marvelous monday: grocery store surprises

Happy Monday, everyone! I hope your Thanksgiving weekend wrapped up well and that you made it home safe if you were celebrating out of town. I am happy to report that Mike and I arrived back safely in Lafayette last night, with enough time to hit up the grocery store, do a bit of work, watch an episode of Arrested Development, put all of our clean laundry away {thanks, Mike’s mom, for letting us do laundry in your lovely machine instead of having to trek to the quarter-eating machines in our apartment complex!} and even put up a few Christmas decorations. The wreath is on our door and my mini tree is on display!

Sometimes it’s the smallest things that add a big smile to your day. I love surprises, and one of my favorite things is to discover a new treat when I’m browsing the grocery store. Look what I found last night:

PUMPKIN SPICE ENGLISH MUFFINS!

I know we are transitioning from autumn into winter, but I remain pumpkin-obsessed. And I’m okay with that!

I enjoyed every bite of a pumpkin spice English muffin for breakfast, half smeared with chocolate peanut butter and the other half with regular peanut butter. I can’t decide which topping I like better. I also want to try cream cheese. I might have to eat another one for a snack later to do further research! 😉

saturday upsides: even chores have silver linings

Happy Saturday! I can’t believe how quickly this Thanksgiving weekend is flying by. We’re having a wonderful time visiting Mike’s family, and it’s been a nice mix of productive work time, relaxing lazy time, Christmas shopping time, family time, and of course eating yummy food time! I need to do a bit more grading before we head back to school on Monday … I tend to put grading at the bottom of my to-do list {maybe because I really dislike giving bad grades and sometimes I simply have to.} The great students more than make up for it, though. Which brings me to my topic for today’s Saturday Upside, linked up with Bonnie at Recipes Happen:

We all have those chores we don’t like to do, those small tasks that we procrastinate on. For me it’s grading and cleaning the bathroom. Mike really dislikes doing laundry. Another friend of mine hates doing the dishes.

But the thing I’ve learned about procrastinating is that it just makes the dreaded chore bigger than it needs to be. It gives it power by letting it take up your brain space. The dread of what needs to be done later taints the present time, which is time spent doing other things you do enjoy. And then, when you finally do get around to completing whatever it was you were procrastinating on, don’t you often think, I guess that wasn’t so bad/didn’t take so long/wasn’t as difficult as I was expecting? It happens to me a lot. It would be so much better if I would just bite the bullet and complete the chore before the procrastination lethargy settles in!

Something that helps me is to try to find the silver lining even in life’s chores. Maybe that means putting on my favorite new CD or Pandora playlist and dancing while I clean the bathroom. Mike folds laundry while watching one of his favorite TV shows. Even washing the dishes could be time spent daydreaming about your dream vacation or mentally plotting out your Christmas list or listening to an intriguing podcast or audiobook. Hate to exercise? Call a friend and have a catch-up chat while you walk around the neighborhood. Or power-walk around the mall while you window-shop!

“Silver linings” can also be mini-rewards you give yourself. Like I said, I have lots of terrific students, and I often save the papers from my best students for the end of my grading stack, as a little reward for me at the end. {It always makes me so happy and proud to see my students trying their best and shining with their work!} Maybe you could break chores up with little treats: a good cup of coffee or tea, a chapter of the great book you’re reading, a square of dark chocolate, a game of fetch with your dog, a phone call to a friend. It also helps me to think about the end goal of whatever I’m doing: the students I hope I am helping become better writers, for example; or how important it is to keep the bathroom clean and wiped down to stay healthy, especially during the winter cold/flu season!

And sometimes it helps to get down to the basics: if I feel annoyed at having to clean my apartment, I’ll remind myself how lucky I am to have a place to call my own. On those days I don’t feel like getting up and going to work, I think instead about all the people who are trying so hard to find work, and how lucky I am to have a job to get up and go to!

Happy Black Friday, everyone! Did you go out last night to score crazy deals? Are you shopping online right now in your PJs? Mike & I braved Walmart for a Christmas present for a special someone I can’t disclose for obvious reasons, but I will just say we got a good deal! It was my first time going to the stores on Black Friday and it was actually a lot of fun. We brought books and just read and chatted and people-watched for a few hours waiting in line. Luckily the store was open, so we were waiting in line in the warmth of the store. I’ve heard horror stories about people going crazy on Black Friday and trampling each other, but the people we were waiting in line with were all very nice and considerate. There was a fun holiday atmosphere and I actually had a lot more fun than I expected to!

Today I’m participating in the “What I Wore to Thanksgiving” link-up over at Camp Patton.

I wore my go-to autumn skirt {you might recognize it from my first day of school outfit this year} paired with a silky pink blouse I got a couple years ago when I won the “Best of You” award from Glamour magazine and was given a photo shoot. It was one of the coolest experiences of my life — I felt like a princess! I’ll have to do a whole post on it sometime.

In real life I never wear much make-up, so this photo feels like an alternate-reality version of myself! Whenever I wear this shirt, I think of that weekend and get a jolt of confidence. It’s the perfect shirt to wear when I have first days of school jitters, a big interview, or yesterday when I was meeting some of Mike’s relatives for the first time! They were all very sweet and welcoming to me. I guess the shirt’s magic worked! 🙂

I finished the outfit with a red belt, grey tights, a black cardigan, and black-and-gray flats.

I’m currently in my pajamas {yes, it’s past noon in Chicago} and I don’t expect that to change anytime soon! Hope you are also enjoying some post-Thanksgiving lazy Friday-ness.

thanksgiving gratitude list

Happy Thanksgiving, everyone! I am spending the long weekend with Mike’s family up in Chicago and they have welcomed me into their household with open arms and absolutely delicious food. Especially during the holiday season, it is very hard to be so far away from my parents and Greg! Luckily I’ll get to go home for winter break and spend Christmas in Ventura with them. 🙂

Something I like to do often, but especially on Thanksgiving, is to make a “gratitude list” of all the blessings I have in my life and all the reasons I have to be thankful and happy. Often I make a mental list {it is a great way to fall asleep … counting your blessings!} but today on Thanksgiving I want to write a list down. So here it is:

my {ever-expanding!} gratitude list

  • my amazing, supportive, one-in-a-million parents and brother, and all of my terrific extended family, too!
  • my fun and thoughtful and lovely friends, near and far
  • my health {something that I didn’t used to appreciate nearly enough, but feel more and more grateful for the older I get}
  • that I always have not only enough food to eat, but also enough grocery money to buy organic fruits & veggies & dairy even though they are more expensive
  • my safe, warm, cozy apartment that is feeling more and more like home
  • my parents’ home in Ventura that will *always* feel like home and welcome me back with open arms
  • the opportunity to pursue my passions for writing and teaching as a career
  • the incredibly supportive teachers and mentors I’ve had throughout my life — from my first-grade teacher who gave my shy self confidence by casting me as the lead in our school play, to my middle school and high school teachers who encouraged my love of writing, to my teachers at USC and now at Purdue who have helped me develop my own writing voice and  nurture my own creative identity
  • my goofy dog Murray, who never fails to make me laugh with his antics and happy doggy smile
  • long walks through an autumn park or on the boardwalk by the Ventura pier
  • rain falling softly outside on a lazy Sunday
  • snuggling up on the couch with my sweetie
  • all the books I’ve devoured and all those I have stacked on my nightstand, waiting for their turn
  • old movies, especially It’s a Wonderful Life, Some Like it Hot, and It Happened One Night
  • watching Bing Crosby Christmas movies every year with my Gramps
  • warm chocolate chip cookies and a big glass of milk
  • shopping dates with my mom
  • lunch dates with my dad
  • my brunch date tradition with my brother
  • 3-hour Simone’s coffee dates with my friend Erica whenever I go home to visit
  • a hot cup of tea, an empty hour or two, and a journal or good book
  • browsing Target with my friend Holly and stocking up on Taylor Swift cards
  • sending and receiving handwritten cards from those I love
  • sunsets {and the occasional sunrises, when I’m up early enough to see them!}
  • Christmas lights twinkling cheerfully against a night sky or the snow
  • hugs and kisses and even tears saying goodbye because it’s a blessing to have so many people to love
  • being part of such a wonderful community of bloggers, and that you would spend a few minutes of your day visiting my little corner of the internet here!

saturday upsides: a cozy rainy day

Happy weekend, everyone! I hope all of you, especially those affected by Hurricane Sandy, are safe and sound. You are in my thoughts and prayers!

After a week of such devastation, I wanted to make sure to post a “Saturday Upside” today {inspired by my blogging friend Bonnie at Recipes Happen} because I think it is these times more than ever that remind us what really matters and to be grateful for all of our blessings. Amongst a million small daily gratitudes, today I want to take a moment to be grateful for the big things: all my wonderful friends and family, my health, my warm safe home, enough food to eat, the opportunity to pursue my dreams. Love and laughter and hope and more love.

Today is cold and rainy here today in West Lafayette. Ordinarily, I might look out the window and yearn for sun, feeling nostalgic for summer or my hometown in California, where my parents report it is indeed warm and sunny today. But there are upsides to cold rainy days. The 38-degree weather outside makes cuddling up at home feel luxurious. It makes a small apartment like mine feel warm and cozy. {Bonus upside to a small apartment: it doesn’t take much time or energy to heat up the whole place!} The rain pattering outside is such a comforting sound. I’ve got a blanket on my lap, a good book and warm cup of tea on the table beside me. What could be better?

Don’t we always want what we don’t have? In summer’s humid heat we yearn for air conditioning and cold weather; now, in the cold weather, we yearn for warmth and sun. I’m going to make an effort to be happy where I am, wherever it may be, and whatever the weather is like outside my window. My Saturday Upside is to relax and enjoy this cold, rainy, cozy and marvelous day in November!

October Book Club: “Thirteen Reasons Why” by Jay Asher

One of my favorite bloggers, Julie of Peanut Butter Fingers, hosts a book club every month through her blog. I love to read and thought it might be a neat way to get introduced to new books and authors and do some “fun reading” outside of the reading I’m assigned through school. I’ll be following along with the book club selections over at Peanut Butter Fingers and then posting my review/reflections/comments about the book on here at the beginning of each new month.

October’s Book Club pick was Thirteen Reasons Why by Jay Asher. I’d heard a lot of buzz about this book but I hadn’t read it yet, and I was intrigued immediately when I picked it up and read the back cover:

“You can’t stop the future. You can’t rewind the past. The only way to learn the secret … is to press play.”

The book is written from the perspective of Clay Jensen, a high school senior who receives a package in the mail with no return address. Inside the package is a series of tapes — thirteen sides in all — containing the recorded testimony of Hannah Baker, a girl from Clay’s school who had committed suicide just a few short weeks before. Clay had nursed a crush on Hannah for years, but hadn’t summoned the courage to act on his feelings {other than one confusing night right before Hannah died} and is filled with regret about the way things turned out. He is both curious and repulsed by the tapes. He wants to hear what Hannah has to say, but is also filled with frustration and sadness to hear the pain in her voice.

Something that really impressed me about this book was the way Asher interweaves Hannah’s voice and memories in the tapes with Clay’s narrative and thoughts in the present line of action. Their voices/perspectives interweave seamlessly and beautifully, in a way that reminded me of a musical duet, steadily increasing the tension more and more until the inevitable, and yet also surprising, conclusion. Asher writes with honesty, vividness, and unflinching realism — and for a novel dealing with suicide, Thirteen Reasons Why was surprisingly hopeful. I was very moved while reading this book, and particularly at the end. I don’t usually cry while reading, but the tears came when I was turning the final pages of this novel.

To me, some of the most poignant moments in the novel were when Clay laments, Why didn’t you talk to me, Hannah? I would have listened. This book made me think of the myriad of ways, both large and small, that peoples’ lives are intertwined. We have no idea how big of an impact we have on those around us. The smallest gesture — a smile, a kind word, a “hello” in the halls — can be just the thing to give someone else hope or happiness or turn their life around.

happy halloween! :)

Hi everyone! Hope you are having a spook-tacular Halloween today! Halloween is Mike’s favorite holiday so we have been celebrating all week month long with pumpkin decorations, listening to Halloween Pandora stations, watching ghost-hunting TV shows and scary movies {that I try not to pay too close of attention to … I am a total wuss when it comes to creepy/scary things!} and of course lots and lots of pumpkin-inspired food. {I will be sharing some of my favorite pumpkin recipes next week for a special Pumpkin Week on this blog — stay tuned!}

Do you like my ghost design?

My Halloween started off on a wonderful note last night when I came home to a package on my doorstep … and when I opened it up, I found the most beautiful bouquet of autumn flowers that my dad had sent to me for Halloween! It was such a sweet surprise! My dad always makes me feel so special and loved. I am a very lucky daughter. Now I get a huge smile on my face every time I look across the living room and see them on the table, brightening up the room!

Today I celebrated by making Halloween-themed cupcakes that I took in as treats for my freshmen students. {As I shared this summer, I tend to grow quite fond of my students and have a tendency of spoiling them with homemade baked goods.}

The best part about these cupcakes is the homemade chocolate frosting. I found the recipe on AllRecipes.com and tweaked it a little bit to use less butter but still taste rich and creamy. This frosting is a guaranteed way to make a box-mix cupcake taste gourmet and super special! These cupcakes could be decorated for any holiday or special occasion. I chose to decorate mine with candy corn for Halloween.

– 1 box yellow cake mix {I just used the Kroger brand that was on sale for $1}
– 3 eggs
– 1 & 1/3 cup water
– 1/3 cup vegetable oil or applesauce
– 1/3 cup butter or margarine
– 1/4 cup cocoa powder
– 1 tbsp vanilla extract
– 1 tsp cinnamon
– 3 cups confectioner’s sugar
– 4 tbsp half-and-half
– 1 small package candy corn

1. Preheat oven to 350 degrees. Prepare a cupcake tin with liners and set aside.

2. Bake cupcakes according to package directions. I combined my yellow cake mix with the eggs, water, and oil and beat with a whisk until the ingredients were well combined and the batter was smooth.

3. Fill each cupcake tin 3/4 of the way full and bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.

4. While cupcakes are baking, make the frosting. Melt butter in a small saucepan. Turn off the burner. Add cocoa powder and mix well; then stir in vanilla extract and cinnamon.

5. Pour sugar in to a large bowl. Add the chocolate mixture and the milk and stir until the frosting is smooth and creamy. It will be thick! You can add more milk or half-and-half if you would like it to be thinner.

6. Once cupcakes have cooled completely, frost each one with a generous amount of chocolate frosting.

7. Stick 3-4 candy corn pieces into each cupcake so their tops stick out decoratively.

Here they are all packed up and ready to go for my students!

Inspired by Deme at Fresh Coat of Paint to make use of what you have, I used a striped shirt and vest I already owned to dress up as a pirate. Anyone else using what they already have to dress up? Anyone make a homemade costume? One of my favorite-ever costumes was when I was a little girl, maybe four or five years old, and my dad helped me hand-paint cardboard butterfly wings that we tied to my shoulders with pink shoelaces. It didn’t cost us a single penny and I had so much fun preparing my costume, and when I wore it trick-or-treating I felt like the prettiest little butterfly! I still remember it vividly to this day. One of my favorite parts of Halloween is seeing all the creative, innovative and funny costumes!

midnight snack: pancakes!

I don’t know if I had a lighter dinner than usual last night, or if I burned more calories yesterday zipping around campus in the rain, or what … but late last night I found myself feeling hungry. And you know what was calling to me from the pantry? Pancake mix! So I decided to whip up a quick small batch of butterscotch/chocolate-chip pancakes for a special late-night treat.

Here is the recipe I used to make my perfect, sweetly satisfying late-night snack in case you’d like to try it out yourself sometime. If not for a midnight snack, perhaps for breakfast? 😉

chocolatey butterscotch pancakes

– 1 cup pancake mix {I used Aunt Jemima}
– 3/4 cup water
– handful of chocolate chips
– handful of butterscotch chips
– 1 tsp vanilla extract
– 2 tsp cinnamon
– butter for greasing the griddle

1. Stir together ingredients, being careful not to overmix. Batter will be lumpy.

2. Let batter sit for 3-5 minutes. While batter is resting, warm griddle pan on stove over medium-low heat.

3. When griddle is hot, grease pan with a little butter. {I always use butter because it is the way my mom makes pancakes … I love the crispy edges it gives them!}

4. Cook pancakes 4-5 minutes per side, flipping over when the middle starts to bubble.

5. Serve warm, with syrup if desired. {I prefer mine plain, with the chocolate all melty!}

Mmmm … the perfect end to a blustery autumn day. I was so excited to eat them that I completely forgot to take a picture! Sorry about that. I’m sure you can imagine them!

It could be that my pancake craving comes because I’ve been missing my brother Greg an extra lot lately. Pancakes always make me think of him. He is a pancake fiend! He’s coming to visit me in just a couple weeks and I could not be more excited.

crock-pot chicken & veggie stew

Confession: I used to be afraid of crock pots.

It sounds silly, I know. I guess crock pots just sounded too good to be true! Throw a bunch of food in a crock pot, turn it on, go to work all day, then come home and dinner is ready? Are you sure there isn’t a catch?

I was worried about leaving something on all day in the kitchen without anyone being home. Isn’t that dangerous?

“No,” my mother told me. No, said the blogs and resources I scoured online.

“Why don’t you try it?” Mike encouraged me. He could tell I was wanting to make the leap into crock-pot cooking ever since I glimpsed the beautiful 4-quart brand-new crock pot his mom had bought him that he’d never taken out of the box.

A new era has dawned in our tiny apartment kitchen. Today I took that baby out of the box, rinsed the pot and lid with soap and water, and plugged it in. For my first crock-pot attempt, I tried something simple: chicken & veggie stew.

This recipe could not be easier or quicker. It took me ten minutes to prepare as I rushed to get ready and out the door for school this morning. Here is the recipe I used; you could easily substitute other veggies based on your preferences or what happens to be in your pantry.

crock-pot chicken & veggie stew

– 3 or 4 chicken breasts
– 1 medium-sized sweet potato
– 2 carrots
– 2 celery stalks
– 1 can corn, drained
– 1 can peas, drained
– 1 can green beans, drained
– 1 can chicken broth
– 1 tbsp garlic or onion powder
– 1 tsp chili powder
– 1 tbsp parsley

1. Dice the potato. Peel and slice the carrots and slice the celery.

2. Dump veggies into the crock pot.

3. Add chicken breasts on top.

4. Pour chicken broth over everything.

5. Cook on low for 6-8 hours.

6. 30 minutes before serving, sprinkle chicken with garlic/onion powder, chili powder, and parsley.

All day long, I thought about dinner simmering at home in the crock pot. Whenever I worried about something catching fire and the apartment burning down, Mike reassured me it would all be okay. {If you haven’t guessed by now, I can be a bit of a worry-wort sometimes!}

When we returned home this evening and opened the front door, a delicious aroma greeted us. The stew turned out fantastic! Yummy, warm, healthy, hearty … and ready to eat as soon as we stepped inside. What a treat to have a homemade dinner waiting for us on the kitchen counter!

It’s official: I am a crock-pot convert. I can’t wait to try all sorts of new slow-cooker recipes and share them with you on this blog. Please chime in below if you have any recipes or links to share!
