Aaaand just like that, it’s Friday again! Where did this week go? I can’t believe how quickly it flew by.

Here are 5 things I’m loving right now:

1. My friend Janet is visiting! We’re both going to a writer’s conference in Seattle and she was able to book a flight to San Francisco to spend a couple days with me before we head to the conference together. She gets in tomorrow morning. We email and talk on the phone, but I haven’t seen her in over a year and I can’t wait to give her the biggest hug. We met in college while studying abroad in England {along with our dear friend Lauren, who lives in New York} and whenever I get together with these ladies it feels like zero time has passed at all. Lots of laughter and too much chocolate will invariably be happening in my life this weekend.

2. This song: “Happy” by Pharrell. It’s impossible for me to restrain my happy-dancing when this song comes on. So dang catchy! I think this could be the theme song for TGIF!

3. These flourless chocolate cookies from Two Peas & Their Pod. Nom nom! These babies are definitely on my baking agenda.

4. All the sweet and thoughtful people in my life. I am so blessed. Just a few examples lately: Melissa at church sent me an incredibly kind Facebook message. Kathleen invited me a comedy show and offered that I could stay with her overnight if needed. Holly texted me a happy note that got my week off to a great start. Ben left me a nice voicemail. {Ben, if you’re reading this, I’m sorry I haven’t called you back yet! This weekend!} Allyn took time out of his super busy schedule to send me recommendations for places to check out in Seattle, since he used to live there. Dana, a Bay Area native, took time out of her day to compile a list of fun places Janet and I can check out while she’s visiting. And I could go on and on… I am surrounded by amazing people who make me feel very loved and grateful.

5. These wise words from the always-wise Whitney: “A Letter to Myself at 22.” And this inspiring post from another one of my favorite bloggers, the always-inspiring Robyn: “nobody cares about your pant size.”

5 thoughtful gift ideas for valentine’s day {or any day}

Today I was browsing Target while waiting for Charley’s routine service appointment to be over, and one thing was very clear: Valentine’s Day is just around the corner! Yes, people — hard to believe, but it’s officially less than a month away.

I LOVE love and I love Valentine’s Day. I’m single this year, but that doesn’t mean I’m not going to be celebrating my little heart out. I don’t know about you, but I think the scope of V-day is often presented too narrowly. Why just focus on romantic love? To me, Valentine’s Day is a holiday that celebrates love in all its forms; an excuse to let all of those special people in your life know how very much they mean to you.

So today I’ve rounded up some thoughtful gift ideas for Valentine’s Day — or any day, really!

1. Personalized gifts. Anytime you can personalize something, I think it makes the gift that much more thoughtful. For my cousin Julie’s bridal shower, I ordered this beautiful blanket for her and her husband-to-be from Personal Creations. The company embroidered a corner of the blanket with their names and wedding date. It turned out beautifully and I could tell that the personalized touch made the gift even more special to Julie.

2. Homemade cards. As attested by my massive stash of stationary, it’s obvious that I love browsing stationary and greeting card stores. {I sometimes need to put myself on “probation” from buying anything, my habit gets so out of control!} But, for every adorable Taylor Swift greeting card I have saved up to send to Holly, there’s something to be said for homemade cards. Knowing that you put in extra effort to craft not just the personal message inside, but every aspect of the card, makes it extremely thoughtful.

3. Creative gifts or craft projects. Use your imagination and have fun with it! Pinterest and blogs are a wealth of ideas for homemade gifts and creative scavenger-hunt-type gifts. I discovered this clever poster idea last year on Peanut Butter Fingers and thought it was so cute, thoughtful {and easy to do, even if you don’t consider yourself very craft-savvy!}

4. An experience that you can share together. Try something new like a painting class, wine tasting, disco bowling night, a local concert — any fun new experience that you can share with the recipient is a sweet gift that builds awesome memories.

5. Homemade baked goods. Okay, maybe I just love baking! 🙂 But in my opinion, you can never go wrong with homemade treats. Last year I made red velvet crinkle cookies for the nursing home and they were a big hit. Here are some other recipes you might try:

Happy Sunday! I can’t believe it’s the beginning of another week … and that Christmas is only ten days away! I hope that your holiday season has an abundance of joy and laughter, and a minimum of stress.

I’m back home with my family for the holidays and it is soooo nice! On Friday night I went with my mom to her office holiday party, and we had a blast. They set up a “casino night” and we spent a large chunk of the evening playing black jack. It was my first time playing black jack, but luckily the dealer was very sweet and gave me hints about what I should do. {Apparently that doesn’t happen in Vegas! Haha.}

I’ve been busy preparing for my cousin Julie’s bridal shower next weekend. Longtime blog readers might be experiencing deja vu: last Christmas I threw a bridal shower for Julie’s sister, my cousin Amanda. That party turned out beautifully and a lot of fun was had by all. This year, it’s Julie’s turn!

The rest of the weekend has been spent running errands, wrapping presents, baking, decorating the house for Christmas, watching made-for-TV holiday movies, and goofing around with Mr. Murdog.

Now that Thanksgiving is over, it is officially beginning to feel like the Christmas season! I saw eggnog at the grocery store yesterday. I am not a straight-up eggnog fan … but eggnog frosting is a different story!

When I saw this recipe on Sweat Pea’s Kitchen for eggnog cookies, I immediately printed it out. Don’t let the cookie-and-frosting combo fool you: these cookies look fancy, but they are super easy to make. And I was blown away by how good they are! Even though I do not consider myself an eggnog drinker, I do now admit to being an eggnog consumer — in cookie form! 🙂

eggnog cookies {yields one dozen}

for the cookies:
1  & 1/8 cups whole-wheat flour
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp ground nutmeg
1 tsp cinnamon
1/2 tsp pumpkin pie spice
3/4 cup granulated sugar
6 tbsp unsalted butter, slightly softened
1 egg yolk
1 teaspoon vanilla
1/2 cup eggnog
1-2 tablespoons rum {optional}
for the eggnog buttercream frosting:
1/8 cup softened butter
1/4 cup eggnog {I used pumpkin flavored eggnog}
1 & 1/2 cup confectioners’ sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
1-2 teaspoons rum {optional}

1. Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper and set aside.

2. In a medium-sized bowl, whisk together flour, salt, baking powder, cinnamon, nutmeg, and pumpkin pie spice.

3. In a large bowl, cream the butter and sugar together. Add the egg yolk and vanilla and beat well. Finally, add the eggnog. Batter will be fairly thin.

4. Add the dry ingredients in increments and mix until well-combined.

5. Drop dough by rounded tablespoons onto the prepared baking sheets, leaving about 3 inches between the cookies. Bake for 20 to 22 minutes.

6. Allow to cool on the sheets for 2 minutes, then transfer to wire cooling racks to cool completely before frosting.

7. While cookies are baking, make the frosting: butter, eggnog, cinnamon, nutmet and powdered sugar until light and fluffy. Add more eggnog if needed to reach the desired consistency.

8. After cookies are completely cool, ice them with a small spatula or butter knife and sprinkle with ground nutmeg if desired.

my 3 fave ways to use chia seeds

In the past year, thanks to some of my favorite bloggers {I’m looking at you, Julie and Lindsay!} I’ve been introduced to a nutritional powerhouse: chia seeds! In just one tablespoon of chia seeds, you get six grams of fiber, three grams of protein, and 2.9 grams of Omega-3 fatty acids.

Here are three of my favorite, no-fuss ways to use chia seeds in my daily life:

1. Smoothies. Just sprinkle some chia seeds on top of your fruit and ice and blend away! A smoothie combo I’ve been loving lately is strawberry + banana + mango.

2. Salads. I love adding a tablespoon of chia seeds on top of my favorite healthy chicken salad.

3. Baked goods. Stir a spoonful of chia seeds into your muffin or bread batter — or hey, why not even try some in brownies, cookies or cakes? I just made a batch of chocolate-chip banana muffins with some chia seeds added in!

When the weather cools down a little, I know I’ll be switching out my breakfast smoothies for a warm bowl of oatmeal — another great dish to sprinkle chia seeds on! I’ve yet to try overnight oats but I’ve heard chia seeds are a crucial ingredient in helping the oat mixture thicken overnight. This and this are both on my “to try” list of recipes!

I have an easy recipe to share with you today — another winning gluten-free cookie!

– 1/4 cup butter
– 1/2 tsp baking soda
– 1/2 tsp baking powder
– 1/2 cup brown sugar
– 1/2 cup agave or maple syrup
– 3 cups gluten-free rolled oats
– 1 cup chocolate chips
– 2 eggs
– 1/2 cup chopped walnuts
– 1 tsp vanilla
– 1 cup peanut butter

for chocolate drizzle:
– 1/2 cup chocolate chips
– 2 tbsp butter

1. Preheat oven to 350 degrees and line a cookie sheet with parchment paper.

2. In a large bowl, combine brown sugar, agave/maple syrup, and butter. Beat until creamy.

3. Add the eggs, vanilla, baking soda and baking powder and beat well.

4. Add peanut butter and mix.

5. Stir in oats, chocolate chips, and walnuts.

6. Drop by rounded tablespoons onto baking sheet and bake 10-12 minutes until lightly brown around edges.

7. To make chocolate drizzle: microwave chocolate chips and butter for 20 seconds. Stir until chocolate and butter and melted and well-combined, microwaving more if needed. {Be careful not to burn the chocolate!}

8. Once cookies are done, let them cool and then drizzle with melted chocolate.

Enjoy! I love these with a big glass of milk!

I can’t remember if I mentioned it on the blog yet, but my brother has recently started eliminating gluten from his diet, so I’ve been experimenting in the kitchen to see if I can come up with some yummy gluten-free treats! Here is a recipe that went over well in my household. Hope you enjoy!

gluten-free pumpkin oatmeal chocolate-chip cookies

– 2 cups gluten-free oats
– 1 egg
– 1/4 cup maple syrup or agave
– 1 (15 ounce) can pumpkin puree (not pumpkin pie)
– 1 ripe banana, mashed
– 1/2 cup peanut butter or almond butter
– 1/2 cup ground flaxseed
– 2/3 cup dried cranberries
– 1/2 cup chopped walnuts
– 1 tbsp cinnamon
– 1 tsp pumpkin pie spice
– 1 tsp vanilla
– 1 tsp baking soda
– 1/4 tsp salt
– 1 cup chocolate chips

1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.

2. Beat the egg. Stir in maple syrup, mashed banana, peanut butter, pumpkin puree, and vanilla. Mix well.

3. In a separate bowl, mix together the dry ingredients: oats, ground flaxseed, cinnamon, pumpkin pie spice, baking soda, and salt.

4. Slowly, add dry ingredients to wet ingredients, and stir until combined.

5. Add chocolate chips, dried cranberries, and walnuts, and mix well.

6. Drop batter by rounded tablespoons onto baking sheet. Bake for 10-12 minutes, until cookies are set in the middle and browned at the edges.

Kitchen Tip Tuesdays: 3-ingredient banana cookies

Hi everyone! Time for another Kitchen Tip Tuesdays post! {Here are links to my previous posts about making the most of oven time and reusing leftovers in new recipes.}

I have a quick recipe to share with you today — it’s an easy and delicious cookie that is also healthy for you! And it only has three ingredients {one of which is chocolate!} 🙂 That’s my kind of recipe!

This would make the perfect sweet dessert, kid-friendly snack, or grab-and-go breakfast. It’s also a great way to use up spotty bananas before they go bad.

All you need to make these babies are:

  • 2 bananas
  • 1 cup rolled oats
  • 1/4 cup chocolate chips {if desired; I used mini chocolate chips for mine}

1. Preheat oven to 350 degrees.

2. Mash bananas in a bowl. Add oatmeal and chocolate chips and stir until well combined.

3. Plop dough onto a greased cookie sheet {I greased mine with coconut oil} and bake for 15-18 minutes.

Done and YUM! How easy is that?

This recipe is also easily customizable to suit your tastes! You can add chopped nuts, raisins, peanut butter, coconut … whatever your taste buds desire!

year of kindness challenge: week 12

Hi, everyone! Hope your week is off to a good start.

Last week’s kindness challenge was to thank someone in a genuine and meaningful way. I wrote three thank-you notes to friends, and I also tried to be extra-aware of the many small kindnesses and smiles that people give me in everyday life. For every “Thank you!” I said, I tried to fill my words with genuine warmth and gratitude. And, whaddaya know? Just that simple awareness made me feel more grateful.

This past week’s challenge also got me thinking about the various people in the community who are there, keeping me safe in the event of an emergency … which inspired this week’s act of kindness: The Week 12 Kindness Challenge is to deliver something sweet — coffee, cookies, baked goods, etc. — to your local fire station.

red velvet crinkle cookies

As promised, here is the recipe for the cookies I made last week for Valentine’s Day. They look fancy but they are super easy to make and are absolutely delicious. If you’re a fan of red velvet cake, you will love these cookies!

you need:
– one box of red velvet cake mix
– 2 large eggs
– 6 tbsp butter
– 2 tsp lemon juice
– 1/2 cup powdered sugar or confectioner’s sugar
– 1 tsp cornstarch

directions:

1. Preheat oven to 375 degrees Fahrenheit and line a cookie sheet with parchment paper.

2. Melt butter; set aside to cool.

3. In a shallow dish or pie tin, sift together powdered sugar and cornstarch.

4. Combine cake mix, eggs, butter and lemon juice. Dough will be slightly crumbly {and bright red!}

5. Shape dough into 1-inch balls and roll them in the powdered sugar until well-coated.

6. Bake for 9-11 minutes, until edges are set. The centers might look slightly undercooked, but they will harden as they cool. If you like your cookies chewy in the middle, I’d recommend taking them out after 11 minutes! {The recipe I found also emphasizes only cooking one sheet of cookies at a time.}

7. Top the cookies with more powdered sugar if desired.

And that’s it! The cookies will stay fresh for up to a week if stored in airtight containers. {You might want to use wax paper to separate the layers so they don’t stick together.}
