goals + meal plan for the week of 10/6

Hi, friends! How is your weekend going? I’m finally feeling settled into my new life and new routine up in northern California, so I figured it was time to bring back my weekly goals. When my life is in transition, keeping track on here of my weekly goals tends to fall to the wayside. But I do love setting weekly goals and meal plans … it keeps me feeling on-track, centered, and enthusiastic about each new week!

So here we go: my goals for the week of 10/6:
– write 20 pages of new material
– submit to two literary journals
– submit two fellowship applications
– sign up for the GRE exam
– phone dates with three friends
– exercise at least three times

My grandma taught me how to make a wonderful salad last week that is perfect for autumn! She got the recipe from her friend Melinda, who she plays bridge with at the senior center every week. 🙂 This salad makes a perfect side dish, but is also hearty enough for a main course. I brought the leftovers to my writing “office” {i.e. the local library} for lunch the next day and they were terrific!

for the salad:
– cauliflower*
– broccoli*
– brussels sprouts*
– 1 tbsp minced garlic
– 1 package baby spinach
– 1 apple {we used a granny smith}
– 4 slices bacon
– 1 cup chopped walnuts
– 1 cup dried cranberries
– 1/2 cup feta cheese
* Feel free to use a combination of your favorite vegetables, and the amounts can vary of each. We used an equal amount of cauliflower, broccoli, and brussels sprouts, about 2-3 cups chopped of each.

for the dressing:
– 1/4 cup apple juice
– 1/4 cup olive oil
– 3 tbsp apple cider vinegar
– 2 tbsp lemon juice
– 1 tbsp honey

1. In the oven or on the stovetop, cook the bacon until it is very crispy. Set aside.

2. Finely chop the cauliflower, broccoli and brussels sprouts. Thinly slice the apple.

3. Saute the minced garlic in a bit of olive oil in a large pot. Add the chopped vegetables and cook 8-10 minutes, until tender.

4. Add the sliced apple and baby spinach and cook another 2-3 minutes, until the spinach is wilted. Then remove the salad from heat.

5. In a separate bowl, whisk together the dressing ingredients: apple juice, olive oil, apple cider vinegar, lemon juice, and honey, until well combined.

6. Toss the salad with the dressing, crumbled bacon, walnuts, dried cranberries and feta cheese. Serve warm, with salt and pepper to taste.

Happy Monday, friends! How was your weekend? It was H-O-T here in Danville … you can bet I’ve been drinking a ton of smoothies and iced tea! This weekend I went with my grandparents to see Eugene O’Neill’s play “Anna Christie” and it was fantastic! The actors were so talented and the writing was superb. It was very inspiring to me, as I’ve lately been working on a full-length play of my own.

Even though it still feels like summer, since it is now officially September and football season has begun and the pumpkin-flavored drinks are back at Starbucks, on Saturday I decided to bake my first pumpkin pie! It turned out great {much better than my disastrous pie that longtime blog readers might remember from last autumn, haha.} I also had a lovely lunch at CPK with my aunt and cousin, and yesterday I went to another cousin’s soccer game — she scored two goals! I was bursting with pride. It’s such a blessing to get to spend lots of time with my extended family.

This past week’s kindness challenge was to compliment a salesman to his or her manager. I went shopping at Whole Foods for the first time {after reading for months now about how amazing WF is on Robyn’s lovely blog The Real Life RD} and a very nice saleswoman helped me find coconut flour. When I told her it was my first time shopping at Whole Foods and that I’ve recently started going gluten-free, she also helpfully pointed out other gluten-free products. So I made sure to catch her name, and before I left I spoke to the manager about how wonderful she was. It took all of two minutes, and it certainly gave my day a boost!

That simple act of kindness also made me think about how often the feedback we give to others, especially in corporate or business situations, is negative. I think most of us are more likely to go through the trouble of contacting a company with a complaint or write a product review warning others not to purchase the product than we are to give compliments or positive reviews. So, the Week 36 Kindness Challenge is to fill out a feedback form with five star ratings, write a positive review of a book or product you love, or even call that “How am I driving?” phone number on the back of a semi-truck and rave about the truck driver’s wonderful driving skills.

Happy Sunday, friends! Wow, I can’t believe it is already mid-August! There’s a part of me that wants to hold onto summer as long as possible, and there’s another part of me that has that pre-autumn excitement in my belly! {I LOVE autumn!} The excitement might also be due to the fact that I’m moving in less than a week!! Yep, on Friday I will be driving my little prius up to the bay. This week has already had some “lasts” of the summer: my last Friday volunteering at the Food Pantry; my last Friday Happy Hour margaritas with my parents; and this morning was my last sermon at my amazing hometown church until I’m home for Thanksgiving. Sadness, but also gratitude for the memories and joy for new adventures about to begin!

Of course will miss my family & this little guy a TON!

Here’s how I did on my goals from this past week:
finish rough edits on first half of YA manuscript draft

Happy Friday, everyone! I have a short post for you today, one that I meant to share a long time ago but it somehow got lost in the shuffle. As we’re nearing the end of summer wedding season, I thought it might still be applicable!

As you might remember, my dear cousin Amanda got married back in June. I was unsure what to wear to the rehearsal dinner, and ended up going with a classic long dress, a simple sweater, and flats. I got this dress on sale at Macy’s — now is the perfect time to score great sales on end-of-season summer dresses! Dresses like this can easily be adapted to autumn or winter weddings if you just add some tights and a heavier sweater/coat!

pumpkin week: savory {and easy!} pumpkin & kale stew

Whew, what a night! After a whirlwind election day, I was in the mood for something simple for dinner.  When I saw this recipe for savory pumpkin and kale stew on one of my favorite cooking blogs The Pajama Chef, I thought it would be the perfect dish to try as part of my pumpkin week series!

I must admit, I had never had pumpkin soup before and was a little skeptical, but after reading Sarah The Pajama Chef’s rave reviews, my curiosity won out and I decided to try out the dish myself!

This soup turned out absolutely delicious. It’s hearty thanks to the chicken and veggies, creamy thanks to the pumpkin and dash of cream, and very flavorful. It just tastes like autumn — warm and comforting. And it’s super healthy with the kale, carrots, and Vitamin-A-filled pumpkin!

{Here is my recipe, modified a little from the one I found on The Pajama Chef}

ingredients:

– 1 tablespoon olive oil
– 1 small onion, diced
– 2 carrots, peeled and chopped
– 2 cloves garlic, minced
– freshly ground black pepper
– 4 cups chicken broth
– 1 & 1/2 cups pumpkin puree
– 2 chicken breasts, cut into small pieces
– 1 can black beans, drained and rinsed
– 1/2 teaspoon pumpkin pie spice
– 3-4 leaves kale, chopped {about 2-3 loosely packed cups}
– 1 tablespoon fresh sage, minced
– 2 tablespoons half and half

1. In a stock pot, heat olive oil over medium-high heat. Add onion, carrots and garlic, and season with black pepper. Saute for about 5-6 minutes or until soft and translucent.

2. Next, add chicken broth, pumpkin, black beans, chicken, and pumpkin pie spice. Stir until combined, then cover and bring to a boil. {Sarah’s original recipe includes adding a can of stewed tomatoes as well, which I’m sure would be delicious. I took the tomatoes out of my recipe because Mike is allergic.}

3. Reduce heat to low, and simmer for 15 minutes.

4. Add kale and sage, and cook for another minute or two.

5. Stir in half and half and serve immediately.

This meal was a winner for me and I will definitely be making it again! And I’m already looking forward to leftovers for lunch tomorrow. 😉

saturday upsides: a cozy rainy day

Happy weekend, everyone! I hope all of you, especially those affected by Hurricane Sandy, are safe and sound. You are in my thoughts and prayers!

After a week of such devastation, I wanted to make sure to post a “Saturday Upside” today {inspired by my blogging friend Bonnie at Recipes Happen} because I think it is these times more than ever that remind us what really matters and to be grateful for all of our blessings. Amongst a million small daily gratitudes, today I want to take a moment to be grateful for the big things: all my wonderful friends and family, my health, my warm safe home, enough food to eat, the opportunity to pursue my dreams. Love and laughter and hope and more love.

Today is cold and rainy here today in West Lafayette. Ordinarily, I might look out the window and yearn for sun, feeling nostalgic for summer or my hometown in California, where my parents report it is indeed warm and sunny today. But there are upsides to cold rainy days. The 38-degree weather outside makes cuddling up at home feel luxurious. It makes a small apartment like mine feel warm and cozy. {Bonus upside to a small apartment: it doesn’t take much time or energy to heat up the whole place!} The rain pattering outside is such a comforting sound. I’ve got a blanket on my lap, a good book and warm cup of tea on the table beside me. What could be better?

Don’t we always want what we don’t have? In summer’s humid heat we yearn for air conditioning and cold weather; now, in the cold weather, we yearn for warmth and sun. I’m going to make an effort to be happy where I am, wherever it may be, and whatever the weather is like outside my window. My Saturday Upside is to relax and enjoy this cold, rainy, cozy and marvelous day in November!

Hi everyone! Hope you are having a spook-tacular Halloween today! Halloween is Mike’s favorite holiday so we have been celebrating all week month long with pumpkin decorations, listening to Halloween Pandora stations, watching ghost-hunting TV shows and scary movies {that I try not to pay too close of attention to … I am a total wuss when it comes to creepy/scary things!} and of course lots and lots of pumpkin-inspired food. {I will be sharing some of my favorite pumpkin recipes next week for a special Pumpkin Week on this blog — stay tuned!}

Do you like my ghost design?

My Halloween started off on a wonderful note last night when I came home to a package on my doorstep … and when I opened it up, I found the most beautiful bouquet of autumn flowers that my dad had sent to me for Halloween! It was such a sweet surprise! My dad always makes me feel so special and loved. I am a very lucky daughter. Now I get a huge smile on my face every time I look across the living room and see them on the table, brightening up the room!

Today I celebrated by making Halloween-themed cupcakes that I took in as treats for my freshmen students. {As I shared this summer, I tend to grow quite fond of my students and have a tendency of spoiling them with homemade baked goods.}

The best part about these cupcakes is the homemade chocolate frosting. I found the recipe on AllRecipes.com and tweaked it a little bit to use less butter but still taste rich and creamy. This frosting is a guaranteed way to make a box-mix cupcake taste gourmet and super special! These cupcakes could be decorated for any holiday or special occasion. I chose to decorate mine with candy corn for Halloween.

– 1 box yellow cake mix {I just used the Kroger brand that was on sale for $1}
– 3 eggs
– 1 & 1/3 cup water
– 1/3 cup vegetable oil or applesauce
– 1/3 cup butter or margarine
– 1/4 cup cocoa powder
– 1 tbsp vanilla extract
– 1 tsp cinnamon
– 3 cups confectioner’s sugar
– 4 tbsp half-and-half
– 1 small package candy corn

1. Preheat oven to 350 degrees. Prepare a cupcake tin with liners and set aside.

2. Bake cupcakes according to package directions. I combined my yellow cake mix with the eggs, water, and oil and beat with a whisk until the ingredients were well combined and the batter was smooth.

3. Fill each cupcake tin 3/4 of the way full and bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.

4. While cupcakes are baking, make the frosting. Melt butter in a small saucepan. Turn off the burner. Add cocoa powder and mix well; then stir in vanilla extract and cinnamon.

5. Pour sugar in to a large bowl. Add the chocolate mixture and the milk and stir until the frosting is smooth and creamy. It will be thick! You can add more milk or half-and-half if you would like it to be thinner.

6. Once cupcakes have cooled completely, frost each one with a generous amount of chocolate frosting.

7. Stick 3-4 candy corn pieces into each cupcake so their tops stick out decoratively.

Here they are all packed up and ready to go for my students!

Inspired by Deme at Fresh Coat of Paint to make use of what you have, I used a striped shirt and vest I already owned to dress up as a pirate. Anyone else using what they already have to dress up? Anyone make a homemade costume? One of my favorite-ever costumes was when I was a little girl, maybe four or five years old, and my dad helped me hand-paint cardboard butterfly wings that we tied to my shoulders with pink shoelaces. It didn’t cost us a single penny and I had so much fun preparing my costume, and when I wore it trick-or-treating I felt like the prettiest little butterfly! I still remember it vividly to this day. One of my favorite parts of Halloween is seeing all the creative, innovative and funny costumes!

saturday upsides & healthy apple oatmeal muffins

Hi everyone! Hope you had a wonderful week and are gearing up for a lovely autumn weekend. I am pretty much over my nasty head cold, but am still feeling a little low-energy. As mentioned, I was {un}kind enough to share my cold germs with Mike, who has been battling the bug as well this week. I took him to the doctor yesterday, which was a good thing because he had a build-up of fluid in his ears that easily could have turned into a bad ear infection! He is currently on a regimen of steroids & antibiotics to clear up any infection and woke up this morning feeling much better.  It will be nice for both of us to get some rest this weekend and {fingers crossed} I will be feeling all better and will have an energetic Marvelous Monday post for you in a couple of days!

In the meantime, I was inspired by my blogging friend Bonnie over at Recipes Happen who has created a series called Saturday Upsides in which she posts each Saturday about looking at the bright side of things. {Check out her post today about the upsides of a busy Saturday!}

My Saturday Upsides today are numerous: both Mike and I are feeling on the mend; we get to see his family this weekend; fun pumpkin carving and Halloween activities are planned. And one bright side of struggling through a few miserable days while your body is battling a cold or flu bug is that it makes you more aware of what a blessing it is to normally be feeling healthy!

Before I sign off for the day, I wanted to share this recipe that I made earlier this week for healthy apple oatmeal muffins. I made a big batch of these on Tuesday evening and ate them for breakfast and snacks all week long. They are full of fiber and heart-healthy oats, plus double-apple goodness thanks to the apple pieces and applesauce. A perfect autumn treat! And they are easy to whip up {which was a requirement for me this week! This cold has seriously knocked me flat!}

I adapted this recipe from one I found on Frugal Homemaking for oatmeal chocolate-chip muffins. Hope you enjoy!

healthy apple oatmeal muffins

– 3/4 cup oatmeal
– 1 and 1/3) cups whole-wheat flour
– 1/3 cup brown sugar
– 1 tsp. baking powder
– 1 tsp. baking soda
– 1/4 tsp. salt
– 2 tsps cinnamon
– 1 egg, beaten
– 3/4 cup milk {I used nonfat}
– 1 tsp vanilla extract
– 1/4 cup unsweetened applesauce
– 1 large apple, peeled and cut into pieces {I used a honeycrisp, my all-time favorite apple, but you could use any kind you want}

1. Preheat oven to 400 degrees. Prepare a muffin tin with paper cups.

2. Blend together dry ingredients: oatmeal, flour, brown sugar, baking soda, baking powder, salt, and cinnamon.

3. In a separate bowl, mix together the wet ingredients: egg, milk, applesauce, and vanilla.

4. Create a well in the dry ingredients and pour the wet ingredients into the well. Mix together.

5. Stir in the apple pieces. Batter will be lumpy and thick.

6. Fill the muffin cups about 3/4 of the way to the top.

7. Bake for 16-18 minutes, until golden brown and a knife inserted in the middle comes out clean.

And that’s it! These muffins are like apple-cinnamon oatmeal in baked form. Warm, filling, healthy comfort food.

marvelous monday: finding happiness in the details

Happy Monday, everyone! I admit it, I had a hard time saying goodbye to this weekend. It was just so nice! I always feel such energy and excitement in the air when summer turns over to autumn. {I won’t lie, I still had a hard time waking up this morning … more on that in a minute!}

On Saturday Mike and I went to Feast of the Hunters Moon, a Lafayette tradition. It’s sort of like a Renaissance Festival but for colonial times. People seize the opportunity to dress up — not just in colonial period costumes, but as pirates, animals, face-painted Native Americans {which always makes me cringe after taking a Native American History course in college} … there is singing, dancing, cricket-playing, marching. We saw a fife & drum troupe and a miniature horse pulling a carriage around, bells jingling. Tents were set up all around with people selling homemade goods; we walked past a blacksmith, a leather tooler, potters and jewelry makers. And there’s all sorts of delicious and interesting food {as one friendly lady told me and Mike, “That’s why they call it FEAST!”} We sampled bison stew, fried smelt, corncakes, an apple fritter, and croquignoles, which are cinnamon-sugar donuts. It was a gorgeous, crisp sunny autumn day and I think my favorite part was just walking around taking everything in.

On Sunday we had a relaxing workday and book-browsing at Barnes & Noble, then played a few rounds of pinball at this local arcade before heading home. Would you believe that yours truly actually scored high enough to win a free game?? Yes, I was proud. The Who’s “Pinball Wizard” may just be running through my head right now. 🙂

Maybe because it was such a lovely weekend, it was extra hard getting up this morning. My first thought was: “Monday? Waaaah!” But I diligently rolled out of bed, and as I brewed my mug of tea I thought of that saying, “The dollar is in the details.” I think it can apply to happiness, too. The little details of our days can bring us so much joy if we just take a few moments to appreciate them.

Here are a few details that brightened up my Monday morning:

1. James Taylor on the radio. I love you, James!

2. Harney & Sons Hot Cinnamon Spice tea. {My mom got this for me last Christmas and it is so yummy I’ve been trying to draw it out and ration myself to a cup or two a week, though I might end up caving and using it all up this week! … It’s so perfect for autumn}

3. Pumpkin pie. For breakfast. {I needed to celebrate the yummy pie I made last night after a true disaster of a pumpkin pie attempt on Friday … more on that later this week!}

4. The “good morning” text message from my dad … he’s so sweet and always sends me text messages before he goes to bed on Pacific time, so when I wake up on Eastern time I’ll find a good morning from him waiting on my phone. Always gets my day off on a good note!

5. Watching a hilarious episode of Arrested Development as I ate breakfast.

6. A sunny 58-degree day outside … cold enough to wear my cute boots and scarf, but not too cold that going outside means freezing my butt off.

7. Cute dog videos on YouTube … I miss my dog Murray so much {he’s our family dog and lives with my parents in California} and watching videos of adorable & funny dogs that remind me of him almost makes me feel like I’m waking up to him snoring upside-down on “his” couch in the living room.

8. The pretty autumn wreath I snagged last year at CVS pharmacy, of all places. I just adore it! I love coming home and seeing it hanging on my front door. I hope it brings a little smile to our mailwoman’s face every day, too!

I’m feeling a zillion times better already, ready to embrace the day! What details are making your day marvelous?
