Here’s how I did on my goals from last week:

  • write 10 more pages of my YA novel {wasn’t able to write as much as I hoped on this project this week, but planning to make it more of a priority in the upcoming week!}
  • revise first 3 chapters of my thesis novel
  • blog about Week 4 Act of Kindness Challenge & complete it myself this week
  • finish grading the next assignment for both classes
  • submit at least 3 pieces to journals or theater companies
  • finish reading Best American Short Stories 2012
  • knit 25 more rows of the scarf I’m working on
  • clean out & organize filing cabinet

And here are my goals for the upcoming week:

saturday upsides: curling up with a good book

It’s a cold, snowy weekend here in the Midwest. The upside? It’s the perfect weekend to stay inside, curled up with a good book!

secret keeper

I’m finishing up the January PB Fingers Book Club pick, The Secret Keeper by Kate Morton, and WOW am I engrossed! The tension and mystery of the book builds and builds. It took me a little while to really get into this book — maybe because it’s 480 pages! — but I now have 80 pages to go and I am flying through the rest. I have heard there is a twist at the end and I have a guess as to what it is. Dying to see whether I am right! It’s the perfect way to spend a snowy Saturday: curled up on the couch next to my sweetie pie, swept away in the world of a wonderful book.

In the upcoming week, I’ll post a full review of this book and my book club pick, 7: An Experimental Mutiny Against Excess.

28-Day Blog Challenge

Happy first day of February! Wow, hard to believe how quickly this new year is already flying by.

I mentioned in my earlier post reviewing The Happiness Project that this year I am trying something different with my yearly goals: I’ve broken them up into topics and am trying to focus on one topic per month. In January, for example, I unveiled my Year of Kindness challenge. I’ve been trying to figure out what I want to focus on for February, and yesterday I serendipitously came across this post by Katy Widrick in her terrific blog “Healthy Living in a Hectic World” about her 28-Day Blog Challenge. Sign me up!

The idea is to spend some time refreshing, rethinking, and reinvigorating your blog, however you see fit. I love how the challenge is self-guided while also having a community of motivators behind you. And I love how Katy includes in her post a long list of ideas to get you started. {Her Blogging Homework series is also great!}

I’m looking forward to making little tweaks and perhaps some bigger changes, both onstage and behind the scenes, over the course of this month!

2-ingredient pulled pork in the crock pot

I have another recipe to share with you today as part of the crock-pot challenge issued by Julie at Peanut Butter Fingers! This is actually from a recipe I found on Julie’s site. I’m a big fan of bbq pulled pork sandwiches — but it seemed like a dish that took a lot of time and some sort of fancy meat cooker to pull off, so it’s always been something I’ve ordered in restaurants but never attempted to make on my own.

That is, until now! Julie’s recipe made it look so easy I had to try it. I am SO glad I did!

This is now one of my go-to crock-pot recipes! And perhaps my favorite part: it only needs TWO ingredients! {Plus whatever else you want to use to dress it up!}

2-ingredient pulled pork in the crock pot

– 1 pork tenderloin {I used one that was about 4 pounds}
– 1 can of low-sodium beef broth

1. Place the pork tenderloin in the crock pot and cover with the beef broth.

2. Cook on low for 6-8 hours or high for 4 hours, until pork is cooked through and juicy. Tear it apart with a knife and fork and transfer to a plate for serving.

And that’s it! Here’s what my pork looked like when I arrived home from school:

And it smelled DIVINE! Here’s the result when I turned off the crock pot and transferred the pork to a plate for serving:

Then all I did was plop some pork on a bun, add some Famous Dave’s BBQ Sauce, and I had a delicious homemade dinner to enjoy! The sandwiches paired nice with a light salad and fruit. I’m thinking next time I might add pineapple slices to the top of the pork to make Hawaiian BBQ Pulled Pork Sandwiches!

Another reason I love this recipe? There’s plenty of leftovers for lunch tomorrow! Score! 🙂

Happy Monday! How did the #yearofkindness challenge go for you this past week?

The week 3 challenge was to send a kind note to brighten someone’s day. I sent quite a few handwritten cards this week — I aimed for one per day — and it put me in such a good mood! There’s something about sending good old-fashioned snail mail that seems extra-special these days. I slid the stamped envelopes in the mailbox and thought about the recipients opening their mailboxes in a few days to find a card from me, and it was the best feeling! This kindness stuff is addicting! 🙂

Here are some good things that happened in my world this week:

  • I was alerted that one of my fellowship applications was incomplete with enough time to send in the required materials to complete it … they definitely did not have to take the time to email me about the incomplete materials, and I am SO very grateful they did not just throw my application out! {Whew!}
  • Funnily enough, I received some happy surprise mail this week — a letter and clipped cartoons from my Gramps! He is not very computer savvy and I am pretty sure he does not read this blog {I don’t think he knows what a blog is!} so it was serendipity that he participated in last week’s kindness challenge!
  • One of my best friends got an exciting {and very much deserved} job promotion. Woo hoo!
  • I bumped into a professor I had last semester, who thoughtfully told me that one of her current undergraduate students took my creative writing course over the summer and had great things to say about it. What a nice compliment that totally made my day!

Okay, now on to the Week 4 Kindness Challenge: give hot chocolate or coffee to someone out in the cold who could use a bit of warmth! Some possibilities: a construction worker, a toll booth operator, a crossing guard, a bus monitor, a mail deliverer … or I’m sure you can think of others!

easy sausage, veggie & potato bake

Happy Thursday! I thought I would share a simple recipe with you today that my mom showed me back when I was home for Christmas. {Hard to believe that was a month ago!} It’s perfect for a cold winter night when you want to make something healthy and hearty — and an extra bonus is that it comes together really quick!

easy sausage, veggie & potato bake

– 1 package of your choice of sausage {i like turkey sausage or chicken sausage}
– 1 medium onion
– 1 red bell pepper
– 1 green bell pepper
– 3 cloves garlic, minced {i used 3 tsp of pre-minced garlic}
– 2-3 lbs of small red potatoes {depending on your amount of potato love}
– 1 cup chicken broth {i like the low-sodium kind}
– salt & pepper to taste

1. Quarter the potatoes. Bring a pot of water to a boil and cook the potatoes for 10-15 minutes, until soft.

2. Brown the sausage in a skillet until cooked through.

3. While sausage and potatoes are cooking, roughly chop up the veggies. Combine in a big bowl with the garlic until well-tossed.

4. Once potatoes are cooked through, drain the water.

5. Once sausage is cooked through, transfer to a cutting board and slice into pieces.

6. In a glass baking dish, combine veggies, potatoes and sausage. Pour chicken broth over mixture. Add salt and pepper to taste.

7. Bake for 20 minutes in a 350 degree oven, until veggies are tender.

8. Serve plain or over rice! I like serving this dish with corn muffins.

Happy Monday, everyone! I made it back safe & sound to snowy Indiana. Today’s high is a whopping 12 degrees {yes, that’s Fahrenheit} … I feel like I’ve hopped straight from summer to winter! While I do miss the Florida sunshine, it is wonderful to be back home.

How did last week’s kindness challenge go for you? I thought it was a quick and simple way to hopefully make someone smile. It made me feel great to think about someone lugging their laundry bag and soap down to the cold and cramped apartment basement, and then finding this note and quarters waiting for them on the communal laundry machines:

A couple bucks has never made me feel happier!

As I mentioned in last week’s post, this year of kindness challenge is already making me feel more attuned to acts of kindness done to/for me. Here are some lovely things that happened to me this past week:

  • a man helped me lift my heavy carry-on bag into the overhead compartment on my flight to Key West
  • I got to meet the incredibly kind and sweet Judy Blume, a literary icon of mine
  • a fantastic writer and person — and new friend who I met at the Key West conference — Gigi Amateau surprised my conference roommate {a fellow grad student} and me by generously picking up the check for dinner one night
  • everyone at the conference was so warm, friendly and welcoming

My dad also wrote a terrific column for the Ventura County Star newspaper this week featuring three beautiful acts of kindness! You can read it online here.

Now here’s the challenge for this week: write and send a kind note to someone who could use a bit of cheer. This could be a friend, relative, acquaintance, neighbor … anyone who pops into your head who perhaps you haven’t talked to in a while or who is going through a tough time.

What an unbelievable week! I had an absolutely fantastic time soaking up the sunshine, creative energy and literary brillance at the Key West Literary Seminar, and even got to meet my icon Judy Blume!! She could not have been more kind, warm or generous. What an amazing writer AND person! Happy Wednesday, everyone! Hope your week is going great!

I’m excited to share this quick & healthy dinner recipe with you today: I adapted this recipe from LaaLoosh and made it a little heartier by adding chicken. {Her post lists it as a side dish; Mike and I ate it as a main dinner dish.}

  • 1 cup quinoa
  • 1 medium onion, diced
  • 1 yellow bell pepper, diced
  • 3 tsp minced garlic
  • 2 chicken breasts, diced
  • 2 cups fat free vegetable broth
  • a 4oz can green chiles
  • 2 tbsp lime juice {I used the juice of one lime}
  • 1/2 cup green onions, chopped
  • zest from 1 lime
  • 2/3 cup cilantro, finely chopped
  • salt and pepper to taste
  • optional: 1 jalapeno, seeded and finely chopped {I did not use a jalapeno because I am a wimp when it comes to spicy things, but I’m sure it would be tasty if you’re feeling daring!}

1. Spray a pot with non-fat cooking spray and set over medium high heat. Add the onion, bell pepper, chicken and garlic and sauté until tender and fragrant, about 7-8 minutes. {If mixture sticks to the pan, add in a bit of the broth to deglaze.}

2. Stir in chiles and cook for another 2 minutes.

3. Add in quinoa and remaining broth and bring to a boil.

4. Reduce heat to a gentle simmer, cover and cook until the quinoa is tender and most of the liquid has been absorbed {about 25 to 30 minutes.}

5. Add in remaining ingredients and fluff with a fork. Serve immediately.

This smelled SO good cooking! Mike and I were so hungry that I forgot to take a picture of our bowls before we began to eat. All I have for you is a picture of the meager leftovers in a Tupperware container, ready to go into the fridge for lunch the next day.

You’ve just gotta trust me … it was delicious!!

This recipe is definitely a make-again for us! And with the mix of quinoa and chicken, it’s a healthy dish that will also keep you satisfied — perfect to get a healthy start on the new year.
