goals + meal-plan for the week of 8/11

Happy Sunday! I can’t believe how quickly this week flew by. I got to enjoy a lot of friend & family time this week, catching up with some old friends I haven’t seen in a while and grabbing brunch with my Gramps … nothing makes me feel loved and happy like nice long conversations with the people I love! Yesterday I taught a successful College & Scholarship Applications Seminar, which was a lot of fun.

On Friday night, my parents and I went to happy hour at an amazing local Japanese restaurant and then we saw the new Woody Allen movie “Blue Jasmine” … it is intense but very good! I thought Cate Blanchet’s performance was absolutely stunning. The only annoying thing was that the person sitting behind my mom kept tapping his foot throughout the entire movie to the jazz score … it  was so distracting! Have you ever had an annoying experience at a movie theater?

Here’s how I did on my goals from this past week:
– finish rough edits on first half of YA manuscript draft {this got pushed back a little due to preparation for my College & Scholarship Application Seminar}
complete the #yearofkindness challenge
– promote my College & Scholarship Application Prep Seminar & teach a successful class on Saturday
volunteer at the Food Pantry
work-out/do yoga at least three times

And here are my goals for this upcoming week:
– finish rough edits on first half of YA manuscript draft
– complete the #yearofkindness challenge
– get together with two friends
– create a flyer advertising my tutoring services
– clean out my email inbox
– volunteer at the Food Pantry
– work-out/do yoga at least three times {including my Weds. zumba date with Emily!}

Finally, here are some recipes I’m hoping to try this week:

Happy Friday, everyone! I have a short post for you today, one that I meant to share a long time ago but it somehow got lost in the shuffle. As we’re nearing the end of summer wedding season, I thought it might still be applicable!

As you might remember, my dear cousin Amanda got married back in June. I was unsure what to wear to the rehearsal dinner, and ended up going with a classic long dress, a simple sweater, and flats. I got this dress on sale at Macy’s — now is the perfect time to score great sales on end-of-season summer dresses! Dresses like this can easily be adapted to autumn or winter weddings if you just add some tights and a heavier sweater/coat!

how to avoid regrets

I recently read an article about the top 5 deathbed regrets that I found through Danica’s wonderful blog It’s Progression.

Here are the questions the article left me with:

  • How can I let go of the expectations of others, and live a life true to myself and my own dreams?
  • How can I create a life of meaning and purpose?
  • How can I build better relationships with friends and family?
  • How can I design my life so that I’m happy and flourishing?
  • How can I express my authentic self more fully?

I’ve been doing a lot of thinking and journaling on these questions lately. For me, a key realization has been shifting my thoughts from what I should be DOING in order to live a happy life, to how I should be FEELING in order to live a happy life — in other words, what feelings combine to make up my “happy.” The feelings that keep coming up for me are: feeling loved, feeling helpful, feeling connected, and feeling inspired.

So now, I’m trying to organize what I DO and how I spend my time into activities and goals that most manifest those feelings that make me happy. Writing makes me feel inspired. Spending time with family and friends make me feel loved. Reading makes me feel connected. Volunteering at the food pantry makes me feel helpful. And so on …

I’ve also often heard the advice, “You are more likely to regret what you DON’T do than what you do.” This advice inspires me to try new things and not let fear keep me from going after what I want. On the other hand, however, I need to remind myself not to take this advice to the extreme; if I say “yes” to every opportunity that comes my way, I’ll be left feeling burned-out and stressed. Also, once I make a decision not to do something, I don’t want to look back and wonder what had happened if I had taken a different path. You can’t go back and change the past, so I don’t want to waste any time wishing or regretting what’s already done!

On a related note, I absolutely loved the latest issue of Real Simple magazine — there is a feature article titled “Live Long and Prosper” that features advice from eight centurions. Check it out!

My favorite was this advice from Justina Sotomayor {pictured below} on how to live a long, healthy life: “Be lovable. I’ve lived a long life because there are so many people who love me.”

This advice from Haruo Ito is lovely in its simplicity: “Sleep well, try not to worry, and enjoy good dreams.”

So, those are my thoughts of the moments on avoiding regret and trying to live the fullest, happiest life possible. What do you think? What is the best life advice you’ve ever received?

We went on an eight-mile hike today, our longest thus far. And — guess what? — I actually felt pretty good! There was a lot of steep uphill, and I was breathing hard, but I was able to keep going at a fairly fast pace and my legs weren’t as sore as they usually are. I can feel myself getting stronger. Plus the wildflowers were in bloom and the sky was a gorgeous, clear blue, and I felt truly in touch with nature. There is something about hiking up to a deserted clearing, and looking out at the greens and browns and blues of the world below you, and breathing in the crisp, cold mountain air that just makes you feel so alive.

It’s still three weeks until our summit attempt of Mt. Whitney, but Mom is already starting to get all our supplies ready. We are taking two medium-sized backpacks, each filled with enough food and water to feed a family of five! But I guess it’s good to be prepared. As Mom always says, “Better safe than sorry — or thirsty!” The last thing we need is to be stuck on Whitney without enough provisions.

However, as I learned firsthand, water is heavy. Today I loaded up my backpack and put it on to test the weight … and I nearly fell over backwards! How am I ever going to carry that thing twenty-two miles?? At least it will gradually get lighter as I eat and drink during the journey.

Saturday, July 19

Today we went on our last real training hike. We will taper off this week to allow our bodies to recover and build up energy for the real thing. It’s crazy to think that at this very time next week, we’ll be climbing Mt. Whitney! We’ve been preparing for so long, yet I can’t believe The Big Day is almost here.

my 3 favorite ways to use sauteed spinach

Spinach is SO good for us. This superfood is high in fiber, antioxidants, cancer-fighting flavonoids, vitamin A and vitamin K — promoting healthy bones, skin, vision, brain and nerve function. {Read more here.}

I always put a handful of raw spinach into my smoothies {I promise, you can’t taste it!} and lately I’ve started sauteeing spinach and using it in many of my favorite recipes. To sautee baby spinach, simply spray a frying pan with a bit of olive oil, add minced garlic if desired, and cook the spinach for 3 to  5 minutes on medium-low heat, until the leaves are wilted.

Here are my top 3 favorite ways to use sauteed spinach {other than as a side by itself, which is also de.li.cious!}

1. Atop a veggie pasta bowl. I love to layer a bit of brown rice pasta, some roasted veggies {zucchini, bell pepper, tomatoes, yum!}, sauteed spinach, and then top the whole she-bang with tomato sauce and a sprinkle of feta cheese. NOM!

2. Wrapped up inside an enchilada. This would be the perfect way to sneak more veggies into a non-veggie-lover’s diet. I layer some sauteed spinach on top of the ground turkey mixture, pour on some sauce, wrap it up and pop it in the oven to bake.

3. In my morning scrambled eggs. One of my favorite combos of the moment is sauteed spinach, avocado, onion and chicken sausage. A great power-breakfast to get your day off on the right foot!

Hi, friends! How has your Monday been? Mine has been productive and happy so far. Lots of fruits & veggies eaten; a great convo with my brother about his awesome first day of business school; many rounds of fetch with Mr. Mur-dog; some yoga & a sunny walk; and chugging along nicely on various writing projects. Woo-hoo! Now time to get dinner started — I’m thinking a veggie-filled pasta bake — and maybe a glass of wine, too…

This past week’s kindness challenge was to go to a playground {or any place where children congregate} and scatter a handful of “lucky pennies” for happy kids to find. I walked to my neighborhood park and scattered a dozen pennies around the playground and sidewalk. I was planning to take some pictures on my phone, but there were people around and I didn’t want to seem creepy. But it made me happy to think of the little kids finding lucky pennies all around the park! 🙂

This week I also came across a neat kindness website, helpfromhome.org, with the slogan: “Change the world in just your pyjamas!” Doesn’t that sound nice?? The website is loaded with “micro-volunteering” opportunities that are designed to fit into busy lifestyles. There are also platforms to track your actions and hours logged. Check it out!

The Week 31 Kindness Challenge is to send someone a postcard with a healing, empowering, or comforting message. Pick a postcard from your hometown, a place you went on vacation, or maybe somewhere you’ve always wanted to visit. You could even create your own postcard by collaging pictures and words from magazines. If you need someone to send your postcard to, mail it to Traveling Postcards, a nonprofit that will distribute it to a woman somewhere in the world who is working to overcome violence and oppression.

Happy weekend, friends! Hope yours is going splendidly! What have you been up to these first days of August? {Wow, can you believe how fast summer is galloping by??}

My weekend has been lovely and relaxing, filled with the usual weekend stuff: grocery shopping with Mom, cooking and baking, visiting Gramps, long walks with Mr. Mur-dog, church this morning. Also Friday night happy hour margaritas with the fam, fro-yo with extra Reeses toppings, jeans shopping at the mall {something I have been dreading and putting off for weeks, but I reeeaaally needed new jeans, and I emerged victorious with two new pairs of Levis, yippee!} And today we are driving down to USC to visit Greg for an early dinner! I am SO excited to see my brother and give him a ginormous hug! I miss this guy LOADS.

my first time doing zumba!

On Wednesday, I went to my first-ever zumba class after my friend Emily invited me to join her at a local dance studio. I had never tried zumba before, though I had heard plenty of great things about it. All I knew was that it was supposed to be fast-paced, fun, and involved dancing.

I was a little nervous {and a lot intimidated} because while I enjoy dancing with groups of friends, I’ve never had much rhythm. Pretty much the only dancing I do on a regular basis is morning pajama dancing with Mr. Mur-dog:

Have any of you done zumba before? Any zumba novices like me out there? Here are some questions I had before my first zumba class, followed by answers based on my experience:

What is zumba?
Zumba is a Latin-inspired dance-fitness program that blends red-hot international music and fun, heart-pumping dance steps to form a “fitness-party.” The website of the local zumba center I attended has a great breakdown of the different types of zumba: http://venturazumba.com/ventura-zumba-about/

What should I wear to do zumba?
I wore capri yoga pants, a sports bra and t-shirt, and running shoes. Wearing some sort of athletic shoes is a must, and I would also advise you wear clothes that you feel comfortable in! You will get HOT and sweat a lot! Some other participants were wearing shorts and one woman wore a loose-fitting skirt.

What if I don’t know any of the dance moves?
Many of the dance moves were super easy to catch on to. You can also look up zumba videos on youtube if you want to do a little research before you go! The inevitable times in class when I felt a little lost, I just danced in place myself. The important thing is to keep moving, keep smiling, and keep having fun! After class, Emily and I asked the instructor for clarification on a couple moves we were confused about. She sweetly showed us, and she said that the easiest way to learn all the moves is to keep coming to class — you get better and more comfortable each week.

What if I feel self-conscious about dancing?
This was what I was most worried about — I’m a little bit a lot awkward on the dance floor, and I was worried that I would totally embarrass myself {not to mention my friend Emily!} and feel self-conscious the whole time. I pictured myself turning the wrong way and bumping into people. But once the class started, I didn’t feel self-conscious at all. Everyone is so focused on their own moves and on the instructor that nobody is paying attention to your dance moves. I tried to copy what the instructor was doing, and in my own pretty little head I was busting moves like Beyonce!

Is zumba a good workout?
YES! Your heart is pumping, your muscles are working, you are sweating like crazy! In the class I went to, we did a ton of squats as well as dance moves that worked our arms and shoulders. I woke up and was so sore the next morning! Definitely a sign of a good workout. Plus, the time flew by — it was the most fun I’ve had working out in a long time.

If you try a zumba class and aren’t thrilled, my advice would be to try again with a different instructor. {Actually, that would be my advice for any type of exercise class you try out!} I felt comfortable with our instructor immediately — she was funny, high-energy, and very encouraging. She also created a very welcoming space for beginners so it was the perfect class for me. Emily has done zumba before, and she said some of the other instructors are more fast-paced or less explanatory; every instructor has their own style. I feel like I lucked out on the ideal instructor for me.

Em and I have set a weekly zumba date for Wednesday mornings. I’m already looking forward to next week!

I just got back from my first training hike! Mom says we are lucky to live in Southern California near the beach and foothill mountains because there are so many great hiking trails nearby. I guess she’s right, but right now I don’t even want to think about getting up at 6 a.m. next Sunday and doing the same thing all over again! Today we only hiked for two hours, and I’m in pretty good shape from running cross-country and track for my high school, but it seemed like for-ev-er. And, to be honest, there wasn’t even that much uphill! Climbing Mt. Whitney in one day is supposed to take at least fourteen hours — the first eight of which will be spent hiking up, up, up the mountain. Right now, that seems so impossible!

Saturday, May 31
Mom and I went to Patagonia today to look for hiking boots because she thinks we should break them in a little during our hike tomorrow morning. I found a pair that is pretty comfortable, and I got some hiking socks, too. We also each bought a walking stick, which hard-core hikers say are invaluable, especially when climbing mountains like Whitney. They provide leverage going up the trail and make the constant pounding of going downhill easier on your body by bearing some of the impact. Also, very importantly, they can help prevent you from slipping and falling on rocky and dangerous trails.

Still, a part of me thought the cashier might laugh at us when we went up to purchase the hiking sticks. I felt like an old lady buying a cane. But I shouldn’t have worried: the cashier smiled and asked if we’re preparing for a specific hike. When we told him we’re going to climb Whitney, his eyes grew wide and he looked impressed. “Wow, you’re serious hikers, then!” he said. “Good luck!”

Walking out of the store, my heart swelled with pride and excitement. Me, a serious hiker! Hopefully in a couple months I’ll be able to go back to that store and tell him we made it to the top.

Thursday, June 13
Now that we are “serious hikers” Mom has been going to all the local outdoors-y stores and talking to people about Mt. Whitney. She’s managed to come across a few other hikers who have made it to the top and is soaking up their advice like a sponge. She also found a book, How to Climb Mt. Whitney in One Day, that I’ve been reading. Maybe it’s just me, but the author makes climbing Mt. Whitney seem really scary! She says that for the last mile, every step will be a struggle, and you will feel dizzy and nauseous while hiking only a few steps away from hundred-foot cliff-drops. For someone like me who is so afraid of heights that even the Ferris Wheel makes my insides do cartwheels, maybe this isn’t such a great idea after all …

But then I think about Julianna’s photos from the top. I really want to be there. I really want to see that view for myself.

Caitie J. put together such a great package for me! Here’s a description of the items, clockwise from bottom left:

  •  Caribou Coffee Mint Verbana tea: caffeine-free — so perfect for before bed!
  • Caribou Coffee Cinnamon Spice tea: Caitie calls this the “BEST. TEA. EVER!” and I have to agree, it is pretty darn good! I liked steeping it in milk for an extra rich breakfast treat.
  • Merci fancy chocolates: these were AMAZING! Caitie wrote in her note, “I came across these at a store in London & was excited to find them at my European foods store near my house. I just love them!” Not only is there a variety of delicious chocolate combinations, I also thought the little wrappers were adorable. 🙂
  • Biscoff cookie butter: the perfect creamy topping for toast, apples, crackers, pretzels … this stuff is addicting!
  • Twinings Classics Black Tea Variety Blend: I have been sampling these black teas for breakfast every morning and I think the Lady Grey and Irish Breakfast teas are my favorites!
