happy mother’s day!

I feel so blessed that I am able to celebrate my sweet, kind, beautiful, brilliant mama today!

We went for a morning walk at the beach, and now are relaxing on the couch. Later I’m making chili & corn muffins for dinner and pb cup brownies for dessert. Oh, and I whipped up some apple-cinnamon-oatmeal muffins for breakfast this week. YUM!

I hope it’s a restful, peaceful day for my mom — she deserves it! She works a full-time job managing her department at work, and my whole life she has been a living example that it is possible for women to have fulfilling careers AND be amazing, full-time mothers too! She is not just my mom, she is my best friend. We have shared so many fun memories, from hiking Mt. Whitney together when I was in high school to driving cross-country together when I moved to Indiana for grad school — plus innumerable shopping trips, girl talks, chick flicks, and lunch dates! I know I can call her anytime and she will always be there for me. I love you, Mom!

Crystal at Money-Saving Mom is hosting a Clutter-Busting Challenge in which she is getting rid of {throwing away, selling or donating} at least 7 items for every single day of May. She is inspiring loads of others to do the same, including me! 

I already did a lot of clutter-busting last month when graduated from Purdue and moved from Indiana to California … the move was the fire-under-my-butt motivation to sort through my various papers, knick-knacks, books, clothes, kitchen supplies, etc. and decide what was worth taking with me. I ended up donating and selling everything except for the clothes, blankets, books, and important papers that fit within five suitcases and a few big shipping boxes. 

When I arrived home, I had another opportunity to clutter-bust: my bedroom at home {which my parents have been sweet enough to leave as-is during my time away… it hasn’t been converted to a home office, at least not yet!} There were books and papers and random STUFF that had accumulated during winter breaks and summers at home and that I hadn’t gone through in years. 

After a few days of sorting, I am proud to share with you the big pile of stuff that I am getting rid of!

I took the clothes/shoes/purses to Goodwill and donated the books to my local library. Not only does it feel good to purge your life of unnecessary items, I also love imagining the person who will enjoy each item in its next life!

Hi friends! Here’s to a new week! Hope your Monday is off to a fantastic start!

I had one of those restorative, rejuvenating weekends … slept well, made homemade enchiladas and my special California white chicken chili, 3-hour coffee date with my friend Erica, long visits with my Gramps, quality reading time, yoga, fro yo with Mom, some lovely walks, and a thought-provoking sermon at church where I was welcomed home with open arms. Life is good and I feel so grateful and blessed!

Last week’s kindness challenge was to pick up litter! I went on a walk at one of my favorite spots, the path in my neighborhood that winds along this beautiful barranca and lemon orchards.

On my walk I had another opportunity for kindness: one of the sprinklers on the path was broken and gushing up a ton of water, like a geyser. As soon as I got home, I called the city parks service and let them know, and they promised to get on it right away! Hopefully we saved some water from being wasted!

organizing your car’s glove box

Happy Friday, everyone! I have a quick and easy organizational project for you today!

Remember a few months ago, when I posted about making the most of long car rides? I mentioned how I like to bring small projects I can do in the car, like knitting or bill-paying or even cleaning up the clutter that’s accumulated in the car.

Well, during one car ride I brought a small accordian file folder {from the $1 section of Target — I’ve used similar folders to organize my stationary and take-out menus!} and I organized the glove box while I sat in the passenger seat. Now all the important auto-related documents are together and accessible in one easy-to-find place!

All you need for this project is some sort of small file folder and a pen to label each section. I made sections for important documents like the car registration and insurance, instruction manual, receipts from maintenance, etc. I also included a map of the area and a notepad and pen.

When I was done fitting the documents inside, the file folder closed up and fit perfectly in my glove box. Hooray!

Now I feel better than ever hitting the road, knowing that I have all my car-related documents in one easy-to-find place! This is a great example of a simple, quick, inexpensive organization project that makes your life easier and less stressful.

Hello from California! I have moved back to my home state after finishing up my last semester of grad school, and it feels so nice to be back home in the sunshine with my family!

Last week flew by as I tried to get all my stuff packed up, my furniture sold on Craigslist, my apartment cleaned out … not to mention saying goodbye to the wonderful friends I made at Purdue! I was glad that the kindness challenge this past week was to focus on smiling at everyone you meet, because I was sad about having to say goodbye to people I love, and the extra smiles were a big boost that got me through an emotional week.

My mom was so sweet and took off work the whole week to stay with me and help me get ready to move. We worked hard all day and in the evenings had a great time cooking dinner to use up the food left in my pantry, drinking wine and watching marathons of Friday Night Lights. I am a lucky daughter!

Here are some other kind acts I am grateful for that happened this past week:

  • my friend Terrance helped carry carried all by himself two heavy boxes of my stuff to ship home via UPS
  • my friends Shavonne and Tiffany gave me rides to the store and a professor’s goodbye party after I had sold my car and didn’t have transportation
  • my aunt Annie left a sweet message on my voicemail just checking in to see how I was doing
  • a group of students on Purdue’s campus were passing out free popcorn to boost spirits during finals week
  • I received a nice email from one of my students thanking me for “being a great teacher”

The Week 17 Kindness Challenge is to fight back against the litterbugs! Go on a walk at one of your favorite spots, bring along a plastic grocery bag, and pick up every piece of trash you see. Another option would be to challenge yourself to pick up at least one piece of litter every day this week. Or do both! 🙂

Happy Wednesday, everyone! Sorry I’m a little late posting this — hope your week is going fabulously. Mine has been fantastic and busy! My family and best friend Holly were in town for my thesis reading — a special night that celebrates the graduating class of the MFA program, where all the graduates get a chance to read from their thesis in front of a supportive audience of friends and family. I felt so blessed to have my family there with me — it was amazing of them all to come out to Indiana to celebrate. I loved introducing them to my friends and professors in the program!

Perhaps the most treasured part of the night for me was actually not when I read from my thesis, but right before I got up to read. Every graduate asks one person from the program to introduce them before their turn to read, and I asked my close friend Terrance, who I have worked on the literary journal with as fiction editors the past two years. Terrance is one of the funniest people I know, and I expected his introduction to be filled with jokes and friendly teasing. There were definitely some laughs, but I was surprised when his introduction was mostly serious and heartfelt. He told a story about an incident two years ago that I had nearly forgotten, when he was printing out copies of a big 15-page report for class and forgot to click on the button to collate them. He was on a time crunch and said he was close to tears as he spread the various pages out on a table and began to gather them up in the right order and staple them together.

I remember walking into the grad lab that day and seeing Terrance surrounded by papers, furiously shuffling and gathering and stapling. At that point, we were not fiction editors together and didn’t yet know each other very well. Still, I could tell he was stressed out, and of course I offered to help. I have a fond memory of us stapling and gathering and shuffling the papers of his report, talking about school and writing and teaching, and in just a few minutes the task was done and he made it in time to his class. In the ensuing months, there have been many times he helped me in similar ways — it’s just part of being friends.

But Terrance remembered that day. For me, it was a small, simple act, but to him it meant a whole lot — so much that he shared the story in my thesis introduction. It brought tears to my eyes, and it also was a powerful reminder of the profound effects of kindness. Even small, everyday acts of kindness can touch others greatly and create ripple effects of kindness that spread out further and further.

Last week’s kindness challenge was to simply spend meaningful time with someone else you otherwise might not see. I had a wonderful time with this challenge! I went for a long walk with one friend I had lost touch with, had coffee with another acquaintance, and spent an evening playing board games with two friends from my program who I will miss when we all leave soon.

The Week 16 Kindness Challenge is to smile. Smile at everyone you meet. Smile at strangers you pass in the hallway, smile at cashiers when you purchase things from a store, smile at your waiter in a restaurant. I think it is easy to forget the power of a smile to brighten the days of others. {And I’m willing to bet the world will smile back at you many times over!}

Kitchen Tip Tuesdays: organizing recipes

With so many great recipes out there — magazines, blogs, and don’t even get me started on Pinterest! — my recipe folder was getting a little out of control. Let’s be honest, it was pretty much a disorganized pile of recipes I’d printed or  torn out of magazines, shoved into a two-pocket folder, and then forgot about because sifting through the pile was too intimidating.

No longer! I finally got my recipes organized. There are many different systems that people use successfully, but mine was inspired by this pretty box:

It originally held greeting cards, but I glued on a new label and ta da! Now it holds recipes!

It is a mini version of a file box. All I had to do was determine how I wanted to divide up my recipes, and then make labels accordingly. Here are the labels I ended up with:

  • Meal planning
  • Breakfast
  • Appetizers
  • Salads
  • Soup & chili
  • Side dishes
  • Pizza
  • Mexican recipes
  • Asian recipes
  • Italian recipes
  • Seafood
  • Meat & poultry
  • Cookies
  • Other desserts
  • Gift ideas {for food-related gift recipes}

I wrote the labels out on small pieces of paper and then paper-clipped them to the dividing tabs … I think the paper clips add a nice pop of color, and I also like that I can easily swap out the labels if I want to, allowing this organization system to grow and change along with me and my recipe stash!

I feel so much more excited to cook and try out all these new recipes! And my organization system is easy to add to with any new dishes I come across. This system is pairing well with my meal-planning whiteboard. My next goal: Sunday food prep! {Inspired by Lindsay @The Lean Green Bean.}

Hi everyone! I have a simple, delicious and healthy recipe to share with you today. This meal is simple to make, easily adaptable to your preferences, and is bursting with fresh veggie flavors! Hope you enjoy!

– 1/2 box whole-wheat pasta {I used rotini}
– 1 yellow squash
– 1 green bell pepper
– 2 roma tomatoes
– 1/2 sweet onion
– 1 cup fresh baby spinach
– 1 tbsp minced garlic
– a drizzle of olive oil
– your sauce of choice {I used a combination of tomato sauce & pesto}
– 2 cups shredded cheese {I used an Italian blend}

1. Preheat oven to 350 degrees.

2. Bring a pot of water to a boil and cook the pasta according to package directions.

3. Chop and dice the veggies. Toss them in olive oil and saute them in a large pan on medium heat, until onion and garlic are fragrant and spinach is wilted.

4. Drain the pasta and pour cooked noodles into a large casserole dish. Toss with sauce and veggies until everything is well mixed.

5. Top with shredded cheese.

6. Bake for 15-18 minutes, until cheese is melted and bubbly.

Serve and savor! This is one of those recipes that makes terrific leftovers, too!
