Hello, friends! Hope you had a lovely Easter weekend. Allyn and I went into the city to a friend’s house for a brunch celebration. It was cold and rainy here yesterday morning, so we were all smiles! {We need rain badly here in California… every drop feels like a blessing!}

We put together an Easter basket that we brought with us to brunch. It was fun to fill the colorful plastic eggs with jelly beans and chocolates, and I enjoyed reading the cute little sayings on them: You’re a Grade A! Chicks Rule. You Crack Me Up. It was a hit at brunch, especially with the little kiddos.

Backing up to Saturday, Allyn and I went out to dinner and saw a play in Walnut Creek. The play was called “Mirandolina!” and had been translated into English from Italian. It was a lighthearted romantic comedy and though I went into the play with high expectations {every play we have seen at this theater has been wonderful} this one exceeded my expectations!

There were multiple laugh-out-loud moments, the cast was superb and had great chemistry, the set and costumes were excellent… plus this theater sells little tubs of Haagen Dazs ice cream at intermission, so that is an added bonus. Overall, it was a really fun date night! I love seeing live theater and I’m so glad that Allyn enjoys going to plays with me.

Now, onto the simplicity…

Last week’s challenge was to tackle the magazine clutter in your life! Magazines pile up in my house so quickly, especially The New Yorker, which comes weekly. Magazines tend to grow into a pile that I tell myself I will read “one day…” while in the meantime, the huge stack of them stresses me out. This week I took a hard look at my magazine subscriptions, and ended up unsubscribing to three of them. {Though I am keeping The New Yorker!} I am donating a bunch of New Yorkers to the high school library where Allyn’s sister Allyson is librarian… they don’t have much of a budget to spend on magazine subscriptions, so rely on donations. I’m sure many other school libraries are in the same boat, so if you have magazines to donate, you might check with your local schools!

This week’s challenge is to say no to something. I don’t know about you, but I have the hardest time saying the simple word, “No.” I’m worried about disappointing people or letting people down, so I’ve adopted this bad habit of “hedging” — even if I know that I absolutely do not want to do something or do not have time to commit to something, I have a hard time declining outright. Instead, I say, “Maybe” and then end up worrying about it for a while before finally getting up the nerve to opt out, or just doing it even though I don’t want to do it because I can’t bring myself to “let down” the other person. It’s so silly! Especially writing it out here, I can see how ridiculous my process is.

The older I get, the more I realize how precious time is. It is a valuable gift that passes by so quickly, and we cannot afford to waste our time doing things that are not meaningful for us simply because we’re afraid of that moment of discomfort that comes with saying, “No.” Sure, there will always be things we have to do that perhaps we aren’t thrilled about {dentist appointments, DMV renewals, household chores} but when it comes to actively committing to an activity or task, I want to be more aware of what I’m adding to my plate. I want to guard my time, so I can use it to invest in the people and projects that are most dear to my heart and most important to me.

Happy Thursday, friends! Can you believe it’s only a week until Thanksgiving?! Where has November gone? I’m trying to savor each day as much as possible, but I’m also really excited to see my parents and brother — and Mr. Mur-dog! 🙂

In the spirit of Thanksgiving baking, here is a delicious and easy muffin recipe that I whipped up the other day when I had some blueberries to use up. I think these would be great with any kind of berry! The sweetness of the berries combined with the cream cheese in the center really makes these muffins a star.

  • 1 cup flour
  • 1/2 cup coconut flour
  • 1/3 cup coconut sugar or agave
  • 1/2 cup old-fashioned rolled oats
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup + 2 tbsp milk
  • 1 large egg
  • 2 tbsp canola oil
  • 1 tsp pure vanilla extract
  • 1 pint blueberries {I used fresh, but I’m sure frozen would work just as well}
  • 1/4 cup neufchatel {1/3-less-fat cream cheese} at room temperature
  • 1 tbsp pure maple syrup
  • 1 tbsp sugar

1. Preheat oven to 375°F. Grease a 12 cup muffin tin, or line with muffin cups.

2. In a large bowl, whisk together the flour & coconut flour, coconut sugar, rolled oats, baking powder, baking soda, and salt.

3. In a medium bowl, whisk together the milk, egg, oil, and vanilla extract {and agave, if you’re using it}.

4. Toss the blueberries with the flour mixture. Add the wet ingredients into the dry and stir just until incorporated.

5. In a small bowl, stir together the neufchatel and maple syrup.

6. Divide the batter evenly amongst the prepared muffin cups. Make a small well in the center of each. Fill each well with 1 tsp of the sweetened neufchatel. Sprinkle each filled cup with a bit of the sugar.

7. Bake for 15 minutes, until a toothpick inserted into the center of a muffin comes out clean {cream cheese sticking to the toothpick is fine, but no raw batter!} Cool in pan for 5 minutes; transfer muffins to a wire rack to cool completely.

Hope you enjoy! These were the perfect combination of sweet and savory… a decadent-seeming treat that is pretty dang healthy! This would be a great holiday breakfast item. Thanksgiving brunch, anyone?

Happy Monday, everyone! How was your weekend? Mine was absolutely lovely and I couldn’t resist sharing some photos… I’ll be back tomorrow with this week’s year of Wooden post!

Saturday morning I slept in a little and relaxed, reading a couple short stories while sipping on a mug of chai tea and noshing on a bowl of cinnamon oatmeal. Then I baked a batch of 3-ingredient banana cookies. Then I got ready to go teach a bunch of energetic kiddos for five hours!

Then I taught for five hours!

Then I was exhausted.

But I quickly perked up because I was meeting my sweetheart for dinner 🙂 We went to Tommy T’s, a comedy steakhouse — it was the first time there for both of us and we weren’t quite sure what to expect, but the food was tasty and the whole place was packed! Definitely a popular venue. The headline comedian was Bruce Bruce, who I had never before heard of but who seemed quite well-known among most of the audience.

I was a bit disappointed because he talked SO fast that I had a tough time hearing/ understanding what he was saying! The jokes I did catch I thought were humorous, and it was clear that his quick-talking was purposeful — it was part of his whole vibe. Maybe if I heard him perform more often and had a better sense of his speech rhythms, I would have been able to understand more of what he said. But in any case, it was still a fun night and I was really glad we went!

Sunday morning, Allyn and I tried our hands at making beignets! They’re the French-style dessert that we loved at Cafe du Monde in New Orleans. Before he left NOLA, Allyn picked up a box of beignet mix and yesterday we decided to finally put ourselves to the test!

I’ll be honest: at first, I was quite certain they were going to be a disaster. The dough was super sticky and I was having a ridiculously difficult time rolling it out. I used a water glass because we didn’t have a rolling pin!

Lots and lots of flour ended up being the secret weapon. Once the dough was rolled out thin enough, we cut it into small squares and placed them carefully in the frying basket. By the time they reached the frying basket, they usually looked more like distended blobs of dough than squares, but no matter. We pressed on!

Then Allyn, who earned the name Mr. Pro Fryer, dropped the basket into the hot oil and … I was amazed! The blobs of dough actually looked like little beignets! Not as pretty as the ones at Cafe du Monde, but still respectable.

We topped them with powdered sugar and they were delicious! Eating a Sunday brunch of beignets and fruit salad out on the patio felt super luxurious. Sometimes my Sundays start out way too fast, with me rushing off to church or tutoring commitments. When possible, I want to start waking up early enough to savor a slow Sunday morning breakfast.

Church was lovely yesterday. I was honored to do the chalice lighting {a symbol of our religious faith at the beginning of the service} and I read aloud these beautiful words by Joy Harjo:

After church, I met up with Dana for a catch-up coffee date, and we also stopped by this super-cute local nursery that was all decked out for Halloween! It was a really warm day yesterday, so the weather felt like summer, but the place definitely felt like autumn. I really love autumn decorations and Dana does too, so we had a great time admiring all the details.

I was swooning over these beautiful hand-painted sunflower tiles. I told Dana that one day I want to buy one of these and hang it in my kitchen!

My Sunday ended with family dinner, where my Uncle Arn serenaded us with Steely Dan hits on his new electric drum set and my gorgeous cousin Arianna did a fashion show of her beautiful Homecoming dress and accessorizing options. Then I watched The Good Wife with my grandma, read a little of After Dakota, and collapsed into bed. A perfect day!

goals + recipes for the week of 5/18

Hi friends! Hope you are having a lovely weekend! Mine has been busy with loads of good things! Yesterday I taught four writing and public speaking classes of energetic elementary schoolers, then took Bart into the city to attend an event with Allyn as part of his MBA program. I was super inspired by the smarts and passion of these graduate students, plus it was fun to spend time with my sweetheart and meet more of his friends.

This morning, I’m headed off to church, then taking my beautiful cousin Arianna out to brunch to celebrate an academic achievement award she received at school, and then hopefully squeezing in a coffee date with my friend Emy whose birthday was last week and who I haven’t seen in far too long! Later this afternoon my Grandpap is singing in a choir concert, and I’m excited to go support him along with my grandma, Aunt Mary, and cousins Bianca & Makena. Grandpap looooves to sing and it always warms my heart to see him up onstage, doing what he loves best! And then tonight I’m going to a dance party in the city with Allyn. Should be a blast!

Told you it was going to be a busy weekend around here! Before I skedaddle, it’s time for goals!

wedding weekend recap

Happy Tuesday, friends! It is glorious, warm, sunny weather here in the Bay and I am soaking it up! I love reading outside in the sunshine under the trees. Currently I’m in the middle of the epic historical drama Wolf Hall by Hilary Mantel. What books are you reading and loving right now?

As promised, here are some pictures from my whirlwind weekend at home for my cousin Julie’s wedding!

On Saturday morning, Allyn and I met up with Erica and her boyfriend Kyle for brunch, where we feasted on amazing food {my raspberry + white chocolate pancakes were to die for} and enjoyed over two hours of laugh-filled conversation. It always fills my heart to see this girl!

Then on Saturday afternoon we headed to the Mandalay Beach Resort for Julie and Chris’s wedding ceremony on the beach! It was a beautiful day, and thankfully the wind died down during the ceremony… the atmosphere was peaceful and calm. Julie looked absolutely breathtaking as she walked down the aisle, and my eyes filled with tears when I saw the way Chris looked at her. It was a lovely ceremony!

As soon as the ceremony ended, the wind kicked up, as you can see below! I love this family photo though because we are all laughing.

I made sure to hold my dress down in all the pictures, feeling a bit like Marilyn Monroe!

After the ceremony, there was an outdoor cocktail hour and I took the opportunity to snap some photos in between noshing on bacon-wrapped scallops, ahi tuna wontons, cheese and crackers, and sipping on a Shirley Temple! {It’s been years since I’ve had a Shirley Temple, and it was calling to me!}

When cocktail hour wound down, we all headed into the hotel ballroom for the reception. The food was delicious: Mom, Allyn and I opted for the filet mignon, garlic mashed potatoes and asparagus, and Dad and Greg had salmon with a blackberry glaze and wild rice and green beans. YUM! After heartfelt toasts to the bride and groom, we had a blast dancing the night away. My family is so much fun on the dance floor, making up goofy moves. My mom especially is a dancing fool at weddings … it’s a side of her I don’t otherwise see except at wedding receptions, and I absolutely love it! She is the cutest.

Before the night was over, we made sure to snap some more pictures. I love this one of me and Gramps:

The weekend went by much too quickly, but it was jam-packed with fun! What a blessing to have so many of the people I love together in the same place.

Congrats Julie + Chris! We love you and are so happy and excited for your new life together as husband and wife! ❤

Do you have stale bread to use up? This recipe for baked cinnamon French toast is a winner! As soon as I saw this drool-worthy recipe on The Pioneer Woman’s blog, I knew I had to make it.

The recipe would be perfect for a weekend brunch, and it’s so easy you could make it on a weekday, too! Here’s my recipe, slightly adapted from The Pioneer Woman’s original version:

  • 1 loaf slightly stale sourdough or French bread
  • 8 eggs
  • 2 cups skim milk
  • 1/2 cup heavy cream
  • 1/2 cup brown sugar
  • 2 tbsp vanilla extract
  • 1 tbsp cinnamon

for the topping:

  • 1/2 cup flour
  • 1/3 cup brown sugar
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • 1 stick cold butter
  • fresh fruit {optional}

1. Grease a 9 x 13-inch glass baking pan with butter. Tear bread into chunks (or cut into cubes) and evenly distribute in the pan.

2. Beat eggs. Add the milk, cream, 1/2 cup brown sugar, 1 tbsp cinnamon, and vanilla.

3. Pour the egg mixture evenly over bread. Cover tightly and store in the fridge several hours or overnight.

4. In a separate bowl, make the topping: mix flour, 1/3 cup brown sugar, 2 tsp cinnamon, and salt.

5. Cut butter into small pieces.

6. Stir the butter into the flour mixture until it resembles fine pebbles. If you are baking the casserole in the morning, keep the topping in a plastic bag or container in the fridge until ready to bake.

7. When you’re ready to bake the casserole: preheat the oven to 350 degrees.

8. Remove casserole from the fridge and sprinkle flour crumb mixture over the top. {If you’re using fruit, sprinkle on before the crumb mixture. Next time, I’m going to try using apples. I think strawberries would be delicious, too!}

9. Bake for 45 minutes for a softer, more bread pudding texture. Bake 1 hour or more for a firmer, less liquid texture.

10. Scoop out individual portions with a large spoon. Top with more fruit if desired and drizzle with maple syrup.

Enjoy! Store any leftovers covered in the fridge and microwave to reheat. I enjoyed this dish for a decadent breakfast three days in a row. 🙂
