some apple-cinnamon-oatmeal muffins for breakfast this week. YUM!

I hope it’s a restful, peaceful day for my mom — she deserves it! She works a full-time job managing her department at work, and my whole life she has been a living example that it is possible for women to have fulfilling careers AND be amazing, full-time mothers too! She is not just my mom, she is my best friend. We have shared so many fun memories, from hiking Mt. Whitney together when I was in high school to driving cross-country together when I moved to Indiana for grad school — plus innumerable shopping trips, girl talks, chick flicks, and lunch dates! I know I can call her anytime and she will always be there for me. I love you, Mom!

Hi everyone! Hope you are having a spook-tacular Halloween today! Halloween is Mike’s favorite holiday so we have been celebrating all week month long with pumpkin decorations, listening to Halloween Pandora stations, watching ghost-hunting TV shows and scary movies {that I try not to pay too close of attention to … I am a total wuss when it comes to creepy/scary things!} and of course lots and lots of pumpkin-inspired food. {I will be sharing some of my favorite pumpkin recipes next week for a special Pumpkin Week on this blog — stay tuned!}

My Halloween started off on a wonderful note last night when I came home to a package on my doorstep … and when I opened it up, I found the most beautiful bouquet of autumn flowers that my dad had sent to me for Halloween! It was such a sweet surprise! My dad always makes me feel so special and loved. I am a very lucky daughter. Now I get a huge smile on my face every time I look across the living room and see them on the table, brightening up the room!

Today I celebrated by making Halloween-themed cupcakes that I took in as treats for my freshmen students. {As I shared this summer, I tend to grow quite fond of my students and have a tendency of spoiling them with homemade baked goods.}

The best part about these cupcakes is the homemade chocolate frosting. I found the recipe on AllRecipes.com and tweaked it a little bit to use less butter but still taste rich and creamy. This frosting is a guaranteed way to make a box-mix cupcake taste gourmet and super special! These cupcakes could be decorated for any holiday or special occasion. I chose to decorate mine with candy corn for Halloween.

– 1 box yellow cake mix {I just used the Kroger brand that was on sale for $1}
– 3 eggs
– 1 & 1/3 cup water
– 1/3 cup vegetable oil or applesauce
– 1/3 cup butter or margarine
– 1/4 cup cocoa powder
– 1 tbsp vanilla extract
– 1 tsp cinnamon
– 3 cups confectioner’s sugar
– 4 tbsp half-and-half
– 1 small package candy corn

1. Preheat oven to 350 degrees. Prepare a cupcake tin with liners and set aside.

2. Bake cupcakes according to package directions. I combined my yellow cake mix with the eggs, water, and oil and beat with a whisk until the ingredients were well combined and the batter was smooth.

3. Fill each cupcake tin 3/4 of the way full and bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.

4. While cupcakes are baking, make the frosting. Melt butter in a small saucepan. Turn off the burner. Add cocoa powder and mix well; then stir in vanilla extract and cinnamon.

5. Pour sugar in to a large bowl. Add the chocolate mixture and the milk and stir until the frosting is smooth and creamy. It will be thick! You can add more milk or half-and-half if you would like it to be thinner.

6. Once cupcakes have cooled completely, frost each one with a generous amount of chocolate frosting.

7. Stick 3-4 candy corn pieces into each cupcake so their tops stick out decoratively.

Here they are all packed up and ready to go for my students!

Inspired by Deme at Fresh Coat of Paint to make use of what you have, I used a striped shirt and vest I already owned to dress up as a pirate. Anyone else using what they already have to dress up? Anyone make a homemade costume? One of my favorite-ever costumes was when I was a little girl, maybe four or five years old, and my dad helped me hand-paint cardboard butterfly wings that we tied to my shoulders with pink shoelaces. It didn’t cost us a single penny and I had so much fun preparing my costume, and when I wore it trick-or-treating I felt like the prettiest little butterfly! I still remember it vividly to this day. One of my favorite parts of Halloween is seeing all the creative, innovative and funny costumes!

incredibly easy pumpkin spice cookies

In honor of tomorrow being the Autumnal Equinox, or first official day of autumn, I decided to celebrate by baking these incredibly yummy — and incredibly easy! — pumpkin spice cookies.

I came across this recipe about a month ago on one of my favorite blogs, Peanut Butter Fingers — I absolutely love pumpkin desserts and pastries, so right away I was on board. Then, when I saw that all you need is TWO ingredients to make these cookies, I was amazed. I knew I needed to try out this recipe for myself!

These cookies are thick, moist, and full of pumpkin goodness. They were super delicious warm from the oven yesterday and they still tasted fresh when I had a few for dessert tonight. Plus, since there is no butter, oil, or even eggs in this recipe — and pumpkin is a great source of Vitamin A and C — these are pretty healthy as far as cookies go!

Whip up a batch of these cookies and enjoy a taste of autumn!

– 1 box of spice cake mix {I used Duncan Hines}
– 15 oz can of pumpkin
– chocolate chips, marshmallow, white chocolate chips, nuts {optional mix-ins for the cookies}

1. Preheat your oven for 350 degrees.

2. In a large bowl, dump the cake mix and pumpkin. It will look like this:

3. Keep stirring until the pumpkin and cake mix are fully combined. The batter will be thick! {This recipe doubles as a great arm workout, haha!}

4. Drop the pumpkin by spoonfuls onto a greased cookie sheet or onto a cookie sheet lined with parchment paper.

5. If you’d like, add chocolate chips, marshmallows, or nuts to some of the cookies. {I used white chocolate chips and semi-sweet chocolate chips in about half the cookies, and the rest I made plain.}

6. Bake 15-20 minutes or until cookies are firm in the middle.

Yummmm… ENJOY!
